The aroma and flavor of this dish reminds me of tyrosine of Parmigiano, which I have never encountered before. It is an interesting dish, but not at all cloying.
I don't know about the top-secret mission, but the salted fish with Hatcho miso tuning provided by Jizakeya Kodama was a perfect complement to the stiff sake, and made the sake go down a treat!
