I've known the name for a while, but this is my first time drinking it. The rice is 100% Shukumei. It's fruity at first, but at the end, it hits you hard. It was easier to drink Gohyakumangoku, a special junmai, but I thought it had a common taste and passed it up. This one has more character. It is fruity and dry.

First Fushimi sake after debuting at Sake-no-wa! It's been a while since we went to Kyoto, so we decided to buy a bottle of Fushimi sake. The first time I took it out of the refrigerator, I had the impression that it was too alcoholic to be good for me😑. However, as the temperature gets closer to room temperature, the sweetness increases and it's nice 😳 It's mellow and easy to drink like Fushimi sake. It's delicious! This is a sake that should not be chilled, but lukewarm heating might be good too🤔. I'm so glad I bought it in the end ☺️.

A fellow triathlete was at Daimaru in Kyoto, A triathlete friend of mine was at Daimaru in Kyoto and bought it on the recommendation of the clerk. He asked me to come over to his house to drink it 🍾. It was my first time to try it and I had no prior knowledge of it, but I was attracted by the recommendation of the store owner and the delicious-looking label, so I took it home with me. I bought it because a liquor store in my neighborhood started handling Tajima. I was surprised at how fruity it was. It is fresh, moderately sweet, and delicious. It is a more modern sake than I expected. After drinking this after the first time, it feels more like a sake 🤔.

We opened Aizu Summer. Light and elegant, with a gentle sweetness and a slight bitterness. It has a nice sharpness and is a delicious sake that you will never get tired of drinking!

When buying Aizu sake, I was attracted by the words "Dry Honjozo". The simple name "Aizu" also intrigues me👍. When I opened the bottle and poured it, the aroma was mineral and clear. The mouthfeel is soft and smooth. The dry, refreshing taste is balanced by the sweet, astringent acidity and the umami of the rice. Although it is a regular honjozo, it has a delicate, gorgeous flavor, perhaps due to the 60% rice polishing ratio, which makes it one rank above other dry honjoze! The soft and clean part is reminiscent of "Ding" ✨. It is also very cost-effective and tastier than I expected...! You can clearly feel that it is well-known as a local sake. I would love to drink it with codfish stew 🤤.

The acidity is citrusy with a crisp, bitter taste. Overall, it is a refreshing summer sake. It is well-balanced and can be drunk easily. The yeast seems to be different from last year's, and judging from the other reviews, it may be a different one. (It's also possible that my taste buds are wrong...) If that's the case, I look forward to it every year! This year's was my favorite type❣️.
