I dropped by Wadaryu on my way to Okazaki Shuzo to buy Kamerei. The new sake was sold out and the fridge was almost empty, but the friendly brewer told me that he brews pure rice only, so I bought a bottle of nama-shu. It was rather refreshingly dry and had a fresh flavor that was very easy to drink.

After purchasing a limited edition sake at Okazaki Shuzo, we visited Wadaryu next 😀.
This was naturally my first visit to this brewery as they do not distribute their sake in the Kansai region at all 🤣.
Unfortunately, they didn't have the Tosui I was looking for, so I bought their standard Junmai 😀.
The brewery owner was very talkative and was very sorry that we had to come all the way from Osaka to drink his sake 😅.
From there, the brewery owner's Ueda guide talk exploded 🤣.
When I told him that I had Shinshu soba for lunch, he recommended a number of soba restaurants, but we went to one recommended by Mr. Kuramoto, where we could drink sake during the daytime 😀.
The soba and grilled miso were all delicious, but the junmai sake from Wadaryu was a great match for the Shinshu flavors😇.
The sake tasted and smelled so good that I thought it tasted like junmai ginjo instead of junmai sake 😀.
Unlike usual, the tasting and purchase were reversed, but I was happy to be able to bring home some sake from Ueda😇.

In Ueda, we went to Okazaki Sake Brewery and Jizakeya Miyajima, but the last one we visited was Wadaryu Sake Brewery!
Actually, my wife participated in an event held last year!
We met the Wadaryu Brewery at that time!
We have kept in touch from time to time since then, and although our visit was unannounced, we were made to feel very welcome!
They gave us a special tour of their production process.
He even gave us a souvenir!

It is brewed with Hitogokochi sake rice grown under contract in the Yaebaru area of Tomi City!
The aroma is grain-derived umami!
The sweetness, umami, and acidity are in perfect harmony on the palate...
The taste is as sincere as the president's personality.

The aroma is fluffy with a bread-like yeast aroma.
It is very tasty with a rich and fluffy rice flavor.
When we were sold this sake, it was said that the goal was not to make it a good aperitif, but rather to make it a good in-between-dinner drink, so that one could easily drink two or three glasses of it. It has a strong umami flavor, but you can easily drink it without hesitation.
I think it is because it has a clean aftertaste.
I would like to try it with curry and other strong dishes.

The first sip was a bit sour, but after two or three sips, a round sweetness emerged.
I have never tasted a Junmai sake with a rice polishing ratio of 70%, but it is interesting. 780 yen
This is also my first sake from Nagano.
The sweetness and acidity give it a complex flavor 😋.
I'm still enjoying encountering sake I've never had before. ☺️
Nagano is said to be the prefecture with the second largest number of sake breweries in Japan, so you can expect to encounter sake you have never heard of.
I recommend a trip to Nagano to everyone.

Bought this sake on a trip to Nagano.
Easy to drink and good. Not too sweet, but not too spicy either. It has an aroma and flavor. I would be happy to have it nearby as an everyday sake. I think it is that kind of sake. I like this sake.
