Today we opened a bottle of 2024 Harusion, a pre-sake from Koei Kiku in Saga, aged at ice temperature in-house by Kadoya Sake Shop, which I often go to 😀.
The aroma is as usual, a beautiful fruity top note 😀.
The mouthfeel has a beautiful fruity sweetness, followed by an explosion of acidity 😇.
Is this the power of ice aging ❓🤣.
I don't think it is possible to change the taste this much by keeping it at home in ice temperature 😀.
It was a really delicious aged sake with a very impressive acidity, oriented towards summer sake😇.

No matter how many ice cellars I have at home, I still can't beat the aging cellar at the liquor store 😅.
I had a bottle of Harzion at a liquor store once, but I never experienced such an explosion of acidity 🤣.
