Niigata Sake no Jin OSAKA⑰ The booth of [Koshinohatoyo]. I had drunk it before, but at the time, I only had the impression that it was labeled with a family crest of Rokubun Sen. The sake was -5 on the sake meter. Originally, they sold a dry sake and a sweet sake, but the sweet sake was said to be too sweet, so they made this sake. It has a moderate sweetness, a complex bitterness in the aftertaste, and a sharp convergence from a slightly nutty taste. Sake: Sake with a Sake meter of -10. Sake meter rating -10, not sticky sweet, but clear sweet. It doesn't feel that sweet to me, but I guess that's just a matter of the temperature range. Koshinohatoyo Junmai Genshu. The umami taste is felt and then there is a bitter bitterness, and from the aroma that passes through the nose, the richness of the rice flavor. It has the sense of sake at the beginning. The image of Rokubun Sen has changed to the image of Kanji characters like "pine blossom".

Rice used is unknown. According to the owner of the sake shop, the sake is aged for three years, but there is no strong sense of aging, and it is a dry junmai-shu with a good acidity. It is a dry junmai-shu with a lot of acidity. The sweetness that spreads fluently and the spicy astringency in the latter half are very unique. The rice used is Omachi from Okayama Prefecture. It has a dark mouthfeel and a bit of maturity, but as the days go by, it becomes more rounded and changes to a level where even those who are not good at it can go. However, even though it has become more rounded and easier to drink, the sweetness and strength of the Omachi can still be clearly seen, so there will be different tastes. For me, it's a very interesting sake! The first day I opened the bottle, I thought it might be too peculiar to pair with a meal. However, from the second day onwards, while maintaining its richness, it gradually becomes lighter and lighter, and is not bad as a food sake. If you roll it around in your mouth, it is a nicely aged sake, but if you drink it with gusto, you can drink it without worrying too much. Still, I want to enjoy the aged feeling of this kind of sake, so drinking it a little bit every day is good for me.
