Rice used is unknown. According to the owner of the sake shop, the sake is aged for three years, but there is no strong sense of aging, and it is a dry junmai-shu with a good acidity. It is a dry junmai-shu with a lot of acidity. The sweetness that spreads fluently and the spicy astringency in the latter half are very unique. After a few days, it becomes more crisp and easy to drink. For my taste, I'd like to have more of a woody or smoky flavor. Either way, it's not a type that will appeal to everyone. The mainstay of this brewery is Yamahai brewing, so it will be interesting to see how peculiar it is.

I bought it at the Kasumi Sosa store of the supermarket. To put it bluntly, it is a label purchase (laugh). Opened at room temperature, taste is so-called "umakuchi dry"? It seems to emphasize the sake-like quality more than the light dry sake. It is supposed to be junmai sake, but it seemed to have the atmosphere of a honjozo sake that contains brewing alcohol. Could it be related to the long-term aging on the label? I opened the package and put it in the refrigerator. I will try to see the difference from room temperature later.

This is the first time I've seen this warehouse. The rice used is Maikaze. As the name suggests, everything, including the yeast, is from Gunma, and it seems to be an annual event. After a few drinks, it was quite late, so I headed home while eating a golden dharma bento commemorating the 140th anniversary of Takasaki Station. I will close my Gunma trip with "Akagisan" and "Funao Taki"! Sweet and sugary aroma like sugar. The taste is smooth and silky, and while it has a Gunma sake-like quality, it tastes more like a sweet sake derived from brewer's alcohol. Another one this time. It is Takatsugawa by Fusozuru. It is from Shimane Prefecture. I saw Hiraccio-san drinking it and longed for it 🙌. First at room temperature. The color is a solid yellow. The aroma is mildly savory with a hint of maturity. It smells like caramel, soy sauce, and cream cheese. The mouthfeel is gentle. The palate is drowned in the complex flavor of aged rice with a moderate acidity. When heated up, it becomes smoother and more balanced, and you can just keep on drinking it. It has a relaxing and soothing taste. When tasted with a thick Shigaraki-ware sake cup, the warmth of the clay makes it taste even better. The warmth of the clay makes it even softer and happier 💕. Aizu girl and the Takatsu River I will relax my body and soul in the late winter. What a good evening drink 😊.

Sake from a brewery famous for Ryujinmaru. It has been a very long time since Kirakuri. After Shikishima, tkmts-san was drinking Ryujinmaru, and I wanted to try something of Takagaki-san's sake, so I chose Kirakuri. This time it was an unfiltered raw Nakadori. It has a caramelized taste with sweetness and a sense of maturity. It's just a coincidence that there is a succession of sakes with a sense of maturity, such as Washin, Shikishima, and Kirakuri.

If you drink Ryujinmaru I want to compare the Takagaki sake brewery ⁉️ So I compared with Kirari 😆. The aroma of this one is also very robust 😳 This one is a little more refreshing. On the Shinkansen, we open another bottle of Nara Sake, Kisenju✨. The palate is sweet and sour and yogurt-like. It is light and pleasantly schwishy. It is easy to drink even in a tipsy state! It is also gorgeous and strawberry-like, so it feels like strawberry yogurt. And the last one is Yamazaki 12 years old from sake. We ended our trip with a glass of Shinkansen Gokukkatai ice cream 😌.
