Congratulations on the registration of "Traditional Sake Brewing" as Intangible Cultural Heritage🎊. No way! With such a happy news...I'm sure you know what sake to open when my daughter's birthday 🎉 coincides with our family news 🤭 lol Well, today is Thursday...and we opened a bottle of Jikin 🍶, the perfect sake for such a happy day 😁! When we opened the bottle...a popping sound and a fruity ginjo aroma wafted in immediately, even though it was fired-in 🤤. And then a sip... a hint of piquancy, sweetness, and umami without any cloying taste... and an aftertaste that goes away as if nothing happened ✨. I also feel a slight bitterness, but it never seems to get in the way... I can only say one word: "Delicious 😋" ❗️ I was originally going to compare the luxurious Yoshikawa Yamadanishiki and Tojo Yamadanishiki for the New Year's holiday... but I think it's okay to open it today.... My only concern is that more and more of these delicious sake will be known and consumed overseas and the domestic distribution will decrease, become unavailable, or increase in price 😭.... It's been a while since I've had a Jikin, but I'm sure it will be in the Hall of Fame for me personally 😆. ps. Looking forward to tomorrow's taste change✨! Day 2 of Jikin 🤤. No major taste changes, just consistent goodness✨. This is what I call a recovery magic heel 🥰.

I have nothing special to do on a weekday after work...I just stop by a liquor store 😅. It was shipped last year, so it's been aging in the liquor store for exactly one year 💧. It's been aged in the liquor store for exactly one year since it was shipped last year 💧. But when you open the bottle, you can still smell the gorgeous aroma and the fizziness of the raw sake ✨. The piquancy and sweetness are there too... with a spiciness and bitterness in the aftertaste, combined with the sake-like feeling of aluzoe, it's easy to drink as a food sake 😀. It is a rare high-alcohol sake these days...so if you drink too much, you might get drunk too quickly😅. It might be hard for those who don't like strong sake taste... 😅

We have too much sake in our fridge... so even though it's Sunday, we're opening a bottle ✨. One of our favorite Kamo Kinshu in the prefecture...Junmai Shiboritate Nama (only available once a year): ❗️ Kamo Kinshu is fresh and piquant even when hi-iri... but when it's a nama-shu (raw sake) it's even better: ⤴️ It's fresh and piquant from the first sip 😁. And while it has a fruity taste... the balance of spiciness and bitterness in the aftertaste is almost addictive 😋. It's great as a food wine 🤤. And to top it off, the price is ❗️ Prices for everything have gone up and it's cold in my pocket👛 these days, but this sake is priced at 1,540 yen for 720ml: ‼️ This price for such a delicious sake...I can't get my head around it! Thank you sake brewery! It still has a piquancy even on the second day 👍. The flavor and freshness is also up⤴️... and it tastes different from the first day 😆. Next report on Kamogane... The next report on Kamojin will be the "Christmas Limited Jun Dai Usu Nigori Nama 🎄" which I personally highly praised when I drank it for the first time last year 🥰.

Today we will open a bottle of...! Akita's Snow Kayasya: ❄️ I almost never drink wine, so every year I drink the famous "◯Jolais Nouveau"? I honestly don't know what "Fat Jolete Nouveau" is. I honestly don't know about the "Fat Jolete Nouveau"...but I'll open the sake nouveau. When I open the bottle, it has a nice fruity ginjo aroma ✨Although it's a nama-shu, it has almost no piquancy, but the sweetness is just right... delicious 😋. However, I do notice a slight bitterness in the aftertaste 🙂‍↕️ Personally, I think it's more of an aperitif or an in-between-dinner drink than a smooth drink.... It's delicious, but I don't think it's the flavor I'm looking for 😭 I wonder if there is a flavor that surpasses Jikin, which is in the Hall of Fame... I'm still exploring 🧐. I like it better on the second day😍. The bitterness in the aftertaste is reduced... the sweetness is increased... it tastes soooo clear 😆.

Second bottle today 🍶. When I opened the bottle... this is a sweet aroma like a fruit ore 🍌🍎? The aroma is sweet like a ✨! As you take a sip, you will feel the same expectation... a strong sweetness like a fruit 🍎 that rushes through you at once. The aftertaste is somewhat like after eating a banana🍌.... The piquancy that only a fresh sake can give is felt in the aftertaste ✨. In general...this, this, this! It's an adult fruit ore 🍇😆. The first sip has less piquancy, so it's great for those who don't like fizzy drinks like soda and also like sweet sake 🥰. I didn't get the image of sake from Okayama even though it's a neighboring prefecture...but I still don't know much about it 😅. Will this fruit au lait evolve tomorrow! I'll drink only half of it in anticipation 🍸😁. Day 2 kittaaaaaayyyy ❗️ More umami sweetness⬆️ + sake-like taste 🍶 less pithy aftertaste, but I personally like the second day 😍.

