It has a high alcohol content of 19 degrees! Well, the taste... the aroma is of apples and alcohol! When you drink it, the sweetness gives way to a smooth taste, followed by bitterness, and then the unique chiri-chiri-ness of the arosoke! From there, it quickly becomes sharp and clean. It's good to feel the heat in the throat! It is delicious, but the alcohol content is also high, so drink it in moderation 😄.

I often drink Shiboritate during this time of the year, and it is usually a raw sake with an alcohol content of 17 degrees or higher, which gives it a strong, robust flavor.
However, it is delicious with just the right amount of lightness in the middle due to just the right amount of slight bubbles. While it has a good sharpness, it has the potential not to tire one's palate. It also has a crispness due to the acidity, not just the alcohol, while still having a strong umami flavor, making it easy to keep drinking.
To be honest, this is the best Niigata Shiboritate of the season.
Serve with teriyaki chicken thigh and sashimi.
