We attended a year-end party for parents of my second son's high school club! Although there are some rank restrictions, we enjoyed drinking all the sake we could drink 😆. The 4th glass! Koshino-Hachiho Junmai Sake This is also a brand new to me! It is a light and dry sake with the main flavor of rice. It is a typical food sake that does not interfere with the taste of the meal.

The sake is brewed by "Toroki Shouten", a sake brewer who was involved in growing the rice and brewing it together with Wakatakeya Sake Brewery. I got it as a sign of support 😊 Is it what's called a light, dry taste? It had a faintly sweet aroma, but the sip was refreshingly watery! The flavor and bitterness come out on the palate. I was drinking it with cream cheese as an entrée, but it doesn't get in the way, so it's probably just right for a mid-meal drink 😊.

I bought this Wakaba unfiltered sake in the summer and felt it was still young, so I let it sleep in the closet. It has a good balance of flavor, with the punch of unfiltered sake, but without losing the simple country feel of Wakaba. I put it in the closet again, but it was good enough. It's not Wakaba, but Higuchi Shinyo, a triple axel that is anything but rustic! The ROC is still very difficult, but I hope the Japanese will do their best to get on the podium!

It is not sake, This was delicious. ‼️ It is a blend of Kasagi's yuzu juice and "Onnajojo" ginjo sake. It is so thick and sweet that you would think it was juice, but you don't feel much alcohol. It has a nice aroma and the bitterness of the yuzu makes it refreshing and easy to drink. Not bad!

The 40th sake brewery in Gifu Prefecture. The main brand of Iwamura Jozo in Iwamura-cho, Ena City. Purchased at a supercenter in Seki City. The aroma is apple-like ginjo aroma. The color is a little yellowish. The palate is light and dry with a bitter taste, but the apple sweetness comes later, so it is not a problem. When you hear the name of the female lord of the castle, Ii Naotora may come to mind, but this one refers to Oda Nobunaga's aunt, Otsuya-no-Kata. I asked the lady at the store to recommend a new arrival, and since Hayashi was not yet available, I bought a bottle of Kurobe Pincer from the same brewery 😚. The aroma is not so much but a little peachy 🍑? It is fresh on the palate with a gentle sweetness and rice flavor 🌾😋 It is a delicious sake that finishes with a bit of an alkali aftertaste 😆👍✨.

Thank you for coming from far away. 　When I looked at the label at home, I found that the production date on the label was November 5. I opened the bottle today to taste it as soon as possible. It has a fruity aroma and a good mouthfeel. It was a delicious sake with a complex flavor with a touch of bitterness and umami.

This one was given to me in return for sake I sent to my boss, and it's my first Fukuoka Prefecture sake! I didn't know what to choose when it came to Fukuoka sake, so I'm very grateful to be able to drink it in this form! It is a well-balanced and delicious sake. The most wonderful thing about this sake is that it is fire-aged, so it is hard to lose this flavor. It tastes great even after a few days. Although there is sweetness, it does not bother you too much because the main flavor is umami. What is this feeling of being able to drink without getting tired of it? It is not so much sourness, bitterness, or astringency, and it is strange that it is smooth but somehow deep and earthy. Actually, I forgot to post this post after drinking it, but I had this one for New Year's Day. This kind of aromatic and light sake was definitely a good match for Japanese dishes like Osechi. My first Fukuoka sake was a simple and good sake.
