Ikebukuro with friends on Wednesday. It was not an all-you-can-drink party. Sake was my friend's choice as we sunk into the sake swamp. It was my first Hakuba Nishiki. Nice choice. It tasted like it would be ranked high in the Nigorin picks. It was fresh, fruity, sweet and refreshing. The upper half of the label is European and the lower half is Japanese, which gives it a Showa-era feel.

This Hakuba Nishiki sake was similar in taste to the second bottle, Masumi, and was the easiest to drink of the three! Since we were staying overnight this time, we were able to compare sake from noon 😄.

Last weekend I was out of sake to go with oden, so I went to the local supermarket and bought a 300㎖ bottle for the sake. It has a sweet and refreshing taste. It's good at hiya, but it tastes even better when it's warmed up to human skin temperature to increase the sweetness. However, I thought it would be too clean to pair with oden. I chose this sake because I wanted to keep it light, but.... If I wanted to warm it up, I could have used a more robust Junmaishu or even Honjozo. I'm still learning💦.

On a trip to Shiga, I visited Hirai Shoten. The quaint appearance of the store and the display of products were a sight to behold. Today's bottle was the "Sake Brewer's 3003000 Year Old" (pictured left). The aroma is melon, apple, and pineapple, and the first sip is a punch. It has a mellow sweetness, but the acidity and bitterness make it crisp and refreshing. Delicious. Well, Shiga Prefecture was fun! I'm also looking forward to Kosetsu (I heard it's read as Fouche) on the right side of the photo 😄.

This is one of the bottles that was sold in a set with Tobiroki at Hasegawa sake shop, it was made in October 2020, so I guess they used Tobiroki to clear this stock 😅. I'm not a big fan of the Satsuma Masamune, but I'm not a big fan of the Tobiroki either. I was a bit worried because it's a raw stored sake, almost a year after production, but there were no quality issues 😄. Rather, I didn't feel the peculiarity that I felt when I drank Junmai Ginjo before, and it tastes better than that time 🌟. It has a slight sweetness, a strong alcohol feeling and a spiciness that comes down the throat, not very distinctive but enough for everyday drinking. Cold sake is the best 😚

At home. First time in Saitama. I couldn't find Saitama easily, so I searched by the name of the prefecture and finally found it. The aroma is grainy and nutty. One I procured while visiting a grave on the autumnal equinox. I was fascinated by the label. It's nostalgic and really cool! On the first day after opening the bottle, the aroma was subdued, the taste was crisp and dry, with a pronounced bitter, mature taste, nostalgic sake! But after a day of drinking it, I was right. The fragrance was fruity, and the sweetness and umami of the rice could be felt on the palate, with a nice aftertaste and a light acidity and bitterness. The bitterness, which had been prominent, has completely settled down. It is a big change and delicious! Thank you very much for your hospitality!

Buy at Asahikawa Marushin Shoten The rice used is Yumesasara from Tochigi prefecture. It is a low alcohol type, but it has a moderate sweetness, and as expected from an unpasteurized sake, it has a crisp taste. The acidity is also a bit like white wine, so it can be used with western food. It is an all-round food sake. It is the first time to drink Sawahime, so it is difficult to evaluate only this one, but it is an interesting brewery!

[Fill in the Map Series No.6] Hiroshima Kamoizumi Shuzo [Kamoizumi Junmai Ginjo Shuizumi Honjikomi] ✨. Is the "." in "sake" in the center of the label a logo? Is it a brand name? I'm not sure how to read it lol. It's a Junmai Ginjo, but the aroma has a grainy feel to it. When poured, it's a bit of a yamabuki color, with a hint of old sake in the beginning, but as it progresses, it develops a nice richness and flavor✨.

First brand name Kita no Hana. It is a backroom deal with a sake teacher. Even if I say it is a backroom deal, he will sell me any rare sake at the same price I bought it from the liquor store, and even if I tell him I will take care of the transportation costs, he stubbornly refuses to accept it. I told them that if I sold them at a higher price, the liquor store would take me on as a reseller, and after that, they would never sell me rare sake. The fact that you can normally drink Jyushiyo at home is based on the mutual trust between the seller and the buyer. Kita no Hana, the label is very attractive. I don't detect much of the Kamitatekoso, but there is a round, unfamiliar aroma in the back of the bottle. The mouthfeel is moist, calm, and elegant with sweetness and soft umami, and the rounded aroma in the aftertaste is fruity. The acidity and bitterness are both moderate, and it has a mysterious sharpness that just flutters and closes. It is really a round, gentle and mysterious sake, and this must be one of its balances.
