Junmai nama-shu YAMADANISHIKI 90 Rice polishing ratio 90%❗️ This is the challenge sake of Michiko Urasato, the female toji of Yui. Yamada Nishiki is brewed at 90% polishing ratio without polishing. The taste of the rice is rich and intense❗️, but there is a light fizzy feeling. There is also a little bit of orage mixed in. This is why it is milder and softer in the mouth than I expected. The aftertaste is refreshing. It's amazing. Michiko Urasato, Toji 💡. I had it with ginger yaki, and it was delicious. The sake and side dishes go well together😆. I've heard that if you let it sit for a few days, you'll get a different taste of the rice, so I stopped at halfway today. I heard it's also good at different temperatures.

The general meeting at the end of last month was held at a local grand hotel, and the sake used was Nanafukujin Junmai from the Kiku no Tsukasa Sake Brewery. The sake used was Nanafukujin Junmai by Kikunoji Sake Brewery. It is not sticky-sweet, but rather light and easy to drink. If the sake is not made with the same level of care and attention as the all-you-can-drink sake, more and more people will leave the sake industry, and short-term tricks will not be effective these days. Three of my high school classmates and I sometimes have a drink at Noge in Yokohama. This is an extra edition of that. So, 7 of my classmates and I went to Enoshima for a drink. The first thing we did was to compare the two types of shirasu, which is the reason we went to Enoshima in the first place. Which is better, fresh shirasu or kama-age shirasu? Opinions were divided, and my classmate, who favored raw shirasu, went to a restaurant that he said had the best raw shirasu in Enoshima (but let's not talk about the shirasu). The sake was from Iwate, which was purchased as part of Tohoku's earthquake recovery efforts, and it seems to have stuck with them. First time drinking it. A little sweet, but refreshing. I stopped by the brewery for the first time in a while. I used to have a special fire-brewed junmai and a sake called "Mariko no shu" which is named after the female toji (master brewer?). Both were quite dry, classical sake. Both were quite dry classical sake, and I had the impression, for better or worse, that this is what local sake is supposed to be like. This was probably my first nigori sake, but it looked delicious, so I bought some! I wondered if the beautiful woman at the sales counter was Mariko herself? It has a classical aroma with a banana feel. It is more of a hint than a standing aroma. It has a classical taste and is dry, but you can drink it by itself if you want! It is very easy to drink because it has a lot of turbidity, which gives it a strong umami flavor and makes it easy to taste the sweetness. I drank it with kimchi nabe (kimchi stew), and I think it goes well with strong flavors and nabe dishes! It also seems to go well with meat, and I am sure it would go well with ginger-grilled pork or chicken steak. I imagine it is like Kikuhime nigori or Tamagawa nigori! To be honest, I think it's one of the best in the Koshu Plum Grove, so I'd be happy to buy a bottle and drink it slowly. It can probably be stored at room temperature until early spring.

The brewery is more impressive for its shochu Ginza no Suzume than for its sake. Tasted and purchased. It has a gorgeous aroma and is fruity even when drunk. 1801 yeast is used, making it a sweet and fruity sake that is easy to understand. I wish they would release a fresh sake of this one. I felt it was sweeter and fruity at room temperature than when it was chilled to the perfect temperature.
