I went on a business trip to Aomori the other day and brought this as a souvenir. I vaguely matched it with squid or tuna. I thought it was probably a local luxury sake. It was a very tasty and elegant sake.

I bought it at a sake brewery when I visited Kurashiki at the end of September. I did not know that there was a sake brewery in the Bikan Historical Quarter, so I was led into the store. I was asked about my taste in sake, and this is what was recommended to me. The aroma spread from the moment the sake was poured into the cup, the taste was full and thick with rice flavor, and the dry sake disappeared quickly and easily. The 500mL bottle size can be consumed in one sitting, which is just the right size for a sake that changes its flavor as time goes by.

Oniyasha Centrifuged Junmai Ginjo Nigori Sake. It is a delicious sake with a creamy mouthfeel and a bitter taste that comes after the umami and goes down the throat. I think it's a slightly dry nigorizake. It's delicious 😋The label has a picture of the top and bottom. The direction of the label is reversed from the normal Oniyasha label.

I had not had the pleasure of visiting Sado last year, but I found this at a liquor store in town when I wandered by. I was hooked by the power word "centrifugal separation" and decided to take it home immediately. This is a good sake. It is very soft and elegant on the palate. The rice is made from Gohyakumangoku with a 55% milling ratio, but it is beautiful, with the sweetness and flavor of the rice riding on the transparency of the 35% milling ratio. The aroma is banana-like. The taste is full of sweetness, but the gradual entry of acidity is clear and the balance of sweet and sour is pleasant.

I went to a shopping mall to do some shopping. We wandered around Cardi's. Sake. Ice sake? I thought it would be good when it gets hotter. I tossed it in the back of the basket. I had it waiting in the freezer, but I didn't realize how quickly it would crisp up. It was hot, so I decided to finish it off with a dessert. Adult sherbet Naoshichi is a brand of citrus fruit from Kochi. It's good to have in the freezer from now on. ⭕️ The manufacturer is Kikusui Sake Brewery. No, it's from Kochi, so it's from here.

Okan's present sake series. Today I chose Kikusui. I didn't know there was a Kikusui in Tosa. I didn't know that😓I expected some sweetness since it is a junmai ginjo, but it was very dry. Sometimes it is nice to drink sake at room temperature. It's a single-batch bottle, so it's easy to open 😄.

Souvenirs from a trip to see the autumn leaves at Momijiyama in Yamazaki, Shiso City. Currently, there are two remaining sake breweries in the city, Sanyo Sake Brewery and Old Pine Brewery, but until 40 years ago, there was another brewery, Honke Monzenya, which brewed and sold a type of sake called sansho (three laughs). The building of the Honke Monzenya still remains, but in order to make the most of the historical landscape where sake breweries line up from Sanyo Bai to Laematsu and Honke Monzenya, The Yamazaki Central City Area Revitalization Committee (Good Town Project) was formed, and over a period of two years, "Sansho" was revived! There is a café called "Sansho" on the former site. Let's start with the old pine tree.

It's been a while since I've posted. When I stopped by my hometown, there was a fall festival. Old Pine nearby was selling sake by the cup and I was sucked into the store. I was attracted by the "Hiyoroshi" (limited hiyaoroshi) and bought it! I should have bought several bottles. I liked it so much that I wished I had bought a few bottles (which I couldn't), and I sipped it after dinner and finally finished it 🍶.

Junmai Daiginjo that is not like Yamada Nishiki. The sweetness is moderate. It takes some time for the flavors to develop. Personally, I've always had the impression that Yamadanishiki has a sweet aftertaste, but the dryness of the flavor reminded me of the diversity of Japanese sake. And even though it's supposed to be a little out of character for my taste, it was a dish that made me drink more! As the temperature rises, the taste is distinctly sweet at first and then dry (and crisp) at the end. It broke the stereotype that Yamada Nishiki is sweet! The brewery started brewing in 1922. The name of the brand was changed from the famous water "Horime-no-Ido" to "Horinoi".
