Comparison of nigori sake (Wakayama's favorite nigori sake) Following Minakata, Chokyu ✌️ This is the fire-brewed version of the nigori sake we drank in February. I buy every bottle of Chokyu I see that I have never had before 😆. The first thing that surprised me when I drank it was that there was no fizziness at all 😲. The aroma is somewhat almond-like, and it's cloudy with a lot of orioles, so it's like diluted almond milk. But it also has a sourness to it, so I felt a bit unbalanced 🤔. I prefer nigori sake with a fizzy taste 😄.

It has a slight viscosity and seems to be quite sweet, but the bitterness soon develops. It then fades away leaving a complex umami taste. At 17 degrees alkalinity, the flavor is thick and robust from the first sip 👊. This Daiginjo is made from Yamada-Nishiki polished to 40%. We enjoyed this clear yet rich umami sake 😋.
