This Sake is amber color and has a full mouth feel. The flavor of dates gives this a sweet overall taste and the cedar provides sophistication. There is also some acidity that gives this a clean, dry finish. 🧐

For my sixteenth cup, I decided on "Bida"! I decided to have it because I missed my trip to Fukuoka last year👍. The taste is cloudy and thick, with a lot of rice flavor. This one was given to me in return for sake I sent to my boss, and it's my first Fukuoka Prefecture sake! I didn't know what to choose when it came to Fukuoka sake, so I'm very grateful to be able to drink it in this form! It is a well-balanced and delicious sake. The most wonderful thing about this sake is that it is fire-aged, so it is hard to lose this flavor. It tastes great even after a few days. Although there is sweetness, it does not bother you too much because the main flavor is umami. What is this feeling of being able to drink without getting tired of it? It is not so much sourness, bitterness, or astringency, and it is strange that it is smooth but somehow deep and earthy. Actually, I forgot to post this post after drinking it, but I had this one for New Year's Day. This kind of aromatic and light sake was definitely a good match for Japanese dishes like Osechi. My first Fukuoka sake was a simple and good sake.

I stopped by Hashimoto Sake Brewery on my way to Yamanaka Onsen last year. The store is a bit like a museum, and you can learn a lot from the easy-to-understand explanations about the rice polishing ratio and the process of making sake. I was not able to taste the sake because I was the handle keeper, but the president recommended a lot of sake and my family was getting drunk (sweat). I drank it cold, but it was still dry. When I heated it up, it became soft, mellow, and easy to drink. The color is quite amber, so the polish may be shallow. Personally, I think drinking it at room temperature or hot is the right way to go. I like to drink sweet sake cold, but I'm starting to think it would be nice to drink dry sake hot ( ˘ω˘ ).

I was there just two and a half months ago, so I missed it a lot! Once again, Kamakura is a wonderful place! I bought this Wakaba unfiltered sake in the summer and felt it was still young, so I let it sleep in the closet. It has a good balance of flavor, with the punch of unfiltered sake, but without losing the simple country feel of Wakaba. I put it in the closet again, but it was good enough. It's not Wakaba, but Higuchi Shinyo, a triple axel that is anything but rustic! The ROC is still very difficult, but I hope the Japanese will do their best to get on the podium!

It is not sake, This was delicious. ‼️ It is a blend of Kasagi's yuzu juice and "Onnajojo" ginjo sake. It is so thick and sweet that you would think it was juice, but you don't feel much alcohol. It has a nice aroma and the bitterness of the yuzu makes it refreshing and easy to drink. Not bad!
