At Ya-Ya in Kobe. This is the first time to drink Neko Masamune since it was transferred from the defunct Omi Sake Brewery to Maihime🐱. It has a sweet taste with a slight graininess from the freshness. It tastes a little messy, but it's not that bad, right? Might prefer it to Omi Neko Masamune 🤔. It's quite fruity and has a pungent and alu taste, but maybe it's good? It's sweeter the longer it's been open.

Good evening! 😀 It's June and the weather is like a cold rainy season, so I don't know what to wear 😅. Tomorrow, it's going to be 2 degrees lower than today. I wonder if the weather will continue to be so bad 😱. The general meeting at the end of last month was held at a local grand hotel, and the sake used was Nanafukujin Junmai from the Kiku no Tsukasa Sake Brewery. The sake used was Nanafukujin Junmai by Kikunoji Sake Brewery. It is not sticky-sweet, but rather light and easy to drink. If the sake is not made with the same level of care and attention as the all-you-can-drink sake, more and more people will leave the sake industry, and short-term tricks will not be effective these days. Next was the Ryusen Yaezakura Junmai Sake Takumi no Omachi. Compared to the Yamada-Nishiki we drank earlier, the taste is a little more robust. The aroma is almost imperceptible, but the sweetness and umami of the flavor is stronger than that of Yamadanishiki. I was full of anticipation, wondering what this sake, which won first place in the Governor's Award, would taste like! This is a unit work of three breweries in Joetsu: Katafune (Takeda Sake Brewery), Koshiji-no-Kenbai (Kubiki Shuzo), and Chiyonomitsu (Chiyonomitsu Sake Brewery). Kura-kept yeast, fresh yeast, and shibari. The proprietor introduced that there is a new trial in Niigata as well. Delicious! It starts with a light sweetness, followed by acidity and a sharp bitterness. This complexity is good. I couldn't take my eyes off of the sake from Joetsu. There is a recommendation from Takeda Shuzo on the back label, which is also interesting.

Usuberini-san for the previous year, which was ordered by mail order after other stores started carrying 06BY. Although the aroma has some sake-like characteristics, it has a mellow mouthfeel, acidity, fruity, slightly sweet and umami, and a deep flavor that is a whole lot. It has a very strong throat feeling. The taste may be different when it is freshly made. I would like to visit Kimura Sake Brewery in Higashinari-ku someday. I missed out on buying it at the Niigata Sake-no-jin OSAKA, and there are not many mail-order stores that carry it, so I ordered it because the one I had registered as my favorite was running low.

I ordered some alcohol to thank friends and acquaintances, but bought some for myself to dilute the shipping costs. First up was a Junmai sake from Koshiji-no-Kenbai. The label made it look really delicious. The day I opened the bottle, it was slightly fizzy and aromatic with a very fine taste. Like a sweet champagne. On the second day, it calmed down and tasted a bit better than the sake I usually drink. I enjoyed it at a level that was a little tastier than the sake I usually drink. (richer than the usual sake grade).

Are you a member of the Shuunin? Shu-in opening! The aroma is clean 🍎. Personally, I don't feel much sweetness, but a nice clean acidity and a bitter taste at the end 😋. It is said to be very polished, but the specs are not disclosed in case you are interested! 1500 yen is cheap for a pure large class👍.

The sake has been dry for a while, but let's have a sake with a very dry sake degree of +20 🎵Nagaragawa is basically dry 🤔Oh, it's spicy! Nagara River booth. It is not sold outside of the prefecture, so I guess it is a rare brewery to see in the Kansai region. I was a bit intimidated by the dryness of the sake, but when I tried it, I found it wasn't too hot. I think they were all refreshing.

Purchased at Okadaya, Nagoya Sake Rice used is Hidahomare. It is a so-called summer sake, and is said to be aged for one year. It does not have a matured feel and has a mild mouthfeel. Purchased at the Takashimaya Sake Festival. The one that impressed me the most after tasting several kinds of Kunihiki. It is sweet and fruity. It has a sourness like citrus. It is low in alcohol but very drinkable. However, I personally don't like the top flavor. I can't explain it well, but it smells sweet? I can't explain it well, but it smells like a sweet smell. After drinking it, it tastes fine, but I don't like the aroma when I put it close to my nose. It's difficult to describe... It might be quite tasty with meat as it says on the back 🤔.

A gift from Sawanoizumi The Jun Dai I drank before was a Miyagi sake, beautifully light and dry, and I felt (selfishly) the earnestness of the toji (master brewer). I had an image of a modest, but firm, light, dry Kura. And then there is this special pure Sawanoizumi. It does not have much of a topping aroma, but the mouthfeel is surprisingly sweet and umami! It is sweet to the level of the Hitakami, and the robust umami is also very tasty! It has a light acidity and bitterness, followed by a refreshing sharpness. It's good! This is good! The price is relatively cheap, about 1300 yen for a four-pack, but it is convincing enough! Ishikoshi Brewery. I underestimated you. Sorry about that. Sake is so interesting because there are new discoveries even at the foot of the table like this! Thank you very much!

Honjozo 🍶 fresh stored sake✨ A good, albeit alsodense, taste. Dry aftertaste. Slightly bitter. Mild when paired with salmon. ☺️ Sweetness when paired with sea bream. It's delicious. Yesterday was the first youth baseball coaches meeting in two weeks. A big senior coach bought us some sake from Tokushima, so we had it 🙇️. My first Tokushima sake ️️! It's a dry taste, but you can feel the sweetness too👍. It's well balanced and perfect for a midday drink😍. My senior coach lives in Shikoku for work now and can't come back every week but I asked him to bring me some good sake from Shikoku🤣.

The second bottle of Hohsui Shuzo purchased at the Hankyu Brewer's Festival was a hiyaoroshi 🐰✨ with a 60% polishing ratio of Bizen Omachi rice. It has a mellow mouthfeel and a full flavor that is typical of Omachi rice, and is delicious!
