This week, commuting was difficult due to the cold wave 🥶. And to top it all off, I had to work excessive overtime 😭. On such a weekend... today, I opened a bottle of Kaze no Mori (Wind Forest), which is a good cost beer after a long time 🍶. The moment I removed the outer stopper...the stopper lightly floated away 😰...it didn't spill, but it was a moment when I felt that Sake is a real thing 😆. Now that it's safely opened, I can smell the aroma...hmmm? It's only slightly noticeable 😆. When you take a sip, you can feel the piquancy of the raw sake, and then the bitterness, miscellaneous tastes, and alcohol come in. Akitsuho has a unique taste with some peculiarities. However, it has a sharpness first, so it could be a good mid-meal drink as long as you don't eat heavy meat dishes. Personally, however, I prefer the Oumachi that I drank before 🧐. I would say that the price is close (about 1,500 yen), and in terms of personal taste preference... Kirei type is Junmai (pure rice) from Kyuyo Masamune. For food sake, Hakurakusei's special junmai🌾✨. For a heated sake, Kamerei's Happichi Junmai🌾🌾. I wonder if I will be able to find a cosy sake that will break my personal stronghold of non-alcoholic sake this year... 😁.

Before I know it... it's already February⁉️ It seems like just the year before last...maybe it's my age, but it seems to be accelerating... 😓. By the way, yesterday's Uguisu...as usual, it disappeared before the second day, so I'll get back on track...lol I opened a bottle of Umeko, which I bought the label for 🍶. The aroma is slightly fruity 😆. And then... from the first sip, it has a strong sweetness and umami, with a little bit of the pithiness of nama-zake at the end 🥰. The bitterness is only slightly perceptible, and the taste is generally gentle. It is quite delicious 😋. I think "like a tropical juice" on the back label is not wrong 😊. It's more for before and after dinner than as a food drink 👌. Looking forward to tomorrow's taste change 🤩. Day 2: 🗒️ More tropical like pineapple🍍🏝️ flavor⤴️ the pizzazz I felt yesterday is still gone... but I think it's generally more intense✨. This is... delicious 😋.

Friday's annual opening event at our house 🤭. Well, tonight...🌙 First open bottle of Uguisu🦜 from Fukuoka! To be honest...I wanted to start with a non-sparkling sake🍶, but I happened to be able to buy this one😓. As soon as I opened the bottle, I was a little cautious because it is a sparkling sake... The aroma reminds me of sparkling wine, and I don't feel the slightest bit like sake 😁. And from the very first sip, the taste is very similar to that of a wine rosé 🥰. The sweet and sour taste is addictive ✨. In fact... if you were blindfolded, you'd probably mistake it for a rosé😅. It's just that you can't stop from tasting it lol. ...and as I was looking at the bottle, I noticed...there's some oli settling 🤩🤩... So I stirred it once and took a second sip! I stirred it once and took a second sip... just no big change as I expected😅. But it's so easy to drink that if I drink it after a bath or something, it'll be gone instantly 😂. Next time I want to try the regular one? I'd like to try the garden 😻

When I come home tired from my daily work, I can't control my weekday taboos... 😓. And with the return of the cold weather, it's been cold again lately 🥶. So I was thinking of repeating the heated sake "Suru Suru Gentle Heated Sake" from Kamo Kanehide that I introduced earlier... but they had already finished it for this season 😂. Then... I remembered this special Junmai (green label) that is heated all year round 😁. I usually only drink this sake chilled, but last year... I remembered Mr. Kanemitsu, the toji (master brewer), talking about how good it tastes when heated up on his online archive 📺, so I ended up opening it 🤭. Let's put the preamble aside and take a sip cold as usual ✨The fresh piquancy of Kamogane is still present even when heated, and it has a moderate umami taste 😋. But...! The main issue is here... lol. When heated up, the steam from the hot sake overflows with umami flavor 😊. And now...! Mmmm! It tastes a bit spicier, but this... is much more of a food sake than a cold one. ‼️ It's nice to be able to enjoy it both cold and warmed up... 🥰. But...I still can't forget that heated sake - maybe I'll buy two bottles next season! I'll probably buy two bottles next season 🤭. The second day, it loses the piquancy of the first day...but I like the umami of the second day better 😆. Somehow I want to add them and divide by 2 🤭.

