As the label says, it has a Sake meter value of +2, so it doesn't seem too spicy.
Slightly tasty, with a hint of acidity.
It is a local sake from Okayama, so it is made from 100% Bizen Omachi.
Bought locally when I went to Nichio in early spring to eat oyster mushrooms.
It is a small fire-brewed bottle, and it is very difficult to find a good one in a souvenir store.
Preference 50%.
Color Slightly yellow
Smell: I don't like the medicinal smell. The smell is stronger when it is cold.
Taste: Taste, acidity, and a bit of bitterness are good, but the smell is just too much to overcome them.
The smell becomes milder and easier to drink when the sake is heated up.
Overall: Not next time.
How to drink: lightly chilled
Aroma: There is a momentary smell of fermentation. However, it is not strong enough to give an unpleasant impression. Light fruity taste follows.
Taste: Light sweetness with a very refreshing aftertaste. Some bitterness.

This one is 100% Omachi and is aluzo-sweetened.
It seems to have a strong umami flavor, perhaps due to the adjustment of the taste.
It is also very well made and delicious.
My favorite was the jun-dai.

I was excited to open the first of two bottles, as it was my first time drinking this brand. It had a delicious flavor, a very clean mouthfeel, and just the right amount of sake-like acidity to keep the drink going.
Bizen Omachi rice is milled to 60%.
This sake rice is said to be difficult to mill to a high degree due to its large heart white.
The initial aroma is a moderate sweet fruity aroma, perhaps melon....
Enjoy the aroma, which is a mixture of umami and freshness, for a while.
However, when you put it in your mouth, you no longer feel the fruity aroma on the top, and the aroma of rice comes to the fore, and you feel a gap in a good sense.
The Muromachi Sake Brewery is said to be particular about Omachi, and we would like to support their unique sake brewing process, which is not possible with Yamada-Nishiki.
