Today is Sake Day (although our family has Sake Day almost every day.... 😅)
While participating in Jay & Nobby's black bottle relay, we opened a bottle of this black-bottle type sake that we previously purchased from Daishinshu Sake Brewery😃.
According to the description.
"characterized by a gorgeous spread of ginkoku (gin aroma) and a full and soft vinous taste."
Delicious 😋.
As the description says, the main taste at first is the gininess.
The taste is then faded out with the addition of a moderate acidity, leaving the fragrance intact 👍.
It is refined and has a graceful impression without the cloying taste of rice.
It was served chilled.
The aroma I felt was

It's very refined without any cloying taste, so it goes well with western food such as steak, which is a bit strong tasting, without interfering with the taste.
The price is also high and I wonder if it's for souvenirs for overseas customers? 😅

Daishinshu from Daishinshu Sake Brewery (Matsumoto City, Nagano Prefecture).
This is Kouzuki's secret recipe.
I had had Daishinshu at YOMOYAMA NAGANO the other day, and I knew it was delicious, so I thought I was done with it.
However, there was a sake that I did not see the other day (I think), so I had some of it.
Kagetsu Hiden is a sake made from unfiltered junmai daiginjo sake for the sake competition.
It looks delicious on its own!
When I drank it, it was actually awesome!
The ginjo aroma is elegant, graceful, and gorgeous without being overly pungent, based on ethyl caproate-based apple and pear aromas.
On the palate, the fruity sweetness flows smoothly and softly with no corners at all, and it finishes pleasantly.
The lingering aftertaste is pleasant as well as the hint of fragrance.
The brewery calls it "Bishu of Heaven's Blessing.
It was very delicious. ☺️

Someone at work said, "I'd like to try another brand of Kagetsu made by a sake brewery in Daishinshu," so I drank it instead.â
It is smooth and mellow.
It is not sweet and juicy, but it too tasted like condensed rice flavor and was delicious 😋.

The flavor is smooth and mild, and the ginjo aroma comes in at the end. I drink it by itself. I wonder if it is similar to Sharaku Junmai Ginjo.
It is delicious.

It was a very tasty sake.
The mouthfeel is thick and a little heavy.
The aroma of rice spreads in the mouth.
It had an alcoholic and sour taste in a good way.
Since I was sensitive to the ultra-harsh taste of Daishinshu, I got this "Kougetsu" nama-shu.
The aroma in the mouth is very nice.
It has a moderate acidity, but the impression is that it leaves a bit of sweetness in the mouth at the end.
I prefer a refreshing taste after swallowing, but this sake had quite a strong aroma and lingering aftertaste in the mouth.
In total, I think it is a very tasty sake. ☺️
The rich aroma is delicious. The sweetness of the rice will hit your stomach.
If your stomach is not ready for it, it will hit you hard, so it is best to drink it in the middle stage.
