The sake I chose was Shimantugawa sake, which I have not had for a long time. It has a gentle The sweetness and crisp, clean taste It is the best match for sashimi. It is not flashy but it is an excellent sake that goes well with meals. It is an excellent sake.

This brewery was closed in April this year due to the effects of Corona and other factors. It is said that there is no reopening schedule, so it is practically closed. The official site has disappeared, and it looks like the company has been sold. It would be nice if the company that bought it would let it reopen... Toyosaka -Toyosaka-. This is the first Toyosaka Echigo Den'emon we have had in a year, and it is made with Ginbukiyo (a cross between Yamadanishiki and Tamakoe). Here are the specs for the soft-water Yamahai Yamahai Tank Shiboribori Nama-nazake. It has a grape-like heady aroma and a fresh, rich, apple-like sweetness with a slight dustiness. The astringency of the aftertaste is still present, although it is a bit more subdued than Den-emon's, and it has a perfect balance of freshness and enjoyment during meals!

I ate okonomiyaki, went to an izakaya (Japanese style bar), and at the end, I got the last of a bottle of sake that the owner recommended 😊I got the last of a bottle as a courtesy 😋. It's like a summer sake with a refreshing taste 😚 and a crisp aftertaste 😋. It went well with oysters, small sardines, conger eels and other specialties. ❤️ I'm going to work hard tomorrow and then go back to the liquor store 🥳.

Today I am Beian Daikoku Anniversary😇. This sake is a project with Hata Sake Shop and the sake brewery 😀. I saw the brewery's installment and even though I didn't know which brewer's sake it was, I pre-ordered it 🤣. Rafa papa has already written about the detailed taste, so I'll skip it, but anyway, it was a very round sake with no curd at all😇. I guess when you let it sit in the snow slowly, it becomes such a round and beautiful sake😇. It was delicious 😀.

I've been curious about this for a while, but this is my first time in Beian Daikoku. The rice is Hitogokochi, though it is not written on the label. Juicy sweet flavor. I stopped by the brewery for the first time in a while. I used to have a special fire-brewed junmai and a sake called "Mariko no shu" which is named after the female toji (master brewer?). Both were quite dry, classical sake. Both were quite dry classical sake, and I had the impression, for better or worse, that this is what local sake is supposed to be like. This was probably my first nigori sake, but it looked delicious, so I bought some! I wondered if the beautiful woman at the sales counter was Mariko herself? It has a classical aroma with a banana feel. It is more of a hint than a standing aroma. It has a classical taste and is dry, but you can drink it by itself if you want! It is very easy to drink because it has a lot of turbidity, which gives it a strong umami flavor and makes it easy to taste the sweetness. I drank it with kimchi nabe (kimchi stew), and I think it goes well with strong flavors and nabe dishes! It also seems to go well with meat, and I am sure it would go well with ginger-grilled pork or chicken steak. I imagine it is like Kikuhime nigori or Tamagawa nigori! To be honest, I think it's one of the best in the Koshu Plum Grove, so I'd be happy to buy a bottle and drink it slowly. It can probably be stored at room temperature until early spring.
