This sake is made by Niigata Meikozo, known for N-888 and Chojamori.
I had it at room temperature, and it was a perfect drink for a meal with a light and dry taste, which is typical of Niigata. 🙆♂️
Two year old liquor from my parents' house.
My parents were going to throw it away, but I held them back and opened the bottle.
See? No problem.
It hasn't deteriorated even though it's been left at room temperature.
The mild mouthfeel is typical of Niigata light-bodied dry wines.
Lightly matured richness and acidity that seems to be transforming.
Heating it up is the right decision.
It has more umami and depth and is delicious even when cooled.
Pairs well with Ibaraki's famous Edosaki pumpkin!
I bought this as a souvenir for myself when I visited Niigata Meikozo for a sake brewery tour. It is somewhat dry and...at first glance, thick...firm for 14 degrees. It has a slightly habitual flavor, is this due to the water? It's beautifully balanced and very tasty! Niigata Meikozo-san has been a great help to us in many ways, from plum wine to shochu to sake.
