The sake is made and labeled in a way that takes advantage of the climate of Oarai, Ibaraki. It is refreshingly dry when served cold. When heated, it becomes more floral and friendly. I'd like to try it with sea bream or flatfish from Oarai.

Rice used is Oarai-grown Chiyonishiki It is more rough than fresh. However, it is not rough at all. It has a refreshing taste, and the umami of the rice spreads slowly. I've had many Tsuki no I's with this kind of atmosphere! I think it will probably become milder and more flavorful with aging, but I like it better as it is because it has its own personality.

Purchased after being recommended by Takahashi Yo Shoten. It is a blend of sake made by the previous toji that remained in Mr. Takai's brewery, known for its rocks. Hot sake. It can be drunk at room temperature, but a slight sense of maturity can be felt. The sense of maturity is also noticeable, but when warmed up, the restrained flavor and aroma blooms and fills the mouth with a full flavor. Very tasty!

This is a unit work of three breweries in Joetsu: Katafune (Takeda Sake Brewery), Koshiji-no-Kenbai (Kubiki Shuzo), and Chiyonomitsu (Chiyonomitsu Sake Brewery). Kura-kept yeast, fresh yeast, and shibari. The proprietor introduced that there is a new trial in Niigata as well. Delicious! It starts with a light sweetness, followed by acidity and a sharp bitterness. This complexity is good. I couldn't take my eyes off of the sake from Joetsu. There is a recommendation from Takeda Shuzo on the back label, which is also interesting.

Purchased at Ponshukan. It has a cute design that does not look like a cup of sake. The sake is brewed with four varieties of rice produced by four farmers in the Nishigama district, located in the far west of Niigata Prefecture. So that's what the grains of rice on the label mean. I've known the name for a while, but this is my first time drinking it. The rice is 100% Shukumei. It's fruity at first, but at the end, it hits you hard. It was easier to drink Gohyakumangoku, a special junmai, but I thought it had a common taste and passed it up. This one has more character. It is fruity and dry.

First Fushimi sake after debuting at Sake-no-wa! It's been a while since we went to Kyoto, so we decided to buy a bottle of Fushimi sake. The first time I took it out of the refrigerator, I had the impression that it was too alcoholic to be good for me😑. However, as the temperature gets closer to room temperature, the sweetness increases and it's nice 😳 It's mellow and easy to drink like Fushimi sake. It's delicious! This is a sake that should not be chilled, but lukewarm heating might be good too🤔. I'm so glad I bought it in the end ☺️.
