Nothing special today, but here it is! This is the first time for me to visit Imi-sama! My sake-loving friend said to me, "I think this one might be a little old for you..." (^o^) Well, with a sense of anticipation! First of all, the aroma is mild but muscat-like, with a hint of rice and citrus. When you drink it, you can feel the sweetness! Then the umami comes, and the sourness and bitterness are also nice, and the aftertaste is clean and easy to drink due to the effect of this! There is no sweetness. On the second day, the sweetness settles down and it is well-balanced and delicious! I want to drink the others!

It was a while ago! I was in Ibaraki for the Bon Festival😊There were many sake that looked good, including Morishima, but I had to go around the next day... So I bought this Matsumori, which was labeled as dry, and had it! The aroma is like banana and bamboo. The aroma is like banana and bamboo, with a hint of cheese. When you drink it, the sweetness is mild and the bitterness comes with a nice sharp taste. I don't dislike this sharp taste 😊. On the second day, the aroma and overall flavor is more subdued, and it can be drunk quietly! It can also be served as heated sake!

I bought it today because I have been wanting to drink it for a while! Niigata sake Kamizen Nyosui😄It has a slight aroma of banana and rice. When you drink it, it really kicks in like water! A little bit of bitterness remains, but I think this is it 😄It's a different sake from the ones I've been drinking lately (^o^)There are so many different kinds of sake! I heard a talk the other day about diversity, "I agree that there is diversity, but of course it's okay to have likes and dislikes". I thought that diversity means that everyone has to accept it, but it doesn't seem to be the case! Sake is no different! I think I can easily go out with sake if I think that way (^o^).

Well, it's been a while since I posted this! This was given to me by a Sake lover😊I thought a lot about when to drink it because I didn't want to waste it, but I'll take it when I want to drink it! The aroma has a sense of apple and rice, which is typical of Kamerei! The aroma is fruity, but also gentle! When you drink it, the sweetness comes quickly, and then it goes right into the bottle without any alcohol feeling. It is very easy to drink! It is very easy to drink! The balance is also good 😊I actually went to see the terraced rice fields last year, so I have an extra sense of familiarity with them, and I think "there is no reason why sake brewed with rice produced in such a place can't be delicious", so this is a really delicious sake (^o^)

Today's sake was given to me by a sake lover 🍶. The aroma is sour citrus with a hint of brown sugar sweetness. The aroma is sour citrus and sweet like brown sugar, with a hint of muscat. First sake in a while due to a medical checkup! I had a training in Aizu the other day and on the way back I went to Gonoi Sake Shop for the first time! The selection of sake was overwhelming! The staff is very friendly and helpful! One of the things I bought there was a bottle of Toyokuni's Sparling! Toyokuni's Sparling! I had a hard time opening the bottle, but managed to do so! It was dry without much sweetness. The acidity comes through with a nice aftertaste. The taste is similar to Hato Masamune's HANABI! It would be perfect with oily food! It's like a summer sake. While I was saying that, the autumn flavor came out in no time... I couldn't keep up with it (laughs).

I drink Hato Masamune's HANABI every year! The aroma is apple and rice! The aroma is of apples and rice! The sweetness and slight bubbles when you drink it! I drink it every year at barbecues and love the way it doesn't lose to the meat (lol).

This time, I had nothing, but I wanted to drink Shinshu Kamerei (lol). I didn't know when to drink it, so I decided to drink it when I wanted to (lol). The aroma was like muscat, which is typical of Kamerei 😊I put it in my mouth thinking "this is it" and felt the sweetness, then came the moderate bitterness, and the umami was also strong, and it ended with a lingering aftertaste! The sweetness was emphasized a little on the first day, but from the second day, it became more mellow and the umami was good! I prefer Kamerei after the second day! You can drink it calmly without feeling any alcohol. I really don't know when I will be able to drink it again since I can't get it anymore... I enjoyed it while chewing on my happiness.

I went on a one-day trip to Yamagata the other day😄and bought a bottle. Yamagata has a lot of good sake, but this was my first time to taste it! The aroma is gentle apple 🍎 The sweetness is moderate, but as you drink it, the umami is also very strong! The sharpness is good, and it is a beautiful sake. It is not too light, but has a good balance of umami and flavor. Delicious!

Today it's my favorite Tetorigawa, crisp and dry! Now the aroma is melon-like, apple-like! It has a subtle hint of melon and apple 😊Then it is slightly carbonated with almost no sweetness. Then comes a moderate sourness and bitterness, and it finishes crisp and clean. It has a moderate aftertaste and is a delicious sake 🍶I want to drink it this time of year! I think this sake goes well with just about anything, but it also goes well with gutty food. I haven't had a dry sake like this in a long time! It's good, but it may be to your liking...

Today is my favorite Kariho 😊 first Rokusyu! Summer Mist Japanese is morning mist! The aroma is banana-like with a hint of lactic acidity. The taste is a little sweet and bitter and easy to drink. The aftertaste is not as smooth as Asagiri, but it finishes nicely! Delicious. The level of Kariho is still high!

Next is the Hikoboshi label (blue one) brewed by Suminoe-san as a leader! The aroma is muscat-like, similar to Katsuyama-san! When you drink it, it has a sweetness, but you don't feel it that much. The flavor afterwards is moderately sweet with a nice acidity and bitterness 😄 Unlike Katsuyama's sake, this one has a more modern aroma, but the taste is dry and you can feel more of a sake sensation. The taste is different from Katsuyama's. I would like to enjoy this one a little more after a few days. I would like to enjoy the change of taste a little after a few days (lol). I could taste the high level of Miyagi again!

Yesterday was Tanabata 🎋 and Tanabata means DATE SEVEN (lol), an annual treat for the residents of Miyagi Prefecture😄This year, Katsuyama and Suminoe were the main brewers and seven breweries in Miyagi worked together to brew this sake! The aroma is sweet and muscat-like. The aroma is sweet and fruity. The sweetness is followed by a strong umami and acidity, and the finish is heavy, as is typical of Yamadanishiki! It is a very beautiful sake with a sense of transparency. This is a modern sake. Delicious 😋.

Today we have a light nigori of our favorite Tetorigawa! Ishikawa-mon sake rice is a very delicate rice that is very hard to make. The aroma is peach and apple, with a touch of lactic acidity. Sake Drinking at Rasai (⑫) Next up was my favorite old sake from Tedorigawa (^o^) I had just studied about mature sake at the recent sake taster brush-up training! I had just learned about mature sake at the sake taster's brush-up training the other day! It is also my favorite Tetorigawa! The aroma is rich, like nuts and dried fruits. From there, the sweetness is firm and the umami flavor permeates the mouth. It also has a long aftertaste. I don't remember if it has a typical Tedorigawa flavor. I heard that sweets go well with this kind of sake, and I thought it would go well with yokan (a type of sweet bean jelly).
