I don't know if it's because my expectations were raised by the last Kinmon Nishiki... Anyway, the smell of cemedine was noticeable. It took about 2 weeks after opening the bottle for the smell to settle in, but it was there until the end. I was a little disappointed because I couldn't feel much of the Omachi character.

Compared with Jyushiyo. Compared to the thicker Jyushiyo, it has a more refreshing mouthfeel and a noticeably acidic taste. Thanks to this, we did not get tired of drinking it.

I opened the bottle on my birthday, not ready to drink it for more than 6 months. It is rich and sweet. It is the type of sake that is drunk slowly and with a lot of energy. I wonder when I can drink it again.

Forgot to post. My first summer junmai ginjo. I'm not a fan of summer sake in general, but the clarity and lack of miscellaneous flavors is one of the quintessential qualities.

We were fortunate to be able to welcome you for the first time! Slightly sticky texture and fruity sweetness. The taste is beyond my expectations and I can't help but grin. The alu aftertaste is not bad at all. It's a bottle but it will kill you in a blink of an eye 😁.

Oh, no! I forgot to take a picture! It was a comparison with Shinshu Kamerei. Kangiku has a distinct sweetness, while Shinshu Kamerei has a good balance. The juiciness of KANGIKU is more favorable to this one! It is hard to say which is better. If you think about the ease of procurement, Kangiku is amazing!

Memorandum. The nama-shu was very tasty, but the hi-ire sake is not inferior at all. It is sweet and tasty with a gorgeous acidity. I was happy to compare it with Kangiku Seikai. Both are expressed as "sweet, umami, and acidic," but I was impressed by how different they were. Shinshu Kamerei has the better balance of taste!

I can't buy the phantom dance but I was able to get this one. What's the difference between Genshimai and the one that is not 🤔 I tried drinking it to see if it would give me a clue, but it doesn't seem to be helpful at all. Almost as smooth as doburoku😁drinking yogurt. The sweetness of the rice stands out and the taste is very strong. I think it would be good with soda or something. It tasted very strong for 2 days after opening the bottle, and then it settled down on the 3rd day. It is delicious 😋.

I forgot to make a reservation, but I went to my usual restaurant to see if I could get a bite, and they managed to keep it: ✌️ It's been a long time since I've tasted Kangiku and Yumachi! This is my first time to try TRUE, but it still has the usual Kangiku-like sweetness and gasiness, as well as the tropical and thick flavor of Yumachi. It's the first time for me to try TRUE, but I can't help but smile with a sense of security and nostalgia as it shows 100% of its potential right from the first sip 😁.

It is Gagakuyo and Tama Hibiki with UTAGE specifications. Hiyori was clear and clean drinking. As soon as it enters the mouth, it has a juicy sweetness with a strong sense of gas and an overwhelming sense of grapefruit. The acidity gradually seeps in from the mid-palate, and the long finish is capped off by a slight bitterness. It's so good! This is one of the best 3 wines of this year! I thought I would prefer Tama Hibiki since it aired on UTAGE, and it was a perfect match!

The taste did not settle down and it was finally finished about a week after the bottle was opened. From the first sip, the acidity, sweetness, umami, and alu-ness were all very assertive. It was not cohesive, so I waited while drinking it little by little and it got better a little before I finished it. Because of the strong flavor, I finished the bottle with a simple salty food like sakiika. It was like a rampaging horse 😁.

Yesterday was my junior's wedding. I brought Gagakuyo to my friend's house for the after-party. It was a great hit with my friend! The sweetness increases as the temperature rises. It has a slight gassy feeling and is very easy to drink with low alcohol content. I finished it in an hour, so I'll drink the other bottle of Tamakyo slowly 😁.

Shinshu Kamerei Yamadanishiki Nama which we could not buy today. It has a sweet-tart acidity and bitterness typical of Shinshu Kamerei, but it has a refreshing sweetness typical of Yamadanishiki. The bitterness becomes more pronounced as the temperature range rises, so I prefer lower tones 🍶.

I will have Junmai Ginjyo Hitogokochi, the No.1 ranked sake I drank last year, unfiltered raw sake! It is juicier than Yamae-Nishiki, with less bitterness, and the acidity tightens the whole thing up in the second half, leaving a clean aftertaste! It's a masterpiece!

Hitogokochi Junmai Ginjo was last year's No. 1, so I put it aside for now and opened a bottle of Yamae Nishiki, which I've never tasted before! I was looking forward to it because I saw some reviewers who ranked it as No. 1. The conclusion...it's so good! The flavor is a bittersweet, gorgeous acidity that tightens up and then slowly seeps into your taste buds. Jungin Hitogokochiki Nama is healing, and this one is spring-like and gorgeous. It is hard to choose one over the other!

The first Kame-no-o and the first Kamonishiki in a long time. It has a soft mouthfeel, with a sweet umami that is typical of Kamo Nishiki. It is not as sweet as Omachi, but the umami is thicker, with a hint of sourness and bitterness, and a faint aftertaste. It is easy to drink.

Miyaizumi nigori sake killed in a blink of an eye. This was the first sake in two years. I read somewhere that they renewed the facilities and made the quality of sake clearer. When the temperature range is low, it has a hazy mouthfeel like Nono's.... At room temperature, the acidity increases and a sense of unity emerges.... But.... Not this one 😢. The fruity taste was better than before.
