@sakebar Fukuzo This sake is from the same Kobayashi Shuzo Honten as the "Hakata no Mori" I posted a while ago. Mandai must be more famous locally 🤔. It will be pressed on the morning of Risshun 🍶. The aroma on the nose is fruity🍍 and sweet. When you take it into your mouth, it has a deep, mild sweetness and umami that is typical for a draft sake, and it finishes with a slight astringent taste. It was delicious 🍶✨.

Yamatsuru is the closest sake brewery to my house, but I haven't had much of it lately. The last time I drank it I got the impression that it was peculiar and not really my cup of tea, but not this Junmai Daiginjo! Clear and fruity, good balance of flavors. It's also gorgeous😋. The price is reasonable for a Junmai Daiginjo, but I think it's worth it🧐 I can't underestimate local sake 😚

Low-polished Junmai-shu from Yamatsuru, a local sake brewery in Ikoma, Nara. The name is Choyao. It was a gift, but it looks like it will cost a fortune💧. I heard it was brewed using a method described in a wooden letter from the Nara period. I wonder if it is true. Anyway, let's try it. Wow! It is indeed as rich and sweet as I had heard! The sake level is a whopping -40❗️ But the aftertaste is refreshing. Surprisingly easy to drink and delicious 😋. It's pretty good 👍I'll have to try this one too 😙. But I wonder if people in the Nara period really enjoyed this kind of sake 🤔.

Rice used is unknown. According to the owner of the sake shop, the sake is aged for three years, but there is no strong sense of aging, and it is a dry junmai-shu with a good acidity. It is a dry junmai-shu with a lot of acidity. The sweetness that spreads fluently and the spicy astringency in the latter half are very unique. After a few days, it becomes more crisp and easy to drink. For my taste, I'd like to have more of a woody or smoky flavor. Either way, it's not a type that will appeal to everyone. The mainstay of this brewery is Yamahai brewing, so it will be interesting to see how peculiar it is.

Yahiko Sake Brewery in Yahiko Village, Niigata Prefecture. The main brand was "Echino Hakusetsu," but it appears that "Yahiko" will be the main brand from now on. This Junmai Ginjo is also made from Yamadanishiki produced in Yahiko Village, and is a good sake, not fruity, but calm and soft. My first Kurosawa. Just after opening the bottle, the cork blew up to the ceiling. When you pour it, it fires strongly. When you drink it, it is refreshing like a carbonated drink.