Fridays are so exciting 😁. After all...even if you drink a lot at home to relieve the fatigue of daily work, all you have to do is go to bed 💤😴. Well! Tonight 🎑 is my favorite brand of sake, Hiran! s Classic Nama Sake 🍶! You can tell it's fermenting in the bottle before you even open the bottle ✨. And then the cork is opened...! ...and the ginjo aroma is subtly wafting in the air 🤤. Take a sip and you'll feel the great piquancy ❗️ and a slight bitterness that may be similar to Shinshu Kamerei. It's delicious on its own, but if you notice the oli that remains at the bottom of the bottle and slowly stir it upside down... it also increases the flavor and makes it more profound 😋. I think I'm going to get even more hooked on it 😁. What people call "guess what" is for me a "guess what" brewery 😆. P.S. I'm not sure if this is a good idea or not. The first picture of the first glass is the supernatant...the second picture is after stirring the settled oriole 🤭.

Weekday Corkage Series: ⁉️ I'm at work to rave reviews... but that's ok, right? At least at night 😅 I bought a bottle of Miwazakura🌸 at the convenience store 🍶🍶. Just the right amount of ginjo aroma✨. And...the aroma reminds me of a dry sake 😁. This is the kind of flavor I'd like to drink with hot pot 😊. The fruity aroma in the first sip is followed by the spiciness... and the sharpness of the aftertaste that doesn't interfere with the food. It would be delicious heated 🥰. Unfortunately, I only had it cold 😭 I don't know if it's because Hiroshima Prefecture is a sake producing area or what.... I don't know if it's because Hiroshima prefecture is a sake production area, but it's amazing that convenience stores have so many sake lineups 😊. I wish I could buy Jyushiyo at a convenience store soon... lol

On my way home from work on a weekday... I stopped by a local convenience store. I looked in the sake corner 🍶 to see if I could find anything of interest... Most of the sake they had was Hattatsuyama, but why this one 😱⁉️ They have Toyo Bijin's fresh sake (⁉️) And I found myself buying it 🤭 lol I couldn't resist it 😅 And then the stable...open the bottle...☺️ Ginjo aroma that will blow away your weekday guilt✨ Here comes the pizzazz of the raw sake! I thought... it didn't come at all 🧐. But it's soooo fresh... like freshly picked apples 😊I'm drinking it after dinner and it's... delicious 😋. I love the sweetness, the flavor, and the aftertaste that disappears quickly and doesn't get in the way 😍. This isn't the level of sake you can find in a convenience store 😅😋 ‼️ lol Well...even though it was a weekday drinking at home, I enjoyed it a lot 🥳. Well...I'll do my best at work tomorrow and the day after tomorrow 😓.

This is a bottle of Senkyoku Snowman ⛄️ 🍶. When the bottle is opened, the aroma is neither strong nor weak, but elegant and moderate 😁. The top clear liquid is settled, so I sipped the top clear liquid first 😌 I can feel the sweetness while feeling the freshness on my tongue 👅 ✨The top clear liquid has a light taste. So... after stirring upside down and taking a swig, I took another sip 🥂. The rice flavor was more delicious and the sizzle was stronger ✨. The bottle also turned white like a snowman ⛄️ ❄️ I've had Kabutomushi, Sparkler, and Akatombo, but the lemoniness I've felt so far seems to be less. I felt it tasted more like wine...but Snowman ⛄️ is a completely different sake. I think I'm going to get more deeply into Sentori... lol 🤭 Day 2 report: 🗒️ The lemon sourness unique to Sentori is stronger than the first day, and the umami is also increased ⬆️😋. This...is delicious 😁.

Weekend Corkage Series! I wanted to drink some heated sake yesterday, but I drank all of it before heating it up... Yesterday I wanted to drink a heated bottle of Kamikawa Taisetsu, but I drank it all before heating it up, so... I decided to get myself back on track and opened a bottle of Kamerei Sake Brewery, a good-cost sake from the prefecture. Although it's a draft sake... I bought it at a local liquor store last December, so I guess it's an aged draft ❓🧐. Aside from that, when you first open the bottle of cold sake, it has a strong sweet aroma ✨As you take a sip, the spiciness and umami that you can feel is emphasized by the fact that it is a food sake 😊You can drink it in small doses instead of beer 🍺. I'm not sure if it's a good idea to drink it as a substitute for beer! It's getting colder, so today I'll report on heated sake😁. The deep and profound flavor that you don't feel when it's cold sake ‼️😍 I think this is the one. The complexity and the umami of the rice is because it's junmai with a low milling ratio and not much polishing...it's delicious 😋. I like this one better heated for sure 🥰. I think dry sake is too spicy when it's cold 😅. ps. this is just my personal opinion! Day 2 report: 🗒️ First up is the cold sake❗️ I have the impression that the dryness has been toned down and the umami has increased😄I personally like the cold sake better on the second day😍. Next is heated ❗️ Yes... no need to mention the umami of the sake: ⬆️

