We received Yuto from Yanagisawa Shuzo in Gunma.
It has a koji aroma and weak carbonation, and has a good refreshing feel. If it is a food sake, it would be good with a crispy tsumami.
I bought it because it seemed to be a kind of sake that is not often seen but is known by those in the know. I bought it because it seemed to be a kind of Japanese sake.
The aroma is mellow peach and pineapple. The nose is mellow peach and pineapple, with a slightly bitter acidity at the back.
The umami, sourness, and sweetness spread out, but then the bitterness is stronger and more crisp!
The alcohol taste on the nose may be a bit too strong for your liking, but I like it!
The strong bitter dry aftertaste is impressive. I will try other specs when I see them.

05BY. yamada nishiki. Slightly carbonated, or rather, a thin cloud of gas. It is fruity but also a little spicy because it is 16 degrees. It has a delicious flavor and bitterness. This taste with slight carbonation is really good! It's been a long time since I've had Yuto. I don't know why it's so hard to find, but if I see it, I'll buy it for sure. This is my personal favorite brewery! I can feel that I have the same tastes as this brewery.
