Zouga from Kinokawa City, Wakayama Prefecture, is a dry nigori-gori that cannot be missed. The fizz is mild, and when you first drink the supernatant portion, it has a so-so sweetness. When mixed, it is a darker nigori-gori, with a dry taste and a fuller, grainier rice flavor. It is easy to drink and before you know it, it is gone.

This is the first brand of Shichikanma from Okuizumo Town, Shimane Prefecture. Shiborishina" means freshly pressed sake, and while the taste has the freshness of a freshly pressed sake, it also has a robust flavor characteristic of Shimane sake. It is not a trendy type of sake, but the acidity and bitterness are well accented and complement the meal.

Benten Musume has a strong image as a hot sake, but it is rare to find a fresh nigori sake, so we ordered this one. It is a dark nigorizake with a lively, shiny flavor. The sweetness is restrained and the koji flavor, typical of Bentenmusume, is strong, and the taste is dry and delicious. It is one of the best nigori sake I have ever tasted. It is the best combination with duck hot pot. I heard that it is recommended to be heated, so I will try it next time.

Takachiyo, which I bought when I went skiing to Yuzawacho as I do every year. This one is an ogara-mi type, limited to Niigata Prefecture. It has a deliciously sweet, yet slightly effervescent taste with a hint of rice flavor. I always get lost in the sake section at Echigo-Yuzawa station, but this one was right up my alley, with just the right amount of sweetness and dryness.

Igarashi from Hanno City, Saitama Prefecture. It seems to be a new sake this year, so fresh that you can feel it chili in your mouth, yet the flavor is well balanced. It is not too sweet and moderately dry, and has a wonderful balance. I think it goes well with a wide range of meals, both Japanese and Western.

Every year at this time of year, Sogen's Shiboritate Nama-no-Honshu has a special flavor. The rich sweetness, the delicious taste of rice, and the unique flavor of Noto sake make it a one-of-a-kind sake. Kuroemon XVI of Kisomura, Nagano Prefecture, has become completely famous after winning the Champion Sake award last year. The brewery was founded in 1650 and is the second oldest in Nagano Prefecture. Today we had a nigori sake, a.k.a. Snow Woman. I opened the bottle with trepidation, but there was no blowout. It is a dark nigori-zake with a moderate effervescence and a strong sweetness from the rice. It has a slight bitterness, but it is easy to drink and more than half of the bottle was gone in no time. It goes well with tomato hot pot.

The three days of the New Year are over in a flash and we are in normal mode. I decided to check in at Sake-no-wa 300 with Kiri-Tsukuba. I enjoyed it the first time I drank it last year, so I decided to repeat it. It is a first pressing of raw sake, fresh, melon-like, and refreshingly sweet. I will continue to seek out new sake encounters this year at a pace of 100 bottles a year.

The first bottle of the year 2024 at my parents' house was Hakkaisan. Although it is a daiginjo, it is not too sweet, and its crisp, light and dry taste is a good match for the festive dishes. Nigori (nigori) sake is still on its way. Today's sake is from Kamikimoto in Sakata City, Yamagata Prefecture. The bubbles are only slightly felt on the tongue. It is fresh and has a strong sweetness. It has a melon-like fruity taste with a dry finish. There is no doubt about it. It is a perfect match with gyoza (dumplings). This nigori sake can only be enjoyed at this time of the year, and it looks like it will continue for a while longer.

Winter is in full swing, and the mornings and evenings are getting even colder. Our first hot sake of the season was Midorikawa from Uonuma City, Niigata Prefecture. It is a regular sake, but surprisingly for the first time, I had the honjozo type, which is designed for hot sake. It is refreshing and has a full flavor of rice. Not too sweet and not too dry, it is the ideal hot sake. We enjoyed it with braised flounder for a luxurious moment.

Last year, I enjoyed drinking Keitora's Shiboritate Nama-zake at this time of the year. This year, too, I was able to get it. The standard Japanese sake from Niigata is light and dry, but this one has the freshness of nama-shu with a rich sweetness and umami flavor. The flavor of koji (malted rice) can also be felt well, and the aftertaste is a lingering zing of a good dryness. It is still a classic sake.

I bought a bottle of Gokotsuru dry type sake at the sake shop in the Aki Building during a business trip to Nagano. This place has a great selection of local sake from Shinshu, and I always find it hard to resist. The label is classic, but the taste is refined and the dryness is moderate and easy to drink. The sweetness and umami are well developed, and although orthodox, the quality of the sake is high.

I had a bottle of Hakusyu from Tedorigawa last year at this time of the year, and it was delicious. The bubbles were quite strong and the bottle was opened carefully. The rice is 100% Ishikawamon, which is not too sweet, but not too sweet, and it is a bittersweet dry type of sake, so it is a dangerous type that can be drunk as much as you want. Koshi from Shakai-cho, Chiba Prefecture, is a popular brand, but this is my first time drinking it. This year's new sake has a subtle, slightly chili-like sensation on the tongue when it hits the palate. It is so refreshing that it is hard to believe that it is made with 80% polished rice, yet it has the sweetness and acidity that are typical of sake. Although it is not a very dry sake, it has just the right amount of dryness in the aftertaste and is a definite repeat customer.

I picked it up for the first time because of its recent popularity and high reputation for nigori (nigori sake). I took my time to open the bottle safely, carefully letting off the gas. It is very lively and shwashy. The sweetness is moderate and refreshing, and the bitterness is just as delicious as its reputation. It went down smoothly, and this is a bad type of sake. The taste is gentle and delicate, as is typical of sake made by a female master brewer.

Kamikimoto of Sakata City, Yamagata Prefecture, uses 100% Tajima-strength sake rice. It has a beautiful junmai ginjo-like flavor, but also has a firm, dark richness, perhaps due to the characteristics of strong rice. It also has a slightly tangy and dry taste, which is my favorite type. I have had several sakes of Kamikigen, and they are all of a high level.

Akizuka is one of our favorite brands. It is rich with a strong umami flavor. It has a strong acidity characteristic of Yamahai, and when you put it in your mouth, you can feel a slight chilliness, which makes it very drinkable. Since it is getting colder, we paired it with a hot pot with motsu-nabe (a type of meat stew) that we ordered from Hakata. It is a great combination.

This year's new sake has come out one after another, but I would like to enjoy some more autumn sake. We had a nice Hiyayogoshi from Hiokizakura, which we enjoyed last year. It has a characteristic acidity typical of San'in region sake, and while it is full of umami, it has a refreshing taste. This year's sake is also very tasty. It goes well with yellowtail sashimi.