My first Kamikawa Taisetsu ❄️ The other day, I got this Hokkaido brand 🍶 at Haneda Airport✈️ on a weekday... but I opened the bottle 😅. When I opened the bottle, I felt the fruity aroma, but when I took a sip, I got the impression that the spiciness and umami are in harmony. ❗️ It has a refreshing sharpness and is almost like a food sake. ✨There may be some bitterness. It's a taste that can be used with everything from sashimi 🐟 to light meat 🍖. I think the flavor will change more when it is heated up 😁. It's getting colder so tomorrow I'll try the second day's flavor change + heated sake 😍. Day 2ooooooooo! ...and I got home late from working overtime so this is a cold sake only report 😅. The sweet and sourness has been emphasized, but the spiciness and bitterness are also slightly up: ⤴️ This feeling might have been more suitable for heating up yesterday 💧.

Unfortunately... the Kuheiji was not my favorite... not quite enough for me😅. I opened a bottle of Oragami (raw sake) 🍶.... Atago no matsu... as you all know, is a brewery by the name of Shinzawa Brewery whose motto is "the ultimate food sake" ✨. This is an orikarami sake... so the top clear liquid has settled, so we had to try the top clear liquid first: ❗️ I was hoping for the piquancy of the raw sake 🍶 but... no piquancy! But that's just the way it is... when you drink it, mmmmooooooooo sweetness and umami balance... delicious 😋. And after mixing the next ❗️ bottle up and down...the second cup! ...the flavor of the rice increases.... Hii, I've already... enjoyed it from day one 😁. I guess tomorrow will be even more delicious ⁉️ 🤤! Well...since it tastes this good on its own, it's the perfect sake for the upcoming nabe season 🍶. I can't wait to see which brand of heated sake we get 😊. Day 2 is a stable...‼️ lol No need to comment at this point, right? Because... it's delicious 😋. I don't know how to comment on the contrary 😅 Well...! All I can say is... you can't go wrong with buying "Atago no mats" ❗️

I've had a bit of a cold since yesterday... disinfected with beer 🍺 and shochu 😷 and revived ❗️ lol And the usual weekend opening: ‼️🤭 brewer kuheiji's omachi✨. When you open the bottle, the aroma is strong and fruity 🍎 Ginjo aroma 😁. When I took a sip... it was a harmony of sweetness, umami, and a touch of bitterness 🧐. It's a little bit unique taste. ...Most breweries don't have that much bitterness when you drink it, but this one has it from the first sip💦. Before drinking it, I thought it would be like an aperitif...but this bitterness could be good with strong flavored meat dishes 🍖. It's delicious... but personally I don't think it's subtle😅. For a food sake, I would go for Hakurakusei or Hokusetsu by far. And Tasake: ❗️ That said! I'm looking forward to the changes on day 2👍. Day 2 ✨ Well, now for the fun part...day 2. Sweetness, umami... and even the bitterness is up: ⤴️ I still don't think I like it that much 😭 But overall, I think it tastes better on the second day ❓

I found myself at the Kamo Kinshu Weekend ❗️🤭. I also opened the Aizan ❤️. This is Aizan, a limited edition sake brewed in early spring, stored and released from the brewery. It is brewed with Aizan, the diamond of sake rice🌾💎🤤. Compared to the direct-sale-only draft sake mentioned earlier, it has less pizzazz, but that's Kamo Kanehide for you! Even though it's fire-aged...it's still there! For some reason, it has a piquancy ✨. The aroma is more subdued here, but the sweetness and umami in the first sip is stronger 😌. I'm sorry I can't convey it in words alone 😭 but! ...it's delicious 😋 because by the time you realize it, the rest of the sake is gone... lol ps. I'll report on the hot sake soon as the weather is turning chilly 😆. Day 2 report: 🗒️ Oh, no! Is it because it's fire-roasted? I wonder if it's because it's hi-iri...the raw one from the direct sale shop lost its piquancy, but this one still has a little piquancy even though it's the second day 😍. Of course, the sweetness and umami has increased, which is good 😌.

