As is customary every New Year's, we started the year with Osechi cuisine and a tokoso at the home of Kaorin's parents on the floor above us 😀.
This year's tokoso was red sake from Chiyozonoen, the brewer of Taido, which we always have at the Japanese sake festivals 😀.
In Kumamoto, where Chiyozonoen is located, they use akashu for tokoso 😀.
I bought this sake when I met the brewer at the Sake Festival at Hankyu Department Store, and he gave me a bottle of tokoso sake, so I started putting it on my sake last night 😀.
We all toasted after the New Year's greetings and it was sweet 😀.
It was not too sweet, but it was clear sweetness 😀.
By the way, we also had a bottle of sake that had not been soaked in tosozan, which also had a sweet taste, but was quite tasty 😀.
I thought it would be good to drink Kumamoto-style tokoso every year from now on 😇.

I was very impressed with the taste and the quality of the sake.
The color is just a little hazy.
Sweet and juicy.
The aftertaste is like chestnuts, leaving a long, mild aftertaste.

Japanese sake festival
Worked until 10pm (interim closing), had a glass of Chiyozono Shuubai (Junmai-shu) opened 4 days ago, served with ham loin. It seems to be spicier than 4 days ago. It has a gentle hint of aroma and a nice lingering aftertaste. It reminded me of the Shuubai sake I had 40 years ago. I feel that this brewery has the same "core spirit" even if the owner and toji have changed. It never blurs 😊.
While living in Fukuoka, I visited the brewery with an acquaintance.
We bought a limited edition sake from the brewery.
The brewery also had a corner shop 🍶.

We visited the Chiyonen Sake Brewery in Yamaga City, Kumamoto Prefecture, which has started a corner bar.
It looks like a wine bottle, sealed with a cork.
It seems that they wanted to keep the bottle corked and aged, and the only way to seal it with a cork was with a wine bottle, so they sell it in a wine bottle.
It was very plump and tasty when I let it air out a bit.
At Hanatomitei, a ryokan in Yamaga, Kumamoto Prefecture.
Kumamoto sake is not often available in Tokyo.
The label is already very unusual 👀.
It is made from 100% Hananishiki, Kumamoto Prefecture's first original sake rice. The yeast used is Kumamoto yeast, and all the ingredients are made in Kumamoto Prefecture. It has a clean taste with a strong umami and richness.
The airplane label is the president's special touch.
