The founder, Mr. Goro Kishi "applied lactic acid addition to sake mother" eliminated wild yeast and succeeded in pure cultivation of proper yeast, and is said to be the originator of the fast brewing brewery. It was established by Mr. Kamajiro Eda of the Brewing Research Institute (now the National Institute of Brewing Science and Technology).
Ofuku Masamune Junmai Sake
The sake has a full-bodied, mellow rice flavor and richness. It also has a slight nuttiness.

It has more acidity than maturity and is a little dry and refreshing.

It smells of rice bran. The bitterness comes in a rush, and then quickly subsides, and the alcohol comes in again later, without breaking off. It was a match made in heaven.

A bottle of Honjozo Honjozo from my wife's relatives.
It was a little sweeter and softer,
I tried it cold, room temperature, lukewarm, and hot, and it was a good sake.
I am grateful to be able to have such a local brand of regular or honjozo class sake.
The first half of GW was a day trip to Mashiko, Tochigi Prefecture, and the spoils of my return trip to Niigata. The trophies of the first half of GW were mixed in.

I think this is probably the standard heated sake we had at the store the other day. I do remember it was slightly sweet and quite good. I remember thinking about buying it 😅.

I am also impressed with the slightly sweet taste of this Niigata sake.
It doesn't change greatly when heated but it doesn't collapse and is a good, mild evening sake.
The 300ml bottle is a 50% polished daiginjo that has a smooth, soft entry with a Fukuro Shibori taste and retains the old-fashioned, light and dry taste typical of Niigata Prefecture sake.
Today is my first Saturday off in a while, so I went shopping with my family.
I also visited Yamakoshi Honpo, which just opened yesterday at Cocoon 2 in Saitama Shin-Toshin.
The store is an antenna for the Yamakoshi area of Nagaoka City, Niigata Prefecture, and Niigata Prefecture's foodstuffs, and is like a select store.
The shop has a good selection of sake in one-cup and small bottles, which will come in handy.
The brewery "Ofuku Masamune" is located near the former Yamakoshi Village in present-day Nagaoka City.
The brewery also produces a brand called "Yamakoshi," which is brewed from rice grown in the terraced rice paddies of Yamakoshi.
The sushi is made by Kadokami Gyozu.
Headquartered in Teradomari, Niigata Prefecture, it specializes in fresh fish.
This is also a place I sometimes like to go shopping.

The mild mouthfeel allows you to enjoy the sake slowly. It is not overly appealing, so it goes well with meals.
Sake given to me by a friend. It is a raw sake made from polished Gohyakumangoku rice. It has a sharp taste followed by a firm sweetness and a slight bitterness in the aftertaste. It went well with firm foods such as fatty medium-rare ribs and sasami katsu. I thought Junmai Daiginjo only goes well with light foods like sashimi. It is very tasty. ★★★★★
