Enjoy it like a lemon shochu high 🍋 by mixing it with carbonated water.
I haven't enjoyed sake like lemon shochu high since Kumezakura Shuzo's
I haven't enjoyed sake like this since Kumezakura Sake Brewery's "Lemon Doo" Yellow Label 💕.
I wonder if it's because of the difference in sake level or the white malted rice.
I have the impression that "Yone Rikki" is dry!
Lemon D'Oo" immediately became my favorite flavor.
But "Yone Rikki" was not so!
I'm exploring the ratio with carbonation, with or without ice, the type of citrus, and so on.
It's fun to explore different tastes 😎🫰.

Hot sake
The rice is quite low-polished, but it has a lively acidity,
No strange tangy flavors, but very complete.
It has a very high degree of perfection.
Next is a locally brewed sake from the town of Onan in Shimane Prefecture.
This sake has a strong rice flavor typical of San'in sake, but with a moderate alcohol content of 13%, so you can feel the lightness of the sake. 🙆♂️
It was delicious.
The activity is amazing.
I was thrilled by the amount of rice curd that I was surprised to see.
The rice flavor is strong, but it has a bubbly, fizzy feeling and acidity, so it's not at all cloying.
It is rich yet delicious.
Sharp specs: white malted rice and sake yeast
Rice is Gohyakumangoku
As it is
Aroma: Ginjo aroma
First, 🍈, then ao🍎.
A little sweetness on the palate.
Then, you can feel a firm acidity.
Bitter aftertaste and a little umami.
Sake with soda
The back of the bottle says sake:soda = 4:6.
The aroma is very strong even when mixed with soda.
The acidity is still there, but the rice taste and umami are not so good,
However, the rice flavor and umami were not so strong.
I thought that sake lovers should drink it at 7:3, which is a little too much sake. So we ended up drinking it at that concentration.
The aroma, acidity, and umami are in harmony.
However, the alcohol taste becomes mild and it is dangerous to drink too much.
It might be dangerous to drink too much ⚠️
It is made mainly from sake that can be easily drunk warmed up, such as junmai sake and nama-moto junmai sake, which are suitable for heating sake. It is a regular sake in the Tamasakura lineup.
Sake rice is Gohyakumangoku, rice polishing ratio is 70%, and the yeast is No. 701.
We had it hot 🍶.
The soft rice flavor of Gohyakumangoku fills your mouth 👍There is a crisp acidity and bitterness, followed by a soft umami that envelops you 😆.
I paired it with Kanpachi sashimi and potato salad.
Oily fish and sake go well together!
