@Tempura and Sake Asuigen Yonemune by Aoki Shuzo in Aisai City, Aichi Prefecture. 21.9 on the label is the alcohol content 😆. No yeast added, acidity 2.9, Sake degree +25, and a very odd sake 😤. The owner of a yakitori restaurant I went to later in the day, which mainly serves hot sake, told me that the alcohol content is only possible because of Yonemune's brewer's yeast, not an association yeast. I had it cold 🍶. The first aroma has a slight acidity. In the mouth, you can taste the acidity and sweetness accompanied by umami. It may be because I usually drink high alcohol content nama sake, but the umami is so thick that you don't feel the 21.5% alcohol content. I could taste a glimpse of the umami in the cold sake, but I definitely think this sake should be heated up. I made a mistake 😌. The third and fourth pictures are of Yonemune's brewery, about a 10-minute cab ride from Kintetsu Yatomi Station on the Kintetsu Nagoya Line (or Yatomi Station on the JR Kansai Main Line). While I was taking pictures, Mr. Toji Aoki happened to come outside while I was working and we had a chance to chat, if only to say hello 😊.

@sakebar Fukuzo This sake is from the same Kobayashi Shuzo Honten as the "Hakata no Mori" I posted a while ago. Mandai must be more famous locally 🤔. It will be pressed on the morning of Risshun 🍶. The aroma on the nose is fruity🍍 and sweet. When you take it into your mouth, it has a deep, mild sweetness and umami that is typical for a draft sake, and it finishes with a slight astringent taste. It was delicious 🍶✨.

I was aware that it was originally intended to be a classic sake, but as I expected from a sake pressed in the morning of Risshun, it was a fresh, elegant, and sweet sake with a great aroma. I was very satisfied with the sake, which tasted even better than I had imagined.

My father bought it for me as a souvenir from his trip to Aomori. The nose has a faintly acidic aroma. In the mouth, there was a delicate acidity from the sake yeast and a calm, gentle sweetness and richness. It was a crisp sake, typical of Sakuta's special pure sake. It was delicious, but it was not so good when it was warmed up 🤔.

Takachidai Takagami Aoban 2023BY It's been a long time since I've had a sake with alcohol, and while all Takagusuku's are delicious, this Aoban is the first one in my house 🙌 They also released a four-pack bottle this season, which I'm very thankful for ☺️ Now, from the aroma, there is a fresh fruity aroma of muscat and lychee, and the mouthfeel has a pleasant balance of fruity sweetness and acidity 😊 It is very tasty with a softness and lightness that does not make you feel like it is alsodeye 😋😋😋😋😋😋.

The last sake we had at Kyoto Stand Kiyo Kiyo was "Toyoyo Junmai Dry Musou" by Mukai Shuzo, also from the Tango region. The rough and powerful label may represent the fishing scene in this area. When you put it in your mouth, you can feel the umami flavor and the aroma of rice is crisp and full. Even though it is called "Dry Musou", it has a hint of sweetness, which makes it a delicious cup. It has been a long time since I have had a good drink, and the best part of drinking outside by myself is that I can drink slowly while considering what to drink and what snacks to go with it, while keeping an eye on my pocketbook. I returned home refreshed both mentally and physically. From next time, I will introduce some of the sakes I took at the beginning of the year!

1853 2024/9 Kyo no Haru Junmai Nama Nigori Sake 67% 17° 24/8 A Ine-cho, Kyoto 720 1945 The bottle was warned to be opened with caution, but there was no fizziness at all, and the lees did not move even slightly. The first thing I did was to pour the clear sake into a cup, and even there I did not feel any fizz. But the taste is quite refreshing and delicious. After the second glass, I mixed the lees with the nigoromi (nigori)... Perhaps because the lees is so thick (about a quarter of the lees in stillness), the sake was a little heavy, beyond soft. It might be exquisite if gas were involved...but I kept on drinking. I had the impression that if there was a sense of effervescence... if there was no effervescence, the clear sake would be better.... On the second day, I had the clear sake and light nigori. Since I was enjoying Ine-Manbaike at the same time, I thought it would be good if they were from the same brewery, so I combined the remaining lees with Ine-Manbaike and enjoyed it as a mellow pink sake.

Yamatsuru is the closest sake brewery to my house, but I haven't had much of it lately. The last time I drank it I got the impression that it was peculiar and not really my cup of tea, but not this Junmai Daiginjo! Clear and fruity, good balance of flavors. It's also gorgeous😋. The price is reasonable for a Junmai Daiginjo, but I think it's worth it🧐 I can't underestimate local sake 😚

Low-polished Junmai-shu from Yamatsuru, a local sake brewery in Ikoma, Nara. The name is Choyao. It was a gift, but it looks like it will cost a fortune💧. I heard it was brewed using a method described in a wooden letter from the Nara period. I wonder if it is true. Anyway, let's try it. Wow! It is indeed as rich and sweet as I had heard! The sake level is a whopping -40❗️ But the aftertaste is refreshing. Surprisingly easy to drink and delicious 😋. It's pretty good 👍I'll have to try this one too 😙. But I wonder if people in the Nara period really enjoyed this kind of sake 🤔.
