Sake from Tokyo is hard to come by, but I happened to find this sake. It was a delicious sake with a clean taste and umami in harmony, very similar to the previous Sumikirie sake.
I bought it because it's a warehouse opening.
It's very strong.
I think I've never seen 19-20% alcohol.
The mouthfeel is also strong. Bitterness comes, sweetness comes.
No sourness, no bubbles.
I'd prefer it a little less bitter, but I don't know.
It's heavy, just like when I drank it a couple of days ago in the warehouse, but I can sleep right away at home, so maybe it's great!

It has a gorgeous aroma. It's a good sake, but not my favorite.
Kaisen's new sake, special honjozo. A refreshing aroma of rice. A melon-like sweetness spreads in the mouth for a moment, but it quickly disappears, and a refreshing bitterness stimulates the tongue. The richness of Kasen's typical nutty flavor can also be felt, albeit slightly, but firmly. I'm glad to see such a wonderful taste that I'm sure I'll be hooked on Kasen again this season.

This is a prototype sake.
It is nigori, but without a hint of rice, and has an apple-like acidity that makes it refreshing.
The low alcohol content makes it easy to drink 😙.
Kurogyu (the orange one)
It was served at room temperature.
It has a sweet taste at first, followed by an astringent taste that comes through when you squeeze it.
It has a cupped feeling, with a ginjo aroma that passes through the nose and sometimes makes your nose feel skittish 🙄.

Extra. Refreshing concentrated grape juice 🍇 Easy to drink with low alcohol content. It says "nigori" on the bottle, but it doesn't have the nigori feeling of sake, it was more like red wine 🍷.
I drank all the sake I wanted to drink 🍶 and got drunk.

Since it was served cold, it was not that sweet for a kijo-zake, but it seemed to be sweet for a moment. But when I put it in my mouth, it warmed up with my body temperature and had a very strong sweetness typical of kijo-zake.

At Saké Koré Akiba
Tamura Sake Brewery is somewhat interesting these days. This is Kaisen Special Honjozo Hiyoroshi from Tamura Shuzo. I will have it warmed up. The aroma is classic sake, perhaps because it is a special bottle. A little acidity. It's spicy, spicy, spicy... but it also has a good amount of umami and sweetness. The richness of nuts and mushrooms, which is the point where Tamura Sake Brewery has come to attract my attention, can also be felt. It's so good! I love it. But I doubt it will be well received...
If I may be irresponsible, I don't want them to pander to the times and make sake that is too modern. I want them to show us the range of their sake by going the route of "rich and delicious" with aluzoe. I think there is still a lot of potential for Aruzoe...
