Slight muscat and melon-like overtones
The same mild aroma as the first rise, with the aroma of rice malt, the soft umami of rice and sweetness spreads with a rather firm bitterness, and it quickly finishes with the lingering umami of rice.
It is fresh and tasty with a good amount of sweetness for its sake strength, but the slight bitterness tightens it up.
It goes well with meals and is also delicious on its own.
This is one of the bottles I harvested in Chitose on the way to work.

It went well with sagari with sundiner sauce, squid ring salad, and stew.
I purchased this sake at my favorite liquor store at the end of last month. I was told that this sake is brewed only by the young brewer of the "Tenmei" brewery.
It is a delicious sake with a perfect balance of sweetness and acidity, as if it is new sake, and the final taste is so smooth that you find yourself drinking more and more sake.

Before going back to my parents' house, I stopped by for some ogara-mi. Tenmei from the same brewery is a little more acidic and this one is a little less.
I took it home because I was in the mood for a lifetime of youth ‼️ today.
As with the tasting, the freshness of the new sake and the sweetness from the acidity were well balanced. It has a different flavor from Tenmei and is delicious 😋.

It's a special junmai that is usually hi-ire (hi-ire), but this is the 10th anniversary of its release, and it was released as orikarami.
New sake is good after all.
