Since summer sake has been served for a long time, we sometimes have a classic sake that is more robust. Ryu-ryoku has the image of a classic, royal sake, but this one is a draft sake, so it is surprisingly refreshing. It is made from 100% Yamadanishiki produced in the special A district of Hyogo Prefecture, and the sweetness and umami of the rice have a royal taste.

Summer sake is still on tap. The bright blue label and bottle of Koshino Kagetora made me reach for it. It has a refreshing coolness and a full-blown dryness that comes with a thump. It seems to be a contradiction in terms, but the umami of the rice balances it out perfectly. I also like the unique greenish flavor.

Summer Doburokku by Hachinohe Shuzo, famous for Mutsu Hachisen and Mutsu Otokoyama. The bottle was opened successfully without any blowout. It is very active and strongly effervescent. The nigorigo is thick and the rice flavor can be enjoyed. It is sweet, easy to drink, refreshing, and goes quickly.

Summer sake continues. This is Kitajima's summer sake, Aorashi. As the name suggests, this sake is refreshing and dry, just like Kitajima. It has just the right amount of acidity and is not too light, making it a summer sake that is very drinkable.

Yonetsuru's sparkling nigori, which was delicious last year at this time of year as well. The strong effervescence made me open the bottle carefully. It has a refreshing, shrieking sensation, like a rice cider. It has a mildly sweet and slightly bitter aftertaste. A perfect bottle for an early summer evening.

The weather is pleasant in early summer, and on days like this, I feel like drinking summer sake. Banshu Ikkyo's light nigori with a summery label. It has a pear-like sweetness and a strong rice flavor. It also has a slightly gaseous taste, which is refreshing and perfect for this time of year. The alcohol content is low at 14 degrees, making it easy to drink, and you won't be able to stop sipping.

When I traveled to Toyama during GW, I happened to stop by a liquor store and found Katsuma. I was so excited. The taste was very mild, clean, and beautiful. It has a moderate sweetness and umami from the rice, and a moderate bitterness. There are no peculiarities at all, and it goes into your body easily. We enjoyed it with a deep sense of deliciousness.

Summer sake has been arriving one after another, and I wanted to drink a strong sake, so I chose Gikyo. It is made from 100% Yamadanishiki from the special A district of Tojo, Hyogo Prefecture, and has a rich, fine rice sweetness and umami flavor. Combined with a moderate bitterness, it is a very satisfying bottle. It is also a great match for dumplings.

Hokusetsu, located in Sado City, Niigata Prefecture, is a first-time sake brewery. The sake rice used is 100% Gohyakumangoku, and although it seems light, it is surprisingly rich and punchy. It has a high alcohol content of 17 degrees Celsius, making it a classic sake with a strong sake taste. Both Itsuki and Hokusetsu have a rich flavor, which is my favorite sake from Sado Island.

The first sake from Hokkaido, Niseko from Kutchan Town. The sake rice is "Ginpu" produced in Hokkaido. It is a dry type, with a moderate sweetness, and has a rather classic flavor that is refreshing and easy to drink. It goes well with bonito sashimi. Sake from Hokkaido has been attracting a lot of attention recently, so I would like to pick up other brands as well.

A snoclet of honored chrysanthemum, perfect for the early summer weather. Pon! and opened the bottle vigorously. The strong fizzy, fruity flavor has a sparkling wine-like taste, and the richness and bitterness of the Yuyamanishiki expresses the Snoklet's character. Paired with homemade pizza, it was gone in no time.

The dry type of Kiri-Tsukuba has been my favorite since I bought it in Tsukuba last year at this time of the year. It has a melon-like sweetness on the palate, but at the same time it is firm, crisp, dry, and bitter. The taste has the classic flavor of Akizuka, but the acidity is refreshing and light. GW went to Shirakawa-go via Toyama. The weather was fine and the trip was enjoyable. In an old port town called Iwase area in Toyama, I bought a bottle of Manjusen. It is a type of authentic dry connoisseur. The sweetness is quite restrained and you can feel the straightforward flavor of the rice. As the name suggests, it has a dry finish. This is a sake for sushi. It enhances the delicate taste of Japanese food.

I didn't go out anywhere during the first half of Golden Week, and I'm working today. I will relieve my fatigue with a delicious sake. Ding, from Ueda City, Nagano Prefecture, is a definite one. It has a full-bodied, fruity flavor with a strong rice flavor. The finish is exquisitely balanced with bitterness and a good dryness. The taste did not betray our expectations.

It has been a long time since I have had an Oroku, and this is a one-star type. Oroku is characterized by its peculiar taste, but perhaps because it is an entry-level type with one star, it has no peculiar taste and is refreshing and easy to drink. It is crisp and refreshing, with a koji flavor typical of San'in sake. It gives a different impression each time you drink it, and it is also a bit like Oroku that it is hard to grasp. There is no doubt that it is delicious.

Shizenigo from Yabuki-cho, Fukushima Prefecture, this is a brand of the same sake brewery as the Masamune Instrumental. Natural and clean taste, pear-like sweetness with a subtle chili sensation on the tongue. The sweetness quickly disappears and turns bitter on the palate. It is a refreshing sake perfect for early summer.

It is another brand from the same brewery as the recently popular Urasato and our favorite Kiri-Tsukuba. The melon-like fruity sweetness is similar to that of Kiritsukuba, but it is even easier to drink and has a juicy mouthfeel that is typical of honjousei. The lingering aftertaste is bitter and refreshing, so you will never get tired of drinking it. It is perfect with aqua pazza. No wonder it is so popular.