While getting into the taste change on the second day of Urasato... I drank it all and was not satisfied, so I opened a bottle of local sake 🍶🤭. This one is a cosy cat🐈 label from Kanemitsu Shuzo's "Sakurafukiyuki" sake with aluzake. (There is some speculation, but I am almost certain that it is because Mr. Kanemitsu, the brewer, is a cat lover. Now, putting such unimportant information aside... I have an image that I dislike alcoholic sake... or that I get drunk badly 😅I think that's a thing of the past (or all-you-can-drink sake in chain stores)... but... But.... It's been a while since I've opened a bottle 🍶. I still think it's different from Kamo Kanehide...no pizzazz. The taste is like a middle-class sake, and the unobtrusive umami, sweetness, and spiciness are just right 👌. It's more like a sake to drink with rice instead of beer 🍺. It's a good price for a good drink 👌.

Second bottle today 😁. First open bottle of Jungin🍶 from Urasato, Ibaraki. The aroma is a moderate ginjo aroma + a slight alcohol taste 😁. From the first sip, you can feel the sweetness and umami that belies the ginjo aroma 🤩. The sharpness is also very fast, which I personally like 😊. I can hardly taste any bitterness in the aftertaste. I can hardly feel any bitterness in the aftertaste 😊...but! It's a strange taste with a bit of pizzazz at the end 💖. I tend to taste any sake by itself, but this one would be a perfect pairing with sushi or sashimi 👌 How will it taste tomorrow? I'm sure you'll love it 😆. Day 2 report: 🗒️ ...Hey! Did it taste like this yesterday? 😱. I feel like I'm suddenly getting closer to the lemon🍋-like sour and refreshing taste of Senkou: ‼️ but I can feel a good amount of alcohol 🥰. Yeah, what the heck 😳 Personally...I can't miss it on the first day or the second day...😁

Finally weekend... 😓. I'm so tired that I can't go home on time 😭... That's when I drink my favorite brand "Takachiyo" and today I'd like to introduce you to Shintaka ‼️ The label...it looks like the first plane of E Fatty lol🤭. E TYPE is too meaningful to begin with 🤣. But let's put the preamble aside, when you open the bottle, you can already smell the aroma of grape 🍇🤩. I had high expectations even before drinking it 🤩‼️ And it doesn't disappoint, as you can see in the picture ❓It's so fresh 🤤. And once you take a sip... the grape flavor + a good amount of sake 🍶 will make you addicted to it, it's just too good to stop 🥰.... If I were to describe it in terms of a soft drink, it would be "◯anta grape🍇". Of course, it is an alcoholic beverage, so it is strictly forbidden for children🚫, but I have a feeling that even children can drink it by mistake... Hmmm....I wonder if it will last until tomorrow 😅 The second day I managed to keep it: ❗️ Evolved to a sweet and sour taste from the first day✨ Most of the time, the second day, it loses its piquancy.......but as expected from Shintaka, it's a little bit more piquancy 🙂! The piquancy of the first day 🫧. It's a different taste that I can't stop 🤭. However, the second day may have a slightly stronger alcohol 🍸 feel.

Today skiing ⛷️ due to fatigue...? LOL! The direct sales limited that I had gotten last week...I just had to open it 🤭. This is the limited edition Jun Dai-Seme from the direct sales shop. The process of squeezing sake includes "arabashiri," "chukumi," and "hitame," but there is no strict classification of the three, and each sake brewery may have its own classification. But that may differ from brewery to brewery. It's delicious even before you drink it.... The aroma, the umami, the sweetness, the sharpness of the aftertaste...well...Kamo Kinshu never disappoints 😍 The fruity aroma 🍎, the piquancy that only Kamo Kinshu can give you...and the sharpness that doesn't interfere with the slight bitterness in the aftertaste.... Delicious ......🥰 I'm not patronizing it because it's local, it's just delicious 😅. When you come to the island, please patronize this Kamogane... 🤭. Second day 🗒️ Even more delicious... 🤩. The "search for deliciousness that will stay in your heart" is exactly what Kamogane advocates... 🥰...

