The taste is slightly gassy on the palate, and then the umami spreads into the mouth with a bang, leaving a sour taste and a lingering aftertaste that feels like you are drinking sake, which is pleasant and fluffy on the nose. It is fresher and tastier than when I tasted it. I really like this lingering taste of sake around 17 degrees, but I always feel frustrated that I can't drink a lot of sake because it goes around so fast 😅.

I see that it is read as "Sekepikozan". If I had not drank this sake, I might not have been able to read it correctly for the rest of my life. The taste is fresh and quite rich. The bitter bitterness comes out in the back of the mouth, and the taste is sharp and clean. The sweetness is modest for Aizan, and although it is not the modern type of sake, the umami flavor is very well conveyed. Not bad!

I've been wanting to try this one for a while...they use 1801 yeast. It's gorgeous and fruity. It's also quite sweet. I think it's the most gorgeous of all the Yukihiko Yama brands. This was over 2,000 yen at a certain izakaya in Osaka, but at a nearby liquor store it was 1,980 yen🙄. I wonder what it is? I heard some breweries and stores add shipping costs 🤔.

I went to Tabe Takeshita Sake Brewery and Sake Brewery Museum 😆. But all the sake was sold out there 😭 So I went to a liquor store that sells this sake and bought Rihachi👍. I wanted to drink it and I couldn't bear to end up not being able to buy it 😣. But I'm glad I was able to buy it safely 😌. I bought it last year as a souvenir from Utsunomiya. It's been a while since I've had "out of the gate", but my taste buds have changed since the last time I had it, so I'm looking forward to it! When you open the bottle and pour it, it smells like citrus fruits and lychee. It is tasteless on the palate, but gradually the richness and mellowness of the rice comes out. The sweetness, spiciness, and astringency of the flavor are all present as soon as the lid is opened! Although it is a junmai ginjo, it has such a robust flavor that it may be served warm. The overtone is similar to that of "Shinkame" and gives the impression of a matured sake. The lingering aftertaste is well rounded as it quickly fades away. Overall, the shades of gray are exquisite, and the taste is quite interesting! In fact, the first sake I ever drank in my life was "Monkai Fude.
