I'll be working tomorrow... and if I'm on vacation... I'll be depressed😅. However, if I don't earn money, I won't be able to buy more of my favorite sake 🍶...so if this happens, I'll have to recharge my alcohol before that ❗️ and open a bottle of Jikin from a mysterious pretense 🤭 lol When I opened the bottle... why is it... even though the sake rice and the brewing process should be different, there is a unique aroma of Jikin 🥰. And even before I drink it, I'm intrigued 🤤. When you take a sip, it is a little different from the fruity and beautiful taste I have written about in my previous Jikin reports, and you can taste a little bit of the miscellaneous taste that only a special junmai with a slightly lower rice polishing ratio can have. The aftertaste is also a bit bitter, but it's a moderate taste, so it would work well as a food sake ✨. I was expecting a little bit of the piquancy of a pure sake, but I didn't feel much 😅. However... it's still generally delicious 😋. I can't wait to try again 🍶 the sake I personally liked among the Jikin I had last year 🤭 lol!

The year 2025 is fast approaching, and it's already 1/4...💦I'm depressed that I only have one more day off 😞. And today, exhausted from my first run of the new year 🎿...I'm opening a new one that will make you feel refreshed 😁. I've been curious about one of my favorites at the end of the year, Akabu Sparkling ✨. It was a little bit over my budget... but I thought it would be good for the holiday season 😅. When I opened the bottle, I couldn't smell the aroma...but as soon as I took a sip, it was so sweet in my mouth ❗️ and shwash🤩. The moment you drink it, the acidity is reminiscent of sparkling wine🍾... but the aftertaste is still sake🍶. It tastes completely different from the Akabu I usually drink... but after sports, I love the taste 😆 It also tastes a bit dry (almost like the dry taste of a strong chu-hai). It's delicious, but my only complaint is the bottled beer type stopper that you have to drink it up after opening the bottle 😢. I can't even store it in the fridge with the bottle open to change the flavor because of the oxidation process 😭. I wish they had at least made it a corkable type... ps. I think I prefer the regular Akabu if I have to take the price and the taste as a whole 😘.

On the second day of the three days of the New Year, we will have a limited edition zodiac label sake from our favorite brand Takachiyo. When you open the bottle, the fruity aroma is not that strong, but pour a glass 🥂 and take a sip and the ...... moderate sweetness will run through your mouth 😁 and the moderate piquancy that is synonymous with Hiragana Takachiyo✨! This is... delicious 😋. It is recommended to drink before and after a meal, but even a mid-meal drink would be good as long as the food is not too rich👍 I wonder if it will last until tomorrow since every time I drink Takachiyo I finish it in one gulp 🤭 lol The label is cute too 😍.

Happy New Year 🎍. We look forward to working with you in the new year. ❗️ It's only New Year's when we drink in the daytime, so I report from the garden: 🗒️ Now, the first bottle of the year to celebrate (leaving aside the rest of the Jikin that I opened yesterday🤭): ❗️ This is a jungin that is sold by reservation every year only at the direct sales office of Kanemitsu Shuzo🍶, the brewer of Kamo Kanehide and a regular customer of ours. That is this "Shogatsuya" 😁. I don't think they distribute it to stores... if they do, it's only locally 😅. When you open the bottle, the fruity aroma is subdued, and from the first sip, you can feel the piquancy of Kamo Kinshu. ❗️ However, it is a bit different from Kamo Kinshu. The first sip of this one is a bit dry, and it can be paired with a strong-tasting Western-style osechi. I think it would be a good pairing for a strong tasting western style osechi ✨. It also seems to have a good fatty taste 👍 Next up... The sweetness and umami taste is a little bit more 😍. If the supernatant that precipitated is Super Dry, then stirring it would be Ichiban Shibori or ⁉️ I'm so glad I got to experience the depth of sake from the first sip of the new year 😌. I hope to increase my love for sake this year 🤭. I like the taste better on the second day 😊but I can still taste the bitterness...

