The price was 1980 yen at Chateraise.
It seems that there are only two kinds of Hakuba Nishiki sake sold in the market.
I thought it would be a bit more fruity and sweet like spring, but it tasted more like junmai ginjo than I expected.
Today we have a local sake from Shinshu.
It is sold exclusively at Chateraise.
Hakubanishiki Junmai Ginjo from Hakubanishiki Sake Brewery.
The aroma is mild.
The taste is sweet at the beginning and tastes refreshing and delicious afterwards.
Sake made in Omachi City, Nagano Prefecture. It is made from 100% Miyamanishiki produced in Omachi City. It is not too sweet and is a legitimate junmai ginjo.
The Genkai pickles, which are whale's head cartilage marinated in sake lees, from Karatsu City, Saga Prefecture, are delicious and make the sake go down a treat.
Can you see the Chateraise mark at the bottom of the label? Chateraise has two types of sake, each priced at 1,980 yen, and I bought both. I will post the other bottle soon.

I drank a cup of sake at a cherry blossom viewing party.
The top aroma is that of a dark junmai sake. When you drink it, you get the image of a slightly dry sake, and it is very smooth and crisp. The sweetness of the rice can also be felt a little. The fragrance is also a dark junmai aroma. It is good both on its own and during meals. It goes well with darker snacks such as fried bean curd, yakisoba, and takoyaki (octopus dumplings). It is perfect for hanami sake.

The aroma of melon is gorgeous. But it is not sweet and has a nice sharpness. My favorite type.
I bought it when I visited Hakuba the other day.
It seems to be a collaboration between a ski resort and a sake brewery. It is made from rice called Yamae-Nishiki, planted at the new moon and harvested at the full moon!
Nagano sake is getting better and better, and I'm glad!
