Tonight is cod nabe! It has albacore in it, so this one goes with it 😄Hirotogawa Junmai Nigori! A definite one! The aroma is melon, banana, light muscat... and rice! When you drink it, it has a moderate sweetness, followed by a slight carbonation! Then the rice-derived umami and moderate acidity! Then the bitterness comes in and finishes it off! The aftertaste is also good. Although it is not dry, it is easy to drink! It goes well with the richness of the milt 😄I opened it right away, thinking that it is really delicious every year!

Yesterday was the last day of work 😊I rewarded myself for a year of work without getting sick! This is my favorite Junmai Hitogokochi from Shinshu Kamerei 😄. The aroma is fruity like apples and peaches. When you drink it, it has sweetness and a slight carbonation! From there, umami, acidity, and bitterness! Each is emphasized and it feels like a new sake! It explodes in your mouth (lol). The aftertaste is just the right amount of sharpness. The second day is also delicious! The balance has been achieved and the umami has increased! The sweetness does not interfere with the meal 😊It really is great as a food sake! Personally, I prefer to drink sake by itself, but this is great as a food sake 😊. In fact, there is a reason why I was able to finally get Kamerei this time and drink it without hesitation... I was a bit moved by it. I'll get to that later (lol).

Today is my brother's birthday! We had a birthday party 😄 so we celebrated with my brother's favorite red samurai! I managed to get my hands on some SNOW Xmas😄! The aroma is apple, citrus and rice! The aroma is apple, citrus, and rice! Then the rice flavor and Akabu's typical sourness! The aftertaste is refreshing. The overall dry impression makes it easy to drink 😄This is the one that kills you in a blink of an eye. I'm glad my brother was satisfied with it! We enjoyed it deliciously.

今日は限定酒を! 蔵王の限定酒。純米吟醸のなかどり。 実は先日加藤登紀子さんが地元に来てコンサートを!父親が参戦してきて、そのお土産でコンサート会場のみで購入出来るものを買ってきてくれた。コンサートは「ほろよいコンサート」とのことで、加藤登紀子さんが実際にお酒を飲みながらコンサートをしたそう。その中で飲んだのがこのお酒😄 香りはリンゴのような感じで普段の蔵王よりは上品な感じのフルーティーさ。飲むと甘みと酸味と旨味のバランスが最高!とても綺麗なお酒で雑味がない。こういうお酒も蔵王造れるんだと再認識😄美味いな。ちなみにこれを飲んだ加藤登紀子さんは「美味い。これは度数が強いからチェイサーも!」と言っていたそう!

Yesterday was Christmas Eve😄 With the perfect sake! Yoshida Kurau😄I've had Yoshida Kurau's Kijoshu before, but this sake is made by fermenting it again (^o^) It's sparkling, so I had high expectations! The aroma is apple-like and muscat-like. When you drink it, the sweetness is not so strong and the carbonation hits you strongly, then comes the sourness and bitterness, and from there you get the umami taste and it goes from there. The label said it had a complex flavor, but I felt more sourness and bitterness than usual, but the carbonation kept me from feeling that. Made for a nice Christmas sake ✨.

It was so cold today😅! I had saved some sake for this kind of occasion! I had been saving this sake for a day like this 😄I bought this sake from one of the various stores that had come to Ishikawa Prefecture to support the recovery efforts! It seems to be sold at a roadside station. The rice is 100% Ishikawa Koshihikari 😄I was expecting it to be delicious heated up! First, I had it cold. The aroma is mild and banana-like. The aroma is mild and banana-like, with a very beautiful image! In the mouth, there is a slight sweetness and a bit of umami, and then it finishes clean and crisp. As the aroma suggests, it is a really beautiful sake 🍶 and it is easy to drink! Then it was served hot! The color changes, The sweetness and umami increased and it was delicious!

I drank this one last year and enjoyed it! My favorite freshly squeezed Tedorigawa 😄. The aroma is like apples and bananas! The freshness is irresistible! Today I received! My first Chikosei's Koshimine! A minor but good sake from Nihonmatsu, Fukushima Prefecture! It is famous for Fukuro-hozuri! It is made in a way that it is presented at the sake competition! The aroma is mild rather than fruity, with hints of brown sugar and a little smokiness. The taste is dry with a mild sweetness. It has a good umami flavor and a nice sharpness. A delicious sake! A bit of bitterness is a characteristic or a concern, but... it is suitable for a medium-bodied sake. It seems to go well with dishes with strong flavors.

Today is the first time in a long time that I have been to Amami! Maybe it's the first time since Mr. Toji left... The aroma is muscat, which is typical of Amami. Today is not a special day, but here it is (lol)! I was wondering when I should drink it, but this time I got it myself for the first time in a long time, so I opened it! The aroma is fruity like Kamerei-raishi-apple! When you drink it, the sweetness is not so pronounced, but you can feel the gasiness. The taste is delicious, and the acidity and moderate bitterness come in and finish off nicely. It is delicious without being too sweet! It has a freshness that makes it hard to believe it was fire-aged. I know it will become smoother after the second day, so I'm looking forward to it (laughs)!