Thank you all for your hard work in 2024 🍺. Now, the last one to drink... Jungin✨ brewed with Aizan, the diamond💎 of sake rice in my personal Hall of Fame brand "Jikin"! As soon as you open the bottle... the fruity aroma of sweetness and umami is already apparent 😆. And once you take a sip... the blissful taste spreads in your mouth... so delicious that you wish 2024 would never end 🤭 lol This is a stable ...... delicious 😋. I mean, I don't think there has ever been a Jikin that I didn't like.... All joking aside, the clean taste of Jikin is consistent regardless of the rice or the brewing method...and the aftertaste is unobstructed, which makes me fall in love with it😍. And 2024 is just around the corner! Happy New Year to all Sake-no-wa users: ❗️ I don't think so..., Have a good sake 🍶‼️🤭 lol I'll be a drinker next year too 😛.

Today! I opened a bottle of "Retro Zero Nama Sake" from my favorite brand SENKYO, one of the 3 Edo-style brands. When you open the bottle... you can feel the lemon-like acidity of ❗️ which is what SENKOKU is all about 😆. As you take a sip, the flavor spreads through your mouth just like the flavor from the aroma ✨and you can feel the slight piquancy of the raw sake 🥰... but what's the point? The aftertaste is so pleasant that it can be used as a stand-alone drink........ I feel like this is what lemon flavored natural water🍋 is like ❗️ (like ◯HASU lemon lol). I'm curious about Senkou because its flavor tends to increase as it changes on the second and third days... I wonder if it will last until tomorrow😅. Well, well...I am afraid of this. ❗️ I originally liked Sentori, but you made the right decision to switch to the raw brewing method with the Edo-style sake ✨. I will continue to support you👍 I just realized that tomorrow is New Year's Eve: ❗️ I wonder what I'll open tomorrow to close it out 🤭. Day 2 report: 🗒️ More flavor 🤩! Yesterday, the first day, it was so good that I almost drank it all... but now it's even better ⤴️ and it's on another level of deliciousness 😍.

Kanemitsu Shuzo, the brewer of my favorite brand, Kamo Kanehide, also brews a brand with an alcohol-sweetened name "Sakurafuki". I usually don't like to drink alky sake, but when I went to a direct sales place yesterday to buy something for a friend, I accidentally bought it because of its cheap price 🤭 (less than 1,200 yen for 720ml). I drank it last year, but I had forgotten how it tasted 😅. When I opened the bottle again, I didn't smell that much aroma. When I take a sip, I feel the sweetness, but it is only because it is alky. It goes in smoothly and has a clean aftertaste👍. It is a very easy to drink sake and does not disturb as a food sake 🙌. However, this one is not made with a piquancy feeling, which is Kamo Kanehide's specialty, even when hi-iring... I didn't realize how different they are even if they are from the same brewery! It was a new discovery for me 💡. The most important thing is that it's very cost-effective, which is great for drinkers 🥰.

It's early and we're almost to 2024 🧐. As long as my liver lasts? I must try to finish my drinking 🤭 lol I opened a bottle of my favorite brand, Mimuro Sugi, an unfiltered, unpasteurized, unpasteurized sake 🍶. The aroma immediately reveals the unique piquancy of nama-shu😱I knew I could expect a lot from this and as I take a sip... the piquancy that runs through my mouth at that moment... is overtaken by the ✨sizzling sensation. The aftertaste is refreshing and I think the best way to describe it is as an adult rumney juice 🍹😆. And after drinking one glass, I realized... it was a bit of an oriole 🤭. Which means...mix it! That's all I have to say 😁. The stirring and mixing gives it a deeper flavor that fills your mouth: ☺️ This is...delicious...but the image I have of Mimuro cedar is a little bit more beautiful, so this is a totally different flavor! If anything...it's closer to Takachiyo: ⁉️ Well, well...I'm expecting the 2nd day 🥰. See the picture for the difference between the supernatant and after stirring👍 Day 2: ❗️ Most sakes, you can hardly feel the pizzazz on the second day... but maybe because it was stronger from the first day, you can still feel it quite a bit on the second day 😆. And the flavor is up⤴️ on the first day and on the second day too😅

I'm not at home tonight...I'm reporting from outside for the last day of work 😁. In the days when sake was mainly light and dry, Jyushidai was a fantastic brand that created a new era by creating a completely different taste with its delicious and fruity flavor ✨. Nowadays, it is extremely difficult to obtain it privately... (except for resale products) 😢. It is a great pleasure to be able to enjoy such a Jyushidai at the end of the year 🥰. The aroma, aftertaste, and sharpness...what a perfect balance 😰. The fruity flavor is also combined to create a delicious taste that is hard to stop. I haven't had it in over a decade...I can't put it into words. ......by Kazumasa Oda🎶 Even my friend who is not that into sake yet raved about it 🤭 lol! Well, that's what I was aiming for...and I was right on target 😁. I wonder when I can drink next time 😅

