I happened to find a Kumamoto sake tasting and sale at a supermarket in the basement of Luxe Aire 😁. They were selling Zuitaka, Koro, Reizan, Chiyozonoen, and Kameyama, but only Zuitaka was available for tasting! Too bad they didn't have Bishonen, Tsuijun, or Hana no Kaori. There was a guy who looked like a brewery owner who said he came from Kumamoto, but I wonder if he was from Mizutaka 🤔. Kissho Zuizaka Ginjo Polishing ratio 58% Yamadanishiki/Hananishiki Sake degree +5 The label is cool. Modern type with gorgeous aroma. I don't think there are many people who drink it... Sake: Junmai Ginjo Polishing ratio 58%, Sake degree +5 I've had the unfiltered raw sake in the past, but the hi-ire version is quite dry... It's been about 6 years, so I'm not sure, but I remember the raw version was a bit sweeter 🤔... Nana Sour Sour Sake Polishing ratio 65%, Kumamoto yeast I was expecting the most since it is a sweet sake with a sake strength of -11, but it tasted a bit messy and was a little too subtle for me personally... I heard they have a draft of this one, so I'd like to try it if I have the chance. I think they sell the raw version at Keihan department store in Moriguchi 🤔. I was most impressed with Kissho Zuitaka, so I bought this one. I wish I could have tasted it! I wonder if I can drink Reizan at the brewer's festival next week.

A bottle from a business trip to Kyushu 🍶. Slightly sour aroma, slightly acidic first impression, sweet and umami taste. Not very sharp.

Mizutaka Daiginjo Shizukutori Shizukudori YK35 Rating 4.5-4.6 Ingredients: rice (domestic), rice malt (domestic), brewers' alcohol [100% Yamadanishiki], 17% alcohol by volume, 35% milled rice, Sake meter degree +6 A luxurious product with a clear, uncluttered taste. This daiginjo-shu is made by brewing all the rice with Yamadanishiki (Y), Kumamoto yeast (K), and YK35, which has a milling ratio of 35% (35), and then using the limpid Kumamoto underground water to make the sake. The unpressurized pressing gives the sake a delicate and refined flavor with no cloying taste.

☀️ Saijo Sake Festival 2025🍶. Sake Hiroba ⛲️ It is now evening and time for the "Sake Hiroba". Sake Hiroba is a paid area where you have to buy tickets in advance 🎫. You can enjoy sake from all over the country in the area surrounding the plaza 😁. Last year, all you had to do was pay the admission fee and then you could drink as much as you wanted, but this year it was a per drink ticket system 🎫. Geez, they are getting commercial 😣. Since there was a time limit, we were given a list of the sake on display at the entrance and we started with the sake that caught our eye 😌. It has a strong throat sensation. It is a walnut type with a strong sweetness. Even the junmai sake has a strong alcohol taste 🍶.

Kumamoto is a place of birth these days. However, the company was founded in Keio 3, the year of the Great Seihokan, here in Zuitaka. Well, it's mellow! I like it hot. Ingredients: rice (domestic), rice malt (domestic) Rice used: Hananishiki, etc. Alcohol content 15 Rice polishing ratio 65 Sake degree +5 Yumeshu Shibuya
