(ˊ일ˋ )🍶🍶🍶🍶 Drink and cheer 📣✊. This sake is from Shimizu Sake Brewery in Kawai-cho, Wajima, which suffered a big fire after the Noto Peninsula earthquake. The building was not completely destroyed or destroyed by fire, but there was a lot of damage 😢This is the first sake from the brewery I have ever had. The aroma is only a little, and the sake is a solid amber color🤔It says it is dry, but it has a refreshing umami taste😊The sweetness and acidity are moderate and the aftertaste is super refreshing😚✨You will not get tired of drinking it and it will go down easy😇 It's a delicious sake that can reset your palate during a meal 🥳👍.

Hearing that Kanazawa is in the midst of a tourist slump, the wife and I went to Kanazawa Oden, and I had mixed feelings about being able to easily get into a restaurant that usually has a long line. A few restaurants were closed temporarily. Kanazawa was hardly damaged by the earthquake, and I hope everyone will come to Kanazawa! Now, Senmaida, rice from Senmaida in Wajima is partially used. Although it is junmai, it is not that heavy and easy to drink. It is light and crisp. The wife also likes it. The waitress said there were only 3 bottles left and that she would not be able to drink them for a while! We hope it will come back.

Sake Rice Hokuriku Series. This time, the tori is Hyakumangoku No, developed by Ishikawa Prefecture, and the 24th brewery in the prefecture? Noto Honor. Is it a characteristic of Noto Honor or Hyakumangakkino White? It is fruity, but I think it is a classic sake.

I bought a bottle of Hyakumangoku No Shiro, a sake rice from Ishikawa prefecture, to drink all of it. It is delicious, and I think it has a firm but fruity character.

The second cup is Goshosen from Kanazawa. It is a stable cup with a sweet and umami taste of rice 🌾. It was not as dark and Ishikawa-like as you might imagine. It was also delicious!

Mishio Junmai Ginjo Omachi 100% Omachi produced in Okayama Prefecture Polishing ratio 50%. Alcohol content 15-16%. Sake meter degree +2, acidity 1.8 (reference) Fat 5/7, opened 5/23 I wanted to drink a dry sake from Kochi and was attracted by the label that looked like a pattern of playing cards I used to have at my parents' house 🤣. The brand "Bishio" is a new brand that started in 2014. It is one of the Junmai Ginjo series that is based on the concept of "elegant sweetness reminiscent of honey" and is part of a trilogy that includes "Kitashizuku", "Gin no Yume", and "Omachi". The aroma is almost imperceptible after opening the bottle. In the mouth, it has a fruity, fruity aroma and flavor, but at the same time, the alcohol is very strong. The acidity is moderate and not harsh. The acidity is not too strong, but it's more spicy and tingling than the number 😅. I tried to drink it after 4 days, which is unusual for me, but although the mouthfeel got better, the strong alcohol feeling didn't go away. The aftertaste is light, so it would be classified as light-dry. It's like a Tosa sake in that respect 😊. Unfortunately, it didn't suit me and was disappointing 😅. Oh! Maybe I should have tried heating it up 🤔.

Kubota and Koshinokanbai were very popular at that time. It brings back memories.

On the Shinkansen, we open another bottle of Nara Sake, Kisenju✨. The palate is sweet and sour and yogurt-like. It is light and pleasantly schwishy. It is easy to drink even in a tipsy state! It is also gorgeous and strawberry-like, so it feels like strawberry yogurt. And the last one is Yamazaki 12 years old from sake. We ended our trip with a glass of Shinkansen Gokukkatai ice cream 😌. There are still many places I want to visit, so I will visit Kansai again if I have a chance...!

Sweetness
Drinking outside after work. My wife was off work and we decided to have dinner outside. We found this restaurant in the vicinity of Nara Station - ‼️ We couldn't find a good time to drink at Toyoshuku, so we went to this restaurant and had a glass of Nara's local sake, Shirotoroku (‼️). The aroma was gorgeous, the taste was smooth and sweet on the palate, and the finish was refreshing.

It will be a gift🙏. This is a special junmai from Morinori brewed by Okada Honke in Kakogawa, Hyogo Prefecture. It was recommended to me by someone who knows a lot about Japanese sake. It is fresh and has a refreshing taste with a richness that is typical of Gohyakumangoku and can be enjoyed while savoring the sake. ☺️

Yamatsuru is the closest sake brewery to my house, but I haven't had much of it lately. The last time I drank it I got the impression that it was peculiar and not really my cup of tea, but not this Junmai Daiginjo! Clear and fruity, good balance of flavors. It's also gorgeous😋. The price is reasonable for a Junmai Daiginjo, but I think it's worth it🧐 I can't underestimate local sake 😚

Low-polished Junmai-shu from Yamatsuru, a local sake brewery in Ikoma, Nara. The name is Choyao. It was a gift, but it looks like it will cost a fortune💧. I heard it was brewed using a method described in a wooden letter from the Nara period. I wonder if it is true. Anyway, let's try it. Wow! It is indeed as rich and sweet as I had heard! The sake level is a whopping -40❗️ But the aftertaste is refreshing. Surprisingly easy to drink and delicious 😋. It's pretty good 👍I'll have to try this one too 😙. But I wonder if people in the Nara period really enjoyed this kind of sake 🤔.

The sake I chose when I returned home for Obon was Gold Junmai Daiginjo by Popular Sake Brewery. This sake brewery is very particular about the traditional method of making sake, and everything is made in wooden vats. It is a junmai daiginjo that is polished to 50%, so there is no cloying taste at all ✨It starts with an elegant sweetness and rice flavor, with the aroma of the wooden vat and a slight bitterness at the end. Delicious 😊.

Clean and easy to drink. It has a lychee-like aroma and a banana-like sweetness. It's dry on the throat, but you can feel the sourness and sweetness. I personally like it better when the temperature rises a little and it's closer to room temperature.
