On the first day after opening the bottle, the aroma was subdued, the taste was crisp and dry, with a pronounced bitter, mature taste, nostalgic sake! But after a day of drinking it, I was right.
The fragrance was fruity, and the sweetness and umami of the rice could be felt on the palate, with a nice aftertaste and a light acidity and bitterness. The bitterness, which had been prominent, has completely settled down.
It is a big change and delicious!

The color is clear.
The aroma is not taken away.
On the palate, it is fresh, clear, and sweet. As the label says, it reminds one of watermelon 🍉.
There is a bitter aftertaste and the umami of the rice (🌾), which gives the overall impression of fullness.
The ginjo aroma is weak and fades away.
The sweetness and sharpness are integrated with a sense of transparency, making it an honest sake that is easy to drink.
+I was curious to buy it because I like dry junmai over +5.
Today is Mother's Day, so we had hand-rolled sushi.
I don't like the feeling of a crisp, clean, albeit a bit dry, Junmai for Sashimi. I don't like the feeling of "I'm not a fan of that", so I went for the Dai-Sara Junmai right away!
The first sip gives a mild umami flavor typical of junmai, but as it goes down the throat, it finishes clean and crisp.
+If it goes up to +15, it seems too spicy, but this one seems to be +12. I think it is just right.
It went well with scallops, which are light and tasty among today's ingredients.
