Now for the 501st bottle, today is Risshun (the first day of spring)! So I'll have Ichinokura's Risshun Hatsu Shibori! The owner of the sake shop told me that they changed the bean sprouts this year, so it has a little sourness and umami, but it tastes good with a clean aftertaste.
The aroma is like apple or peach compote. When I drank it, I found a moderate sweetness that gave way to a strong umami, and a dignified sourness that gave way to a moderate bitterness! The aftertaste is refreshing. The aftertaste is refreshing. It has more umami than Ichinokura's usual Risshun Hatsu Shibori. The acidity is very good, and the taste reminds one of spring! It is a perfect match for deep-fried tofu, which gives it a more peachy flavor!
