Overnight trip by car to Murakami City, Niigata Prefecture After enjoying salmon dishes at Izutsuya Kikkawa, I dropped by Tamura Sake Shop and bought a variety of items, and the owner recommended this one. Hirata Shu, the toji (master brewer) of Taiyo Shuzo, tasted 10 different kinds of sake, from 60% polished junmai ginjo to 40% polished junmai daiginjo, and blended them to perfection. After receiving the explanation, we purchased the bottle. The aroma was not so strong. Slightly sweet, slightly sour Slightly sweet, slightly sour, slightly bitter. I felt that it was a combination of the best of both worlds.

Yamagata-Niigata bullet trip! After getting excited at the sake shop, we went to one of our next destinations, Taiyozakari. I like the sake here and drink it often😄. The streets nearby have a retro appearance. The nearby streets have a retro appearance. I couldn't visit the sake brewery, but I visited the Wasuikura, where you can see the history and old sake bottles. Since I was the only one there, I was happy to hear about the history of the brewery from a person who is actually involved in the brewing of sake 😄. After that, I went to a nearby liquor store because the sake I was looking for was only sold at liquor stores. There, we went to a nearby liquor store, which was a heaven for Oyomori and Shimebari Tsuru (aka "Shimebari Tsuru Heaven")! I was so excited. Here is what I bought! It's the Shikumo no Aki-agari, which is only available in Murakami! I immediately tried it. The aroma is faintly apple. It also has a hint of rice. When you drink it, it is very refreshing and goes in smoothly. It has the umami that is typical of the autumn flavor, but not too much, and it finishes with a slight bitterness. It is easy to drink. It goes well with Murakami's specialty, salmon and sakekasu jerky. It was a sake that I really liked. Next up...

Today we are having a Daiyozakari Autumn Aged Sake! We get the umakuchi sake 😊The rice happens to be Gohyakumangoku, so we are full of happiness to be able to compare it with Ona. The aroma is mild banana and rice. The aroma is mild banana and rice, with a hint of sourness. When you drink it, you can feel the sweetness from the rice moderately, and then the umami comes and the acidity is a little stronger! The aftertaste has a nice sharpness. The alcohol content is lower than Ona's and the acidity is higher than Ona's. The acidity is more pronounced at room temperature. It has more acidity when it is at room temperature. The umami comes later in a good way. It has the same lightness and low lingering aftertaste that is typical of Gohyakumangoku. It is also common that the second day is more to my liking. It is also very delicious 😄.
