Shikoku x Sake Country 2025 Sake Brewery Wonderland On Osaka① Entered the event for the first time in 6 years. The venue was the 9th floor Sky Hall of Kyocera Dome Osaka. Since 52 breweries in Shikoku were participating in the event, we couldn't visit all of them in 2.5 hours, so we decided to focus on the breweries we rarely see. As usual, Dr. Bouken was with us. First, we visited the booths of "Imakomachi" and "Yutaka" in Tokushima. ◉Junmai Ginjo Unfiltered A clean acidity and a full-bodied flavor. ◉Junmai Daiginjo, unfiltered The Junmai Daiginjo Mucho is a pure, polished, full-bodied, rich, and delicious wine. It was so good. The price was about 3300 yen including tax. ◉Yamansho Slightly dry and refreshing. Not too spicy. Imakomachi Daiginjo The most expensive. The standard, excellent quality, with a full-bodied, all-rounded taste. Not very impactful. In the Kansai region, Ohmune in Hyogo Prefecture seems to carry it on a spot basis. They can also send it to individuals by e-mail or phone.

A modern sake brewed by Aoki Shuzo, famous for Tsururei. It is completely different from the cup of sake Yukio that I drank before. It is sweet with a sour taste, but not cloying and very easy to drink. It was a low-alcohol, fresh summer sake, but when I checked the production date, it was about a year ago.... KATSURAGAWA, which had been laid up for about a year and a half. It's too early to tell, but I'm looking forward to a summer sake on the rocks, and this time I'll have a glass of the standard warmed sake 🍶. When I opened the bottle and poured it, the aroma was freshly cooked and fluffy, like rice cakes or rice. It is a four-step glutinous rice brewing process. The mouthfeel is smooth like Gunma sake, but gradually a gentle and deep sweetness like sugar or spuds spreads gradually. When heated, it has a full-bodied, rice-like flavor. The sweetness is not too strong, but rather relaxing. Perfect for enjoying in the colder months. The sweetness itself is more subdued than the normal type, but on the other hand, you can fully enjoy the cleanliness that is typical of Gunma sake, which is a good balance!

As the summer is drawing to a close (the heat is still on), I opened a bottle of "Katsuragawa" sake on the rocks, which I was looking forward to drinking again this year! And the back of the bottle is falling apart due to condensation again😇. When we opened the bottle and poured it, the aroma was sweet and fluffy, typical of "Katsuragawa". It is a bit sour and comes in through the nose as if it is cold on the rocks. The mouthfeel has a pettiness by default, but on the rocks it is smooth and silky. It has a fluffy aroma like sweet rice crackers and a syrupy sweetness of shaved ice. As the ice melts, it becomes lighter and more enjoyable ✨. The lingering finish has a slightly tangy, spicy acidity and a tropical fruitiness, and the smart finish keeps the saké going! While listening to the chirping of autumn insects 🍶. I think it's time to open a bottle of "Akagisan" summer sake!

On the first day of GW, the 29th, I purchased sake that goes well with meat 🥩. It's a collaboration product of Kumamoto's sake brewery "Zuitaka" and "Gullitcheu Fukushima" wrote the label. Ikebukuro with friends on Wednesday. It was not an all-you-can-drink party. Sake was my friend's choice as we sunk into the sake swamp. It was my first Hakuba Nishiki. Nice choice. It tasted like it would be ranked high in the Nigorin picks. It was fresh, fruity, sweet and refreshing. The upper half of the label is European and the lower half is Japanese, which gives it a Showa-era feel.

Hakone Drink Comparison Set (2) On March 1, after a year-long event, I went on a trip to Hakone as a way of consolation! The local sake was served to compare with Japanese kaiseki. It was my first time to try Hakonezan! This is the spiciest sake in the group. It is a dry ginjo-shu as you might imagine, but it is moderately rich and very good as a mid-meal drink. Of course, it goes well with ingredients as they are, but it also goes well with dishes that have been added, such as those using dashi (Japanese soup stock)!