Second bottle today 😁. The first bottle of Fukushima, Aizumusume 😏. When I opened the bottle... the sake-like alcoholic aroma is rather stronger than the ginjo aroma 😅. I guess😅 The first sip has a very smooth taste with a hint of bitterness, and a little bit of the piquancy of a pure sake 😆. The sharpness is also well balanced without any unnecessary bitterness 👌... but the aftertaste is a bit strong 👌... but the aftertaste is a bit strong 👌. ...but the aftertaste is a little bit on the downside 😅. Personally, I think it must be one of my favorites, but I'm not so sure if I'm addicted to it 💧. If I were in Fukushima, I might prefer the instrument Masamune 🎷. However, as all Sake-no-wa users know... the taste changes dramatically right after opening the bottle and after the second day! I'm sure many of you have experienced this... so I'll look forward to tomorrow's report 😁. See you tomorrow at ‼️🤭 Day two: 🗒️ No change in aroma, the initial taste seems to have increased⬆️ but the rest of the taste did not change that much... I can still taste a bit of bitterness in the aftertaste😅This is delicious but I don't think I will repeat it 😭

Weekend Huakin ❗️ I wonder if "weekend gold" is now a dead word... 😓. Well, it is true that I have less chances to drink at izakaya (pubs) on weekends than when I was young.... In the first place, it is sad to see that young people are seriously losing interest in drinking 😢. The old Japanese style of drinking and socializing is going away... 😞. But let's put the preamble aside..., Today, a friend of mine bought me a limited-edition sake from a direct-sale store, so I opened the bottle with a sense of gratitude 😁. When you open the bottle, the aroma is not that strong ❓The first sip has a great effervescence and it's more of a schwa than a pichi ✨. The balance of sweetness, umami, and bitterness is quite exquisite 😍. I can drink this after taking a bath instead of beer 🍺. To be honest, the taste change on the second day after the schwarziness settles down is very... very interesting... but I don't have the capacity to enjoy that taste change 😭. That's my only complaint...I can't stop drinking it...🤣 Sorry for not being able to report on the taste change lol😆😆

Just when I thought that tomorrow would finally be the end of this week, my body, now in tired mode after working overtime today, is craving sake 🍶... 🥱... 🥱. Then, it's just a matter of flow to open it... 🤭. Today is the first time to open the bottle of Mikawa Bushy ❗️ which I got from an acquaintance 😁. When I opened the bottle, I could smell the Jungin aroma... but it was more like the aroma of sake at the same time😅. The spiciness and the alcohol taste mixed together in the mouth when I took a sip, it is quite suitable for a mealtime drink ‼️ I think this is a sake for everyday drinking.... I guess there are different tastes, but it's not that it's outstandingly delicious... 😓. If you want to drink it as a food sake, Hakurakusei and Hokusetsu are definitely my personal favorites👌👌. I have yet to find a sake that surpasses them... 😢. Let's see what kind of food sake I can find this year... ☺️

My favorite brand of sake to drink at the beginning of the new year is Hiran... a fresh brew that is only available at this time of the year among the "Nikkomaru" brand of year-round sake 😍. To be honest...it was not the regular sake that got me hooked on Hiran, but the first time I drank Heaven 😅(see my past post for details). So...it's actually my first time with a classic lol 😆. In! I knew it was brewed with Nikomaru, an edible rice 🌾, so I opened it with that background knowledge 😁. When I opened the bottle, I could smell a different aroma from that of Yamadanishiki or Omachi...but it smelled delicious and I could also smell the complexity of the rice used for food. The aroma is very complex and you can feel the complexity of the rice. When you drink it, you will of course feel the piquancy that is typical of the Tobiran style, but the taste is unique. ❗️ ...I guess this is the taste of "Nikkomaru". It's a little hard to describe in words 😓. But it's delicious! It's delicious! It's like the first soda I've ever had 🤭. If I were to use an analogy...it would be like the same cola tastes different depending on the manufacturer.... By the way... at the end of last year, I drank Nikomaru Hi-iri at an izakaya and it was not tasty at all 😢It had been quite a while since I opened the bottle and it had deteriorated a lot.... I thought that drinking it at a restaurant is a good and bad thing...

