Tonight's sake is a Shiraito Brewer's Nigori sake from the famous Shiraito Shuzo, which I had the pleasure of meeting at the brewery during my trip to Fukuoka in late May. When we visited the brewery, the proprietress and her little son were very attentive to us, and we were very grateful for the free tasting, which they usually don't do 😊 We bought a bottle of one of our favorites, so we're going to open it now 🙌! The rice polishing ratio is not stated, but I think it is more than 70% polished. The aroma has a soft lactic acid nuance that is not typical of sake. The taste is easy to drink with a slight sweetness of rice in the supernatant and umami flavor 😋 It becomes completely cloudy when mixed with a significant amount of lees, but it has a smooth mouthfeel and is more delicious 😋😋😋😋😋.

Tonight, I feel like I've been shvitzing at the gym for two days, but drinking this is a negative rebound, but when it comes to horse mackerel and monkfish sashimi, it's a MUST 🍶. I bought this 💁 at a brewery when I was in Fukuoka. It's Shiraito Sillite 70 ✨. Unlike Tanaka Rokujugo, this sake seems to be distributed within the prefecture, but it is a 100% Yamadanishiki Junmai sake from Itoshima, and when I tasted it, I enjoyed this lowest-purity sake 😋. The sake has a very clear and clean structure, with a hint of sourness from the ginjo aroma of the cucumber, and the rice is sweet and full. The finish is very crisp and very excellent. ☺️ It is best when it returns to room temperature from chilled. ⭕️

I bought it after tasting it at Hankyu Department Store. I've said it many times, but it's called "Takarayama" 😅. I'll say it again and again😅. It has a heavy mouthfeel for a fire-brewed sake, but I wonder if it's a raw sake? I got the impression that it was wrapped in a gentle sweetness from start to finish. It also has a lot of acidity. It tastes better than when I tasted it.

Special Junmai Sake Kura-Nama Sake rice: Hitanishiki produced in Ibaraki Yeast: Hitachi yeast Rice polishing: 55 Alcohol: 16% abv. Purchased at the souvenir shop at Hitachi Station during a business trip to Hitachi. Ibaraki Prefecture has a surprisingly large number of sake breweries. The flavor has a slightly subdued, clean rice aroma. It has a freshness typical of nama-zake, and since it is not so assertive, it seems to go well with anything as a mid-meal drink.

I got a bottle of Senkyu's "Kirifuri" on a business trip to Utsunomiya the other day...fruity aroma, strong acidity and bitterness? It has a fruity aroma, acidity, and a strong bitterness. I think it's a good sake for a meal...I had sardine nigiri and on the second day, I had yakitori as a side dish...I feel this sake is better when the bottle is opened. It has some peculiarities...but...it's delicious!

This is a piece of bread I bought on my way back from a trip to Kirifuri Kogen. I thought it was the perfect name for a souvenir, but I was surprised to find it was made by Senkou 😳. I've been storing it at room temperature for a while now because it's been heat-treated. But I thought it would be better to drink it cold, so I put it in the fridge and drank it. The best thing about this product is that it has the gas and acidity that I like, even if it has been heated.

Tonight, our first series of impactful jackets here 💁. It's Taxi Driver🚕🚕🚕🚕. It was shipped from the brewery in April this year, but what a H30BY (R0BY) and it's a 5 year aged sake 😆. The aroma of old sake, which also smells like Shaoxing wine, is in full swing from the moment the bottle is opened 🤣. It was served cold, but it is easy to drink because of its acidity. It would be good to drink it warmed up in the fall. ☺️ I wonder if it would go well with Chinese food since it has a Shaoxing sake-like flavor, and I'm going to research how to drink it based on other sakewa reviewers 💪. But it's a very intoxicating drink so I'll stop after one cup 😓.

There is a miscellaneous taste (my personal feeling) like the Yamahai brewing style with low rice polishing, but it is a moderate level, so I feel it is unique. I have always been curious about this sake. First, let's take a sip. Smells more like candy than fruit. Banana cake, lychee, yogurt, freshly baked pound cake, very ripe peaches. No sign of activity. Concentrated! Concentrated syrup. Tart on the tongue with a good sweetness, ripe fruit like pears, green apples, and some alcohol as when the fruit is quite ripe. Finishes with bitterness, acidity and sweetness and has a long finish. Good and amazing. Power. It's drinkable with a splash. Shake a few times to mix and drink. Rice, milky smell. The rice flavor, sweetness, and sourness of the rice spread out in a flash, and the doburoku, or doburoku, has a fruitiness that surrounds the main rice flavor, and the bitterness comes in and gives it a nice sharpness. The rice is almost completely melted, so it is smooth and refreshing. Delicious! A few days later, after shaking and mixing, it did not separate even after a few hours. The alcohol feeling gradually faded away, and when I drank it, I could feel the strong rice flavor spreading out, sweet and mellow, like a dessert. A delicious drink.

There are several alcoholic beverages that have been neglected for almost a year since I bought them, and this is one of them. Let's open the bottle to see what it tastes like! It's so easy to drink! Doburoku is generally considered to be a rather difficult liquor to drink because of its strong acidity and various other strong habits. But what is this doburoku! It's not so sweet or sour, just enough to give a gentle taste of the ingredients, and it's easy to drink! For those who like that habit, it may be quite insufficient. However, I like it this much better now. Other doburoku seems to take a little more getting used to. The rice mash is not that strong and has a mouthfeel similar to muddy sake. If I am wrong, it may even be easier to drink than the more habitual muddy sake... lol. Combined with the PET bottle container, it felt like Koiwai apple juice. Are my nose and tongue going crazy? I can feel the apple feeling somewhere. The packaging is probably a parody of the classic movie Leon. I found a funny one on Twitter, so I'll post it here.
