At Hankyu Department Store I had a chance to drink all kinds of sake. The nigori was also delicious. They also gave us a 1:1 blend of nigori and junmai. It was also delicious. The one that caught my attention was the Junmai sake "P&A (Panda)", Junmai sake "P&A (Panda)". It's black and white, so I guess it's 🐼😁. It is said that lactic acid is not used in the yeast stocking but is substituted with citric acid produced from white and black malted rice and fermented slowly at low temperature. It is refreshing and light to drink. Pleasant acidity and a clean aftertaste, but it was a bit unusual.

Today, a Junmai Daiginjo Yamazakura Momo (YASURA) from Sudo Honke in Ibaraki Prefecture: ❗️ The aroma is faintly like old sake. The first sip has a dense texture on the tongue. After that, it has a numbness and a deep flavor like old sake. ❗️The sake we drank this time was last year's sake, so it was a nama-zake, but it didn't have much of a nama-zake feel. ❗️❗️

I opened a bottle of "Hokuto Zuisho", a souvenir from my recent business trip to Hokkaido, which I purchased at a liquor store in Kitami called "Mayanagi Sake Shop"! My business trip was via Sapporo, Obihiro, Kushiro, Nemuro, Abashiri, and Kitami (Memanbetsu Airport) on my way home. Naturally, I went to an izakaya (Japanese-style pub) on the way, but I decided to limit myself to sake from Hokkaido, so I had a bottle of Nemuro's "Kita no Katsu Shiboritate" in Kushiro. I asked for a recommendation for sake from Hokkaido and was recommended "Kaminokawa Taisetsu". However, I had drunk it some time ago, and after much deliberation, I chose "Hokuto Zuisho," which I had never heard of, and it turned out to be the right choice. It is a beautiful, well-balanced sake with a slightly sweet, fragrant, and crisp taste. It is made from Hokkaido rice, with a rice polishing ratio of 45% and an alcohol content of 16%. Delicious!

I am a fan of baby star with hot water, but this time I left it as it is. The taste of the baby star matches the deliciousness of the sake, and the sake envelops it nicely. Origuchi Sake-ten suddenly started taking reservations for Wakabisu, so I went to make a reservation last week and received it today. The rice is Kami no Ho. I didn't feel any gas, but there were lots of bubbles in the glass. I was told it was a food type wine, but it was more fruity and pineapple-like than I expected. It's not flashy, but it's delicious with a moderate sweetness and flavor. Wakabisu sake brewery is close to Aoyama-cho station, so you can go there by train 🤔.

Kansai Salmon Ware year-end party⑳⑳ We said goodbye to Umaisan, Maru, Rutemi, pyonpyo and Robin and went to the 3rd party. Mr. Muchi helped us to find a restaurant for the after-party too. I remember it was pretty fruity and refreshing. We also drank Niiyu's dry sake and Toyo Bijin's straight kumi, which is not on the menu 😋. I always listen to kan's 🐴 stories: 👂️ Mother and father are important 🐎. Jive-san had to leave on the way because his train time came 🙋. Finally, Nemuchi and I had ramen at Ramen Nigamushi Chicken before heading home 😋. I've never had ramen before and it was delicious 🍜. Aochan who went missing also went to another ramen restaurant 😁. I lost the sake that Jive gave me, so I went back to the after-party later, but it's a secret 🤫. Junmai Ginjo🍶Summer only sake 😆. Sweet and thick 😳. It's like coarse 😅. When you take your time to sip it, it softens a bit and has a dry melon aftertaste. Softened by Aizu's specialty, squid and carrots. The final dish is a chilled shoyu sauce, which is unique to summer. But it is rather refreshing. The soup is delicious.