The rice wine was delicious, but it traveled to the fridge in anticipation of a taste change...so...second bottle today 🤭 lol First open bottle, Daishichi from Fukushima ❗️ I bought a 300ml bottle to try 😁. When I opened the bottle... oh, this is... the dry aroma of a Japanese sake 😆. However, I felt a cheap brewing alcohol-like aroma, so I double-checked the label...it's definitely junmai sake 💧. Anyway, I changed from the wine glass 🥂 to 🍶 in which I was drinking Tasake lol. The first sip is very dry and even after pouring it down the mouth... it still has a strong dry aftertaste 😄. Even if you drink it cold, the alcohol will warm you up 🔥. First of all, this sake is clearly for sake lovers😅. It's not the fruity and sweet wine taste of today...it's more like the old fashioned way. I like this one as a genre though 😊. Not only sake, but everyone has different taste preferences...so if you want to try different sake for the first time, it would be better to go with a versatile drinker who can drink anything 😅If you don't like the taste, it would be a shame to leave it behind 😢. ps...I heated it up and it was just as I expected...better for heating sake than cold sake ❗️

Another weekend opening day has come this year 😁Noticing that the year has already started...it's already the 10th of the year ❗️ I am under the illusion that time is passing faster and faster every year 💧. But that preamble aside... today, we opened a New Year bottle of Tasake🌾🎍🍶. When you open the bottle, it has a nice ginjo aroma and a little bit of richness 😍If you take a sip, you can feel a hint of the piquancy of the raw sake...and while it has a robust Tasake-like flavor, it also has a fruity sweetness 👍If you compare it to beer 🍺, it has a lighter Super Do Fat, whereas it has a stronger umami flavor ◯Shibori, or a similar nuance. I wonder if the nuance is close to the lightness of Super Do Fat. ⁉️ The aftertaste is a bit bitter, but not too bitter. But it's not too bitter, so it's easy to drink 👌 Well...how will it taste tomorrow ✨❓❓ ps. the pairing may be just right as long as it's not a fatty dish like meat 😁. Second day! Almost no change in aroma ✨ I thought it would lose some of its pizzazz, but it's still there more than I expected 😁. The flavor is also slightly more delicious ⤴️ The flavor did not change drastically from the first day to the second day 👌

Today is suddenly as cold as General Winter ❄️... 🥶. And to top it off, the air conditioner at my office broke down so it's cold in the office even when I'm working 😢... It's going to get even colder this week 😅 To break out of such a wobbly state, you need to warm up from the inside out ⁉️ don't you guys ❗️🤭 lol I found myself stopping by the local liquor store on my way home from work 😁. I was strolling around the store and found a Zuikan from Miyoshi 🤭....I was convinced that it was suitable for warming sake and went to the cashier.... I went to the cashier, convinced that it was suitable for warming sake........ The aroma is not too much when the bottle is opened and the rice flavor and spiciness is outstanding. This is the one I like 😍. And the expected heated ‼️ In our house, we soak the tokkuri in a kettle on the wood stove 🪵 to warm up the sake 🍶. I personally like the balance of umami and spiciness at temperatures between hot and lukewarm 👍. It is best to drink it with hot pot dishes such as oden🍢🤤.

I'll be working tomorrow... and if I'm on vacation... I'll be depressed😅. However, if I don't earn money, I won't be able to buy more of my favorite sake 🍶...so if this happens, I'll have to recharge my alcohol before that ❗️ and open a bottle of Jikin from a mysterious pretense 🤭 lol When I opened the bottle... why is it... even though the sake rice and the brewing process should be different, there is a unique aroma of Jikin 🥰. And even before I drink it, I'm intrigued 🤤. When you take a sip, it is a little different from the fruity and beautiful taste I have written about in my previous Jikin reports, and you can taste a little bit of the miscellaneous taste that only a special junmai with a slightly lower rice polishing ratio can have. The aftertaste is also a bit bitter, but it's a moderate taste, so it would work well as a food sake ✨. I was expecting a little bit of the piquancy of a pure sake, but I didn't feel much 😅. However... it's still generally delicious 😋. I can't wait to try again 🍶 the sake I personally liked among the Jikin I had last year 🤭 lol!

