Happy New Year! My family caught the flu at the end of the year, so we had a lonely New Year's without any New Year's dishes at home. My first sake of the year was Nishinoseki from Oita, because I wanted to drink hot sake. I bought this one at a convenience store on a business trip. I liked the retro label. It's not too sweet, but it's refreshing, and this is the best way to warm up sake. I'm looking forward to another year of drinking sake.

The second nigori of the season is Hanagaki. The bottle opened easily with no foaming. It is a solid nigori with sedimentation about halfway up the bottle, but after stirring it and taking a sip, you can see the sweetness and richness, The sweetness is strong and full-bodied. The bitter flavor can be felt in the aftertaste, and I enjoyed the Hanagaki-like flavor.

It is Christmas Eve, but since it is a weekday, I cooked a simple meal and drank Aizu Chusho. I really wanted something sparkling. The taste is delicious, with a refreshing muscat-like flavor and a good amount of sake-like character. It matched well with the Sekai no Yama-chan style chicken wings.

Mutsu Hachisen from Hachinohe City, Aomori Prefecture, with its red and black label fits the image of super-hot sake. The aroma is gorgeous, like a ginjo sake. The taste is also gorgeous, with an apple-like sweetness and a rich, mellow flavor. The finish has a firm, dry feel with a clean crispness. It is very satisfying to enjoy both the fruity and dry taste.

This is my first time to try Kuromatsu Senjo from Takato Town, Nagano Prefecture. The name gave a classic image, but the modern label is promising. The taste is refreshing, with a moderate sweetness and a strong acidity. It has a core flavor and a dry aftertaste. It is a good drink, but it is not too assertive, so it is excellent as a food sake.

Chiyomusubi初しぼり 無濾過生原酒純米吟醸

Chiyomusubi, from Sakaiminato City, Tottori Prefecture, offers freshly squeezed new sake, which we enjoyed last year as well. It has none of the peculiar characteristics of San-in region sake, and the rich sweetness of Yamadanishiki can be enjoyed straight out of the bottle. It also has a tangy dry taste. It was the perfect accompaniment to the duck hot pot.

Fukui's Tsuneyama is a sake with a dry, dry image, but this is the first time I have had a freshly squeezed new sake. It is not dry at all as I expected, but the sweetness is impressive. It is not fruity, but rather sweet from the rice. The umami is also well balanced, and it is delicious. It is an outstanding new sake.

Today, we chose Akishika as we wanted a sake with a robust flavor to go with the dumplings. This is the first time for me to drink a sake made from the yeast of Omachi. It has a rich and peculiar flavor typical of Akishika. It is full-bodied and drinkable. The spicy sweetness is followed by a dry and crisp finish. It was a great match between two peculiar wines.

Takeyuki is a recent favorite of mine, and I will have this year's new sake. It has a freshly squeezed sweetness and acidity, and the flavor is surprisingly robust, making it very drinkable. I can also feel a slight fizz on my tongue and enjoy a moderate sake flavor, and I am very satisfied with the taste, which is better than I expected.

The season of nigori has arrived. The first bottle was Toyobai from Hirosaki City, Aomori Prefecture. The bottle was opened without incident. The effervescence was strong and the nigorigo was thick. The sweetness is restrained and the aftertaste is dry and refreshing. After all, nigori sake is delicious. I couldn't stop drinking it with chicken hot pot.

For this year's first new sake, we decided on Kochi's Bikuyo. It has a freshly squeezed flavor and is surprisingly fruity, unlike the dry image of Kochi. It has a good amount of flavor, and you can also enjoy a moderate sense of sake. It is a very satisfying bottle with good cost performance.

It is getting colder, but we are still going for autumn sake. Kouko cold-aged sake. It has a sweet and sour taste that is typical of Koshi, with a moderately dry taste that is well controlled. Although it is hi-ire, it still has a subtle gasiness that adds a nice accent. After drinking it, we noticed that it has a strong umami flavor and is free of any clutter, which is hard to believe given the 80% milled rice ratio. It is a delicious sake that permeates the palate and relieves the fatigue of a week's work.

This is the first time I have tasted Manjusen since visiting the brewery in GW this year, and the first time I have tasted the Omachi version. The taste is clean and refreshing, as is typical of Manjusen, and the sweetness characteristic of Omachi has a slightly spicy nuance. The taste is mild with umami, and the aftertaste is dry with a slight bitterness. We enjoyed it with yellowtail sashimi.

Kushira, Gosho City, Nara Prefecture, 80% polished rice nigori sake. I was afraid to open it because the label said to be careful of explosion, but nothing happened and I stirred it by myself. Although it is a low-polished sake, it has a clean taste with no cloying flavors. The sweetness is moderate with a bitter dry aftertaste. It tastes like a rice cider, and you can't stop drinking it.

This year's new sake has been arriving one after another, but I want to enjoy some more autumn sake. So today we have Gobashi hiyaoroshi. It is a straightforward sake with a low sweetness and a good acidity. It has a dry taste with the umami of rice on the palate. It is an orthodox sake, but it has a calm taste that goes well with any meal.

It's getting colder, so we're having our first nabe of the season. It is a good season. The sake to be paired with mizutaki is Itaru, a Japanese sake from Sado Island. It has a gorgeous ginjo-like flavor with a rich rice flavor and just the right amount of dryness. I like this unique flavor, which is distinctly different from the light and dry style of Niigata.

Taki Pride in Nabari City, Mie Prefecture. I had it during my summer vacation trip to Ise-Shima. When you take a sip, you feel a melon-like sweetness for a moment, followed by the sourness, bitterness, and dry aftertaste characteristic of Yamahai, which develops in a complex way. It goes well with meals and has a very unique taste, but it is my favorite type.

We drank Yonetsuru's nigori sake last year at this time of the year, and we cannot miss it again this year. The bottle was opened without any blowout, and it has a firm fizzy feeling with little nigori. The taste is sharp and dry, with a strong acidity. It is refreshing and crisp. We enjoyed it with homemade stew.

This is the first Hiragana Takachiyo. The aroma is fruity. The color of the label is said to represent fruit, but it is a little dry before it has yet to ripen, with a moderate sweetness and sourness, like a pear or grapefruit. It's a great swing from the sake-like flavor of the Kanji Takachidai. It is easy to drink and will be gone in no time.
