2020/11/06 ⭐️⭐️⭐️⭐️⭐️ A subdued but green apple-like aroma. The mouthfeel is refreshing and smooth. It is followed by a rich sweetness and flavor. Spiciness and acidity are rather subdued. It finishes off nicely with a slight bitterness. It was easier to drink than the ginjo I received before.

Tonight, I'm posting my second bottle, this one I've been letting go for about 2 years to contrast with the first (Miyazumi Junmai Nigori Nama) 🍶. Actually, I bought it at the same time as the previous Junmai, but when I drank the Junmai, I took it for granted that this was a sake that should be aged for a long time 😪💤 and it has been in the bottle for a long time until now 😌. The aroma is grain-like, or Western liquor-like, or mature aroma, and the smell alone is enough to make you feel drunk. 😵💫 I think it's better to drink it at room temperature or warmed than chilled because the initial smell will disappear. Maybe I'll give it a try after tomorrow. It's good to enjoy long-aged sake sometimes. ☺️

Get it at "Marugoto Kochi" in Ginza, Tokyo❗️. I had never heard of this brand before, but it was delicious ❣️. The rice used was something from Kochi Prefecture. It has a fresh citrusy taste like a fresh sake, with a rich mouthfeel, but it goes down smoothly. The aftertaste is clean and crisp. If I had to say something, I would say that I would like a little more sweetness, but it is just right for light drinking.

Second day of Kochi Night. The cab driver told me that Hirome is good, but for bonito, I should go to Matsuri Jaya. He advised me to go to Matsuri Jaya for bonito, as it has a good selection of alcohol. So we went to Matsuri Jaya. At first, we started out with regular sake, just like a normal drinking party in Kochi. The staff at the restaurant recommended various temperatures for drinking. The first sake is Fujimusume, which I have never tried before. Slightly spicy and umami-guchi (flavorful), it was a perfect match for the thickly sliced salt cod roe. The special sake cup is also cute! But from here, I sank into the swamp of Kochi sake.

Shikoku x Sake Country 2025 Sake Brewery Wonderland On Osaka - A Spectacle of Sake and Food in Shikoku It's hard to say because it's my personal most favorite type of sake, but it's the best honjozo sake! It has the perfect ratio of deliciousness and dryness. I didn't drink the Junmai Ginjo because I posted about it before, but this is also a great sake!

@sakebar Fukuzo This sake is from the same Kobayashi Shuzo Honten as the "Hakata no Mori" I posted a while ago. Mandai must be more famous locally 🤔. It will be pressed on the morning of Risshun 🍶. The aroma on the nose is fruity🍍 and sweet. When you take it into your mouth, it has a deep, mild sweetness and umami that is typical for a draft sake, and it finishes with a slight astringent taste. It was delicious 🍶✨.

Yamatsuru is the closest sake brewery to my house, but I haven't had much of it lately. The last time I drank it I got the impression that it was peculiar and not really my cup of tea, but not this Junmai Daiginjo! Clear and fruity, good balance of flavors. It's also gorgeous😋. The price is reasonable for a Junmai Daiginjo, but I think it's worth it🧐 I can't underestimate local sake 😚

Low-polished Junmai-shu from Yamatsuru, a local sake brewery in Ikoma, Nara. The name is Choyao. It was a gift, but it looks like it will cost a fortune💧. I heard it was brewed using a method described in a wooden letter from the Nara period. I wonder if it is true. Anyway, let's try it. Wow! It is indeed as rich and sweet as I had heard! The sake level is a whopping -40❗️ But the aftertaste is refreshing. Surprisingly easy to drink and delicious 😋. It's pretty good 👍I'll have to try this one too 😙. But I wonder if people in the Nara period really enjoyed this kind of sake 🤔.

The sake was a donation of 50 yen per bottle. The liquor store told me to use it as a cooking sake if it tasted bad because it might be a bit of a twist, but it's also just plain delicious.

Purchased during a previous visit to a liquor store in Kumamoto First brand Another brand, Sabadesh, is more famous. Cold sake Ripe aroma Surprisingly classical and somewhat mellow. Rice used is unknown. According to the owner of the sake shop, the sake is aged for three years, but there is no strong sense of aging, and it is a dry junmai-shu with a good acidity. It is a dry junmai-shu with a lot of acidity. The sweetness that spreads fluently and the spicy astringency in the latter half are very unique. After a few days, it becomes more crisp and easy to drink. For my taste, I'd like to have more of a woody or smoky flavor. Either way, it's not a type that will appeal to everyone. The mainstay of this brewery is Yamahai brewing, so it will be interesting to see how peculiar it is.