The year 2025 is fast approaching, and it's already 1/4...💦I'm depressed that I only have one more day off 😞. And today, exhausted from my first run of the new year 🎿...I'm opening a new one that will make you feel refreshed 😁. I've been curious about one of my favorites at the end of the year, Akabu Sparkling ✨. It was a little bit over my budget... but I thought it would be good for the holiday season 😅. When I opened the bottle, I couldn't smell the aroma...but as soon as I took a sip, it was so sweet in my mouth ❗️ and shwash🤩. The moment you drink it, the acidity is reminiscent of sparkling wine🍾... but the aftertaste is still sake🍶. It tastes completely different from the Akabu I usually drink... but after sports, I love the taste 😆 It also tastes a bit dry (almost like the dry taste of a strong chu-hai). It's delicious, but my only complaint is the bottled beer type stopper that you have to drink it up after opening the bottle 😢. I can't even store it in the fridge with the bottle open to change the flavor because of the oxidation process 😭. I wish they had at least made it a corkable type... ps. I think I prefer the regular Akabu if I have to take the price and the taste as a whole 😘.

On the second day of the three days of the New Year, we will have a limited edition zodiac label sake from our favorite brand Takachiyo. When you open the bottle, the fruity aroma is not that strong, but pour a glass 🥂 and take a sip and the ...... moderate sweetness will run through your mouth 😁 and the moderate piquancy that is synonymous with Hiragana Takachiyo✨! This is... delicious 😋. It is recommended to drink before and after a meal, but even a mid-meal drink would be good as long as the food is not too rich👍 I wonder if it will last until tomorrow since every time I drink Takachiyo I finish it in one gulp 🤭 lol The label is cute too 😍.

Happy New Year 🎍. We look forward to working with you in the new year. ❗️ It's only New Year's when we drink in the daytime, so I report from the garden: 🗒️ Now, the first bottle of the year to celebrate (leaving aside the rest of the Jikin that I opened yesterday🤭): ❗️ This is a jungin that is sold by reservation every year only at the direct sales office of Kanemitsu Shuzo🍶, the brewer of Kamo Kanehide and a regular customer of ours. That is this "Shogatsuya" 😁. I don't think they distribute it to stores... if they do, it's only locally 😅. When you open the bottle, the fruity aroma is subdued, and from the first sip, you can feel the piquancy of Kamo Kinshu. ❗️ However, it is a bit different from Kamo Kinshu. The first sip of this one is a bit dry, and it can be paired with a strong-tasting Western-style osechi. I think it would be a good pairing for a strong tasting western style osechi ✨. It also seems to have a good fatty taste 👍 Next up... The sweetness and umami taste is a little bit more 😍. If the supernatant that precipitated is Super Dry, then stirring it would be Ichiban Shibori or ⁉️ I'm so glad I got to experience the depth of sake from the first sip of the new year 😌. I hope to increase my love for sake this year 🤭. I like the taste better on the second day 😊but I can still taste the bitterness...

Thank you all for your hard work in 2024 🍺. Now, the last one to drink... Jungin✨ brewed with Aizan, the diamond💎 of sake rice in my personal Hall of Fame brand "Jikin"! As soon as you open the bottle... the fruity aroma of sweetness and umami is already apparent 😆. And once you take a sip... the blissful taste spreads in your mouth... so delicious that you wish 2024 would never end 🤭 lol This is a stable ...... delicious 😋. I mean, I don't think there has ever been a Jikin that I didn't like.... All joking aside, the clean taste of Jikin is consistent regardless of the rice or the brewing method...and the aftertaste is unobstructed, which makes me fall in love with it😍. And 2024 is just around the corner! Happy New Year to all Sake-no-wa users: ❗️ I don't think so..., Have a good sake 🍶‼️🤭 lol I'll be a drinker next year too 😛.
