Junmai sake from the Naohiko Noguchi Research Institute after a long time. Paired with yellowtail shabu-shabu.
Aged and mellow, it has a flavor unique to Ishikawa sake. The sweetness, acidity, and bitterness are in perfect balance. It has a strong umami flavor, but it is not too heavy and the aftertaste is refreshing. We enjoyed the skill of a master brewer.
