A gift from Sawanoizumi The Jun Dai I drank before was a Miyagi sake, beautifully light and dry, and I felt (selfishly) the earnestness of the toji (master brewer). I had an image of a modest, but firm, light, dry Kura. And then there is this special pure Sawanoizumi. It does not have much of a topping aroma, but the mouthfeel is surprisingly sweet and umami! It is sweet to the level of the Hitakami, and the robust umami is also very tasty! It has a light acidity and bitterness, followed by a refreshing sharpness. It's good! This is good! The price is relatively cheap, about 1300 yen for a four-pack, but it is convincing enough! Ishikoshi Brewery. I underestimated you. Sorry about that. Honjozo 🍶 fresh stored sake✨ A good, albeit alsodense, taste. Dry aftertaste. Slightly bitter. Mild when paired with salmon. ☺️ Sweetness when paired with sea bream. It's delicious. I see that it is read as "Sekepikozan". If I had not drank this sake, I might not have been able to read it correctly for the rest of my life. The taste is fresh and quite rich. The bitter bitterness comes out in the back of the mouth, and the taste is sharp and clean. The sweetness is modest for Aizan, and although it is not the modern type of sake, the umami flavor is very well conveyed. Not bad!

I've been wanting to try this one for a while...they use 1801 yeast. It's gorgeous and fruity. It's also quite sweet. I think it's the most gorgeous of all the Yukihikosan brands. This was over 2,000 yen at Asano Sake Shop, but at a local liquor store it was 1,980 yen🙄. I wonder what it is? I heard some breweries and stores add on shipping costs 🤔.

Sake opened at a remote off-line meeting (3) I was asked "What is the best sake you drank this year? I answered "Aozora", but later I remembered that it was the future of sake from Akabu newborn 🤣. By this time I couldn't even remember what it tasted like, so I checked again the next day. The rice used is 100% Benkei. It is a kijoshu, although there is no description. I got this on a trip to Nagasaki last year. I will have it while thinking back to the delicious Turkish rice and Sara Udon noodles 🤤. When you open the bottle and pour it, the aroma is sweet and fluffy, like pudding or custard. The aroma is gentle and soothing. The mouthfeel is smooth and silky, but as the aroma suggests, it has a pudding-like flavor and a moist sweetness that fills the mouth 🍮. On the other hand, it also has a slightly tangy and pungent acidity that gives it a lightness, so it has a good balance of depth of flavor and a sharpness that goes down your throat👍. In the latter half of the bottle, the astringent taste also comes out, so the flavor can be felt as caramelized. There are also the standard "Yokoyama Goju" and "Rokujyosu", and I remember that I had a lot of trouble finding a variety at the Nagasaki airport. I also drank Nagasaki sake several times, and it seems to me that the level of sake is as high as that of shochu 😌.

Since it's spring🌸, I think I'll have another bottle of sake with spring in it. I bought a bottle of Shunshin by Nishide Sake Brewery in Komatsu City, Ishikawa Prefecture. I've been curious about this sake for a while but never got around to it. I will have it with boiled flounder 🙏. I thought it might be a bit strong, but it wasn't. It has a nice richness, sweetness, acidity, and a mellow feeling 😆. It's a bit like a lighter version of Tamagawa. As the label says, I preferred it at room temperature rather than chilled 👍

I saw it for the first time at a department store tasting sale, so I bought it. It's not listed on the label, but according to the brewer's description, it's unfiltered undiluted sake. It says "light nigori" but it's not cloudy at all (laughs). It's refreshing and easy to drink. The acidity in the second half is impressive.

I bought it last year as a souvenir from Utsunomiya. It's been a while since I've had "out of the gate", but my taste buds have changed since the last time I had it, so I'm looking forward to it! When you open the bottle and pour it, it smells like citrus fruits and lychee. It is tasteless on the palate, but gradually the richness and mellowness of the rice comes out. The sweetness, spiciness, and astringency of the flavor are all present as soon as the lid is opened! Although it is a junmai ginjo, it has such a robust flavor that it may be served warm. The overtone is similar to that of "Shinkame" and gives the impression of a matured sake. The lingering aftertaste is well rounded as it quickly fades away. Overall, the shades of gray are exquisite, and the taste is quite interesting! In fact, the first sake I ever drank in my life was "Monkai Fude. I was actually the first person in my life to drink sake, and that drink at Kinugawa Onsen has led me to the present day.
