This is the first bottle of Akita Shun Ginjo. I've never met this brewery before, but it's a good omen❗. The second day, the aroma of the nama-moto has receded into the background, and the taste becomes light and clean, but the nama-moto structure gives it a moderate depth, as if it is producing the flavor from a step back. This sake has become my 💓.

Tonight, our first series of this brand from Oshu City, Iwate Prefecture. Okuroku Junmai Ginjo-shu Namahashime Unite 2023BY✨. The aroma is a mild, almost odorless barb 🌿 The taste has a pleasant acidity and sweetness on the attack, with a nice, nourishing umami flavor. The second half is quite sharp with a pungent alcohol taste lingering in the back of the throat. It was very perfect as a food wine 😋😋😋😋.

Special Junmai🍶Lotus🪷Hitomebore from Hiraizumicho🌾. Souvenir sake from my trip to Iwate-Aomori 😆 Crisp, with a strong acidity like a sake yeast yeast yeast yeast. I bought this at AEON Liquor when I went to AEON Katsuragawa with a friend. I was looking for something unusual for the parking fee 😁. I've had Fudo before, but this is the first time I've had Niiyu. It has a honey-like aroma. The flavor is beautiful and gorgeous, but it's a bit too refreshing for an unfiltered, unpasteurized sake. I would like a little more umami... I think it has a lot of rice flavor 🤔.

Good evening, first series here 💁 from Niiyu. Also known as Fudo Toi brand, this is a test brew of Niiyu's frog series 🐸🐸🐸🐸🐸 Rice is undisclosed🍶. As usual, from the aroma, there is a slight melon ginjo aroma, and the taste is like drinking sweet, fresh melon juice 🍈 There is not much acidity or fizz, so it has a fruit juice feel. The second half is delicious with a solid volume from the alcohol 😋.

A gift from Sawanoizumi The Jun Dai I drank before was a Miyagi sake, beautifully light and dry, and I felt (selfishly) the earnestness of the toji (master brewer). I had an image of a modest, but firm, light, dry Kura. And then there is this special pure Sawanoizumi. It does not have much of a topping aroma, but the mouthfeel is surprisingly sweet and umami! It is sweet to the level of the Hitakami, and the robust umami is also very tasty! It has a light acidity and bitterness, followed by a refreshing sharpness. It's good! This is good!
