Today we went for a drive to Shinshu 🚗Through the Juushi Pass where my husband used to ride his motorcycle in his youth, we went to a sake brewery in Shinshu with a sense of nostalgia ‼️ We bought a bottle of Miyamanishiki, the first in the Tomisui series 🥰, a sake with a moderate aroma, sweetness to rice flavor, and a nice sharpness, which was intended to be a food sake 🩷. The sweetness and umami were refreshing from the first sip! In a word, "clarity"✨It has a good balance of acidity and bitterness in a light flavor, and is just so refreshing and crisp. ‼️It is 16 degrees, but it is easy to drink because there is no spiciness or alcohol smell, which is bad💓. When I compared it with the Miyamanishiki Junmai Daiginjo, which is made from the same rice as the Miyamanishiki and has a little bit left over in my house, the Miyamanishiki has a slightly stronger and richer aroma than the Miyamanishiki, but both have a well-balanced and light flavor of rice without any spiciness or alcohol smell. Today, we paired it with chilled tofu with leek sauce, gyoza, and sukiyaki udon! The sukiyaki's soft and spicy broth with the egg, combined with the light and delicious Tonomizu, was the perfect combination 🎉. Sake impressions by itself are the responsibility of shinsaku3 💕.

Purchased at a sake brewery. Gentle aroma, light sweetness followed by a touch of spiciness. After that, the sweetness gradually returns, creating a good balance. It was a delicious sake that exudes the personality of the brewery's owner.

Sake from the Wadaryu Sake Brewery located in Ueda City, Nagano Prefecture. Junmai dry sake in a simple design bottle. It was a nice, crisp, dry sake. The "DELICIOUS SAKE" written on the lid is a strategy to target inbound customers, right? I dropped by Wadaryu on my way to Okazaki Shuzo to buy Kamerei. The new sake was sold out and the fridge was almost empty, but the friendly brewer told me that he brews pure rice only, so I bought a bottle of nama-shu. It was rather refreshingly dry and had a fresh flavor that was very easy to drink.

27th brewery on a walking tour of temples, shrines and sake breweries After purchasing a limited edition sake at Okazaki Shuzo, we visited Wadaryu next 😀. This was naturally my first visit to this brewery as they do not distribute their sake in the Kansai region at all 🤣. Unfortunately, they didn't have the Tosui I was looking for, so I bought their standard Junmai 😀. The brewery owner was very talkative and was very sorry that we had to come all the way from Osaka to drink his sake 😅. From there, the brewery owner's Ueda guide talk exploded 🤣. When I told him that I had Shinshu soba for lunch, he recommended a number of soba restaurants, but we went to one recommended by Mr. Kuramoto, where we could drink sake during the daytime 😀. The soba and grilled miso were all delicious, but the junmai sake from Wadaryu was a great match for the Shinshu flavors😇. The sake tasted and smelled so good that I thought it tasted like junmai ginjo instead of junmai sake 😀. Unlike usual, the tasting and purchase were reversed, but I was happy to be able to bring home some sake from Ueda😇.

Sorry but my memory seems to be fading so let me post first Back to the hotel for more drinks Wadaryu Tosui Junmai Hitogokochi Nama Sake Back to the hotel for another drink! Let's start with this one! In Ueda, we went to Okazaki Sake Brewery and Jizakeya Miyajima, but the last one we visited was Wadaryu Sake Brewery! Actually, my wife participated in an event held last year! We met the Wadaryu Brewery at that time! We have kept in touch from time to time since then, and although our visit was unannounced, we were made to feel very welcome! They gave us a special tour of their production process. He even gave us a souvenir! We are really grateful to them. ❗️ I should have taken it home, but I couldn't resist and opened the bottle 😝. It is brewed with Hitogokochi sake rice grown under contract in the Yaebaru area of Tomi City! The aroma is grain-derived umami! The sweetness, umami, and acidity are in perfect harmony on the palate... The taste is as sincere as the president's personality. Please patronize it if you like.

The aroma is fluffy with a bread-like yeast aroma. It is very tasty with a rich and fluffy rice flavor. When we were sold this sake, it was said that the goal was not to make it a good aperitif, but rather to make it a good in-between-dinner drink, so that one could easily drink two or three glasses of it. It has a strong umami flavor, but you can easily drink it without hesitation. I think it is because it has a clean aftertaste. I would like to try it with curry and other strong dishes. 4

This is also my first sake from Nagano. The sweetness and acidity give it a complex flavor 😋. I'm still enjoying encountering sake I've never had before. ☺️ Nagano is said to be the prefecture with the second largest number of sake breweries in Japan, so you can expect to encounter sake you have never heard of. I recommend a trip to Nagano to everyone. ★★★★☆