Continuing from the last issue, we have Sentori 😄! This is a snowman I bought at Yodogawa Sake Brewery in Utsunomiya when I attended the Tochigi Kenmin Kai! This is my first time at Yodogawa. I was really excited when I entered my first liquor store (lol). The snowman is made using the traditional sake yeast yeast yeast! The aroma is mild and pear-like! The aroma is mild and pear-like 😄 The sweetness is restrained and there is a good amount of sourness and bitterness! It's dry 😄After mixing in the oli, the flavor and mellowness are added ✨This is delicious! I think it's mellower than the snowballs I've had so far. The acidity is also nice and moderate. I paired the snowball with oysters 🦪I often read in reviews that the milky flavor and snowball go well together, so I paired it with oysters baked in butter! The flavor of the oysters and snowballs go well together 😄The snowballs don't seem to interfere with the meal in the first place, so they seem to go with everything. It was very tasty. I wonder if it tastes even better because I bought it in Utsunomiya (lol) Tochigi love 🥰.

I've been anticipating this one ever since it was announced that it would be released today! I've been looking forward to this one ever since I saw the reviews of Senkyoku's CLASSIC Zero😄. My brother was just here, and I thought he would definitely like this one! The aroma is banana, peach and muscat from the lactic acid aroma. The aroma is not that fruity, but complex! The taste is mildly sweet with a slight carbonation. The taste is mild sweetness from the slight carbonation, then sourness and bitterness (^o^), and a good sharpness! As the temperature approaches room temperature, you can taste the umami, which is more like a sake yeast yeast yeast. This is a renewal of Sengoku based on the concept of "Edo katari"! The taste is modern and not heavy. The technique to make such a beautiful sake with a sake yeast yeast yeast is a masterpiece! It is really good! Of course, my brother was happy to drink it. (Laughs) I'm also interested in the fire-aged version, retro and modern versions.

Here's one for today! This is another award-winning celebratory gift from my workplace😄It's my first Bandaiyuho Daiginjo! It won a gold medal at the 2024 National New Sake Competition😄I don't usually buy such good sake (lol). It has been a while since I have had an award-winning sake. The aroma is mellow and gorgeous, like apples! When you drink it, it has a gentle mouthfeel with umami and a hint of bitterness. The aftertaste has a sharpness that is not typical of Yamada-Nishiki. It is a really beautiful sake with no cloying taste at all. This is indeed a gold medal-winning sake. It is really easy to drink and delicious! I knew that award-winning sake is different from other sake. I can see why it is so expensive.

Tenmei Nakadori Zero, highly rated in reviews for its delicious taste! The aroma is grapefruit and pineapple! When you drink it, it has a moderate sweetness and umami. The bitterness comes just right and has a nice sharp taste. The umami and bitterness are more pronounced when mixed with ori. You can enjoy orikara-mi twice by mixing with ori (^o^)! I tried it with the meat that Manachie reviewed and it went well with it! The bitterness of the sake is good with the ingredients!

My favorite Oyomori! Another limited edition sake! Meister Blend. The toji blended various TAIYOMORI sakes and selected the best one. The aroma is mild, with a hint of citrus like apples. The sweetness is restrained and the aftertaste is clean with a slight bitterness from the umami! It is drier than the hiyaoroshi from the other day. It is drier than the last hiyaoroshi, but still has a roundness to it. It is hard to believe that this is a blended sake. A truly delicious sake. It seems to go well with any ingredients!

Today I stopped by a liquor store for a purpose and found a small bottle of Yokoyama-san's 😄! I had been wanting to try it, so I bought it immediately! It was my first time to buy from Yokoyama, and I was very excited. Well, the aroma is fruity and mainly muscat. The aroma is typical of junmai ginjo! The aroma is not as sweet as one might expect. The bitterness and umami come from there, but the aftertaste is clean and not harsh! Easy to drink! It can be drunk before or after a meal. It is delicious!

Tochigi Prefectural Association Sake 4 This was the last of the Hanzo sake we received! Normally I would be too drunk to remember the taste, but this one was clear! It was so delicious! The aroma is mild and not showy, even though it's a nama-shu. The sweetness, umami, bitterness, and aftertaste 😄It was very well-balanced and delicious, probably due to the good temperature range. I would like to try it on its own!

Tochigi Prefectural Association Sake 3 Next was Kawanakajima Genmai, which Tsubu-chan brought! The aroma was fresh but moderate. When you drink it, it has a good balance of sweetness, umami, acidity, and bitterness, and the sharpness is exquisite! This goes well with any food coloring 😊 Delicious!

Tochigi Prefectural Association Sake 2 Next, we had Toyobai. This is also a Tohoku sake! It has been a long time since I have had Toyobai. It has a calmer taste than the previous Hakurakusei, and can be drunk in a relaxed manner. It also has a great umami flavor and is perfect for a potluck dinner!

I will be attending the Tochigi Prefectural Association on November 9. Thank you for inviting me! It already feels like home. As usual, I was late getting started because I went after work. When I arrived, I was welcomed by everyone! We started with Hakurakusei! I am grateful to be in Tochigi and to have a local Miyagi sake. The aroma was fresh and the taste had a moderate sweetness with a good umami and acidity. This, this, this! Well balanced and delicious. Great first sake 😊.