I knew it was the weekend...sake 🍶😍! Well! Today is my favorite sake brewery 🤩! Kamo Kanehide is by far my favorite direct-sale-only sake 🍶...! What a surprise! I went to buy it as soon as I heard on ℹ️ that for the first time this year, they are releasing 120 limited bottles of Nama Sake 🤭 lol! Unlike the hi-iru sake that I always buy on repeat, it has a stronger fruity aroma when you open the bottle ✨. I thought the sweetness was not as strong as the aroma and the piquancy was stronger than the hi-iri 😁...but...I got the impression that it was slightly more ⁉️ But...it tastes like...when should I stop drinking it 😅. It's going to be empty before you know it, so cork it and go to the fridge before you get drunk‼︎ No doubt it will taste even better tomorrow, this pattern: ☺️ I wish it was more well-known, but I also wish I couldn't buy it anymore... I'm conflicted about that too... 💦 lol I highly recommend this brand as a Hiroshima sake to all "Sake-no-wa" users 👌. ps, just my personal opinion, but I like it better than Niimasa 🥰. 2nd day! The pithy feeling has gone...but the sweetness and umami is up⤴️ like 100% apple juice 🍹 with a refreshing taste and a sense of sake 🍶. Soothing and delicious 😋.

Hi Jay & Nobby 😆 If you like your sake with a bit of pizzazz, you'll love this one: ❗️ Although we are in the same city of Higashi-Hiroshima, our sake is brewed with "medium-hard" water, not the soft water used by the breweries around Saijo, one of the three most famous brewing areas in Japan😍.

Faint ginjo aroma✨ A sip will leave you with just the right amount of spiciness and sharpness 🥰. This is a food sake, but it has a delicious flavor that doesn't interfere with the ingredients 😌. I rarely drink outside, but this one was delicious 🥰. The disadvantage of drinking it in a restaurant is that you can't taste the flavor immediately after opening the bottle... and you can't tell how it changes the next day or later 😭. The sake I got this time was a bottle and there were only a few bottles left, so there is a high possibility that the taste has changed since the bottle was opened 💧... 💧. And, well, it's impossible for me to drink it in a restaurant... but I have an inquisitive mind as a sake lover 🤭 lol

Hokkaido Sake! I've been curious about Asahiyama Zoo's 🐱 limited edition sake 🍶 for a while now. I was able to buy it at Haneda ✈️ and opened the bottle 😁. But.......it's the sake 🍶. Aroma, flavor, aftertaste, sharpness.......................................... It is the sake 🍶. To be honest, I don't have high expectations for this kind of souvenir sake... but it's a pity that they are all the same (´; omega; `). It's just my personal opinion, but I thought it would be nice if it had some more characteristics... 😞. The design is cute...but as a person who loves to drink, it's a shame 😅.

Opening on Saturday will be... Mimuro Cedar ❗️ Dioavita ✨, which won the Gold 🥇 at this year's Sake Compe in The aroma is subdued, and when you take a sip... it has a hint of a raw sake-like piquancy 🥰 Mmmm... why does it taste like this when it's fired ⁉️ and... of course it's delicious 😋! I can't find any negative elements in it, after all it's a Gold Award 🥇 winner 😅. It has a fruity taste, but it can be used before, after, or during dinner 😌. The aftertaste is also refreshing with no bitterness... If you pay 2,000 yen for this, you get your money's worth... 😨. With the high cost of living and the weak yen, it's a blessing to be able to enjoy this flavor at such a reasonable price. ❗️😍

Weekend opening series! LOL 😆 Kijo-zake from our recommended brewery "Hiran" 🍶Reborn❗️ This is a Kijoshu that uses sake instead of brewing water in the last step of the 3-stage brewing process to prepare the sake. The price is a little higher due to the time and effort involved... but the sweetness is much more ⤴️ enhanced, which is the standard for kijoshu❗️ But let's not get ahead of ourselves... when you open the bottle, you can smell the subtle aroma of fruit 😁. Take a sip... and the sweetness and umami of the citrus 🍊 spreads in your mouth at that moment ✨. The sweetness is so pronounced that you forget it's sake (kijoshu) 👌. If you drink it blindfolded, there's a big chance you'll mistake it for a cocktail 😅. No bitterness or dullness in the aftertaste, just a penetrating deliciousness.... This is one of my favorite Jiran, and if you find it, it's a "buy ❗️" 🥰. ps. It's good before, after or just by itself...and most of all for those who love sweetness😍‼️ Day 2 👀👀... ...this is too good😍! The flavor and sweetness is even better⤴️ and... if you start drinking it, it's the last thing you want to do✨ It's so soothing that if I could fly in the air in the flesh, I'd feel like this ⁉️.... Oh no... this is the healing water 😌.

On my way back from a business trip to Tokyo on Saturday and Sunday, I stopped by the Hokkaido Antenna Shop at Haneda ✈️ and found this sake 🍶. When I opened the bottle, the aroma was not strong and not very sake-like... but when I poured it into a glass, it was like a wine! Pour it into a glass and it's like wine 🥂. The sip is low in alcohol content and has a very drinkable acidity 🥰. It is more like a sour than a sake ❓! It will be gone in no time instead of beer 💦... I went out to Tokyo, but I didn't expect to buy Hokkaido sake... ❗️ I was curious about Hokkaido sake because it's hard to find it in my hometown 😅. I'll be reporting more often 🤭🤭 lol
