I thought it was Yamasan Masamune when I saw it at the liquor store! I was curious to buy it 🤩 because I've only had 90% low-polished sake in recent years.
After opening the bottle, the aroma is of grain and sourness! Grain type smell!
It's promising😍.
The color is light golden 🟡.
The first thing that pushes into the mouth is sweetness! Sweetness accompanied by acidity 😍 After that, it recedes leaving a savory aftertaste with the deliciousness of rice in a complex flavor as if it were low milled rice!
It's not heavy, but it's a great match for Japanese food, so it's probably best as a food sake 😘.
It would be great with grilled chicken, eel or sea bream with tare sauce 😍.
It's not bad heated, but I think it's best served cold 😘.

I picked up 3 horses, and my main choice (the most popular one 😅) finished 1st 🎯.

I'm sure I'd mistake it for Yamasan 😅I see it's very low milled 🤔That seems to give a strong rice 🌾 flavor and complexity 🥰I'm convinced it goes well with food sake: ☝️

This is also the H16BY (2004) Yamasan Masamune from the anniversary menu 🍶.
It was served cold.
The nose has a slightly caramelized mature aroma.
It has a slight matured taste on the palate, but you can catch a glimpse of the daiginjo-style of a solid brewery.
It's 20 years old, but if you usually drink robust type of sake, it may be just right.

The first Yamasan Masamune was a heated H30BY. It was procured in Shimane.
The color is a pale yellow. It has a soft candy-like sweetness and umami with a good sense of maturity, and it is sharp with the acidity of Yamahai. It is delicious.

I ordered it with no hint that it was a sake from Shimane.
I thought this would be the usual Tekkamen, but the mild umami was unexpected.
The contrasting, strong pungent spiciness that lasts from beginning to end is a new sensation.
I guess you could call it "super spicy, mildly umami.
It is delicious in its own way.
It seems to go well with various dishes from sashimi to rich simmered dishes.
I had a drink with my wife at a nearby bar.
The first drink was a local Izumo sake, Yamasan Masamune.
It is a San-in style sake with a good taste of rice and a sharp taste. 🙆♂️
I had it with sashimi of tuna and it was delicious!
