This is a unit work of three breweries in Joetsu: Katafune (Takeda Sake Brewery), Koshiji-no-Kenbai (Kubiki Shuzo), and Chiyonomitsu (Chiyonomitsu Sake Brewery). Kura-kept yeast, fresh yeast, and shibari. The proprietor introduced that there is a new trial in Niigata as well. Delicious! It starts with a light sweetness, followed by acidity and a sharp bitterness. This complexity is good. I couldn't take my eyes off of the sake from Joetsu. There is a recommendation from Takeda Shuzo on the back label, which is also interesting.

This Sake is very interesting. It has a citrus flavor like grapefruit. The flavor really cleanses the pallet.
Junmai nama-shu YAMADANISHIKI 90 Rice polishing ratio 90%❗️ This is the challenge sake of Michiko Urasato, the female toji of Yui. Yamada Nishiki is brewed at 90% polishing ratio without polishing. The taste of the rice is rich and intense❗️, but there is a light fizzy feeling. There is also a little bit of orage mixed in. This is why it is milder and softer in the mouth than I expected. The aftertaste is refreshing. It's amazing. Michiko Urasato, Toji 💡. I had it with ginger yaki, and it was delicious. The sake and side dishes go well together😆. I've heard that if you let it sit for a few days, you'll get a different taste of the rice, so I stopped at halfway today. I heard it's also good at different temperatures.

The general meeting at the end of last month was held at a local grand hotel, and the sake used was Nanafukujin Junmai from the Kiku no Tsukasa Sake Brewery. The sake used was Nanafukujin Junmai by Kikunoji Sake Brewery. It is not sticky-sweet, but rather light and easy to drink. If the sake is not made with the same level of care and attention as the all-you-can-drink sake, more and more people will leave the sake industry, and short-term tricks will not be effective these days. Preferred ★★☆☆☆☆☆☆ Third drink of the event. (Right side of the photo) Challenging the ultra-harsh taste of the Kiku no Tsukasa Sake Brewery 1 in pursuit of sharpness. The sake degree is 12 degrees. I was suddenly intrigued by the story of an old man who was drinking nearby, so I decided to give it a try. This is the kind of encounter that makes an event attractive. I had imagined it to be dry and sharp, so I was surprised by its mild taste. I was surprised at the mildly mellow mouthfeel. It betrayed my expectations in a good way, and I think I am going to be addicted to the dry swamp. It has a soft umami of rice, which my husband especially liked. The reasonable price is also great. It would go well with sashimi.

Three of my high school classmates and I sometimes have a drink at Noge in Yokohama. This is an extra edition of that. So, 7 of my classmates and I went to Enoshima for a drink. The first thing we did was to compare the two types of shirasu, which is the reason we went to Enoshima in the first place. Which is better, fresh shirasu or kama-age shirasu? Opinions were divided, and my classmate, who favored raw shirasu, went to a restaurant that he said had the best raw shirasu in Enoshima (but let's not talk about the shirasu). (But let's not talk about the shirasu.) (But let's not talk about the salmon.) We drank Nanafukujin. The sake was from Iwate, which was purchased as part of Tohoku's earthquake recovery efforts, and it seems to have stuck with them. First time drinking it. A little sweet, but refreshing. Easy to drink sake Quite tasty 😋. I drank some other sake, but no pictures! (Last photo: Enoshima Beer) After this, we went sightseeing in Enoshima, one more seafood restaurant, and then had food from the kitchen car on the terrace, and finished up with Italian food! At Ya-Ya in Kobe. This is the first time to drink Neko Masamune since it was transferred from the defunct Omi Sake Brewery to Maihime🐱. It has a sweet taste with a slight graininess from the freshness. It tastes a little messy, but it's not that bad, right? Might prefer it to Omi Neko Masamune 🤔. It's quite fruity and has a pungent and alu taste, but maybe it's good? It's sweeter the longer it's been open.

Today, the temperature is such that you can wear short sleeves. It was so warm that I thought I could wear short sleeves. We were going to have oden for dinner, but it didn't turn out that way. Purchased at the Takashimaya Sake Festival. The one that impressed me the most after tasting several kinds of Kunihiki. It is sweet and fruity. It has a sourness like citrus. It is low in alcohol but very drinkable. However, I personally don't like the top flavor. I can't explain it well, but it smells sweet? I can't explain it well, but it smells like a sweet smell. After drinking it, it tastes fine, but I don't like the aroma when I put it close to my nose. It's difficult to describe... It might be quite tasty with meat as it says on the back 🤔.

Faint golden color with a grain aroma. Bitter, astringent, and acidic tastes overlap each other. If you expect the fruity and sweetness of a typical Junmai Daiginjo, you are way off. I drank it cold, but I might try warming it up. The Nishijin textile label is cool❗️.

I bought this alcohol as a tie-in to the No.6 x type direct pass 🍶. It wasn't exactly the sake I wanted, so the bar was low, but I was surprised when I tried it: ‼️ It is one of the best tasting sakes I have ever had👍. Fruity aroma typical of daiginjo 🍌. It has a good umami taste, a nice acidity, and no bitterness 😀. I'm glad I found a good sake that I like (^...^)

I'm not privy to the specs, but I hear it's less than 30 per cent polished 🤩. But it's good and cosy 👍I heard they don't use much sake rice though. It's usually sweet, tasty, bitter and well-balanced 😋. Yamagata sake is as high as ever👍

Are you a member of the Shuunin? Shu-in opening! The aroma is clean 🍎. Personally, I don't feel much sweetness, but a nice clean acidity and a bitter taste at the end 😋. It is said to be very polished, but the specs are not disclosed in case you are interested! 1500 yen is cheap for a pure large class👍.

the rice is falling like a snowstorm Sweet like an apple. The taste is round, sweet, and beautiful. There is a bit of bitterness towards the end, but it is delicious. It is not that sweet, but the lingering taste in the mouth and nose is quite fruity. A little bit of pineapple. I would like to try a variety of Toirai, but Fujiidera is a little far away from here, so I wish there would be more distributors of Toirai. According to what I heard at the liquor store, they don't seem to be actively trying to increase the number of distributors... On the third day, it seems to have a stronger pineapple taste.
