I drank WAKAZE for the first time. It is a white wine with strong acidity and a little sweetness.... The brewery is more impressive for its shochu Ginza no Suzume than for its sake. Tasted and purchased. It has a gorgeous aroma and is fruity even when drunk. 1801 yeast is used, making it a sweet and fruity sake that is easy to understand. I wish they would release a fresh sake of this one. I felt it was sweeter and fruity at room temperature than when it was chilled to the perfect temperature.

I was called to work in Tokyo. I don't like cities. The National Diet building is beautiful with gingko trees in full color. I was surprised that it didn't smell like ginkgo. It is as expected. I attended an event at Tsushima Tsuru last weekend. The event featured a rice farmer in Shizukuishi Town, Iwate Prefecture, who grows rice mainly for sake rice, called "Sunakabe. The first toast was actually a junmai daiginjo made in Hawaii, shown in the fourth photo. What kind of sake is made by providing rice to a brewery in Hawaii? I thought to myself, as I toasted President Kudo of Washio Co! I followed with a sip. Oh my, it has an honest, soft, sweet taste. I wouldn't go to Hawaii to buy it, but I was a bit surprised that it tasted so good in a different environment. Next was the super dry Nanafukujin. It is said to be a bottle that pursues sharpness, and it is indeed light and dry, but you can also taste the delicious flavor of the rice. It was a bit of a surprise to me! 😁