Merry Christmas 🎄🎅. The 2nd Stage ‼️🤭 The luxury of having our favorite brand ❗️ two days in a row✨Today is Infinity♾️ from Jiran! It's a beer yeast 🍺 brewed sake called Kijoshu... a sake produced by a brewing process that is way out of the norm for sake 😁. When you open the bottle, you can smell the ginjo aroma ✨. It smells like a normal sweet sake, but once you take a sip, the sweetness spreads in your mouth and it's addictive 🥰. And...it doesn't leave a lingering aftertaste, nor does it leave a sticky feeling that only sweet sake can 🤩...🤩. This....is so hard to stop 😅. Someone please stop me 🤭 lol The collaboration of the taste of beer 🍺 and sake 🍶...of course it's delicious 😋. It is a noble sake, so if you are looking for a different and stronger taste than usual, please visit ❗️ This is a different dimension. Best match for sure 😁. It's a sweet sake, so I think it would be good to drink it with an after-dinner dessert 🍰❗️ Obviously, if you want to pair it with anything, it's for before/after dinner or dessert 🍨. It's not a food wine 😰.

Merry Christmas🎄Eve🤶✨ Well, today, the law of the weekday is of course to return the degree ❗️ (although I've lost track of it lately 😰 lol) And... my favorite brand 🤩 Kamo Kanehide 😆. I don't have to tell you that it is exactly for Christmas... the look is very exciting: ⬆️ But when I see these green and red colors...I can't help but think of a Jedi Master 🆚 Dark Lord 🌌 composition 🤭. Let me preface this by saying...first, the top clear glass without mixing! When you open the bottle, the aroma is not that strong and the freshness of the Kamogane is added with a good piquancy 😁. Smooth mouthfeel and sweetness make it very easy to drink👍 I feel a little bitterness in the aftertaste, but it doesn't disturb me and I can expect a change of taste tomorrow. ❗️ Next is the second cup after mixing a little bit of oli upside down: ‼️ (see picture) I think it has more flavor than the first cup. 🙂‍↕️ I'm looking forward to the taste change... but I wonder if it will last until tomorrow 🤣 lol The second day report as I somehow had some left over 🗒️ Of course, the pichi feeling has decreased, but the flavor has moderately increased⤴️ and it's delicious 😋. But personally, I prefer the piquancy of the first day 😊.

Less than 10 days left in this year... I went to the supermarket and saw more crowds than usual, which reminds me that we are approaching the end of the year 🧐. Putting that preface aside... yesterday was my first run of the season after a year's absence ⛷️, so I took the liberty of commemorating it myself ⁉️ and putting it to sleep now... (the kicker is that I forced myself to do it 🤭) This is Tojo Yamadanishiki 🥰. Once you open the bottle... no need to comment on the ginjo aroma ✨. It's already delicious from the moment you smell it 😋. The clean flavor and taste of Yamada-Nishiki and the way it fades away in the aftertaste is consistent with Jigyon's production and I'm in love with it 😍. And...this Tojo Yamada is very fresh 🎶. If I were to compare it to a song 🎧, I'd say it's a fade out... 😁. The good thing about Jikin is that you can drink it after the second day with little change from the first day 🆗. The impression I had when I drank it for the first time more than 10 years ago is still alive and well 🥺. I'll keep it in the fridge for the next year end and new year ✨I'll report on it often 🤭.

It's because it's cold season... heated sake 🍶 tastes so good 😁. I've never really cared for its flavor more than cold sake until now, to be honest 😅. Until I came across this sake last year: ‼️ So... this sake is more specialized for warmed sake than my favorite brand Kamo Kanehide 🤤. Reunited after a year ...so before heating it up, I'm going to try it at "room temperature", which is the recommended way to drink it 😋. When you open the bottle... it has a soft aroma of Omachi even though it's a junmai sake... and as you take a sip, it has a gentle sweetness... and then it disappears with a nice spiciness ✨. Oh, no? I don't remember it being this good... lol It's bad even before it's heated up 😰. I can't stop because I feel like I won't be able to stop......❗️ Now it's time to get down to business... heating up the sake. The temperature is from lukewarm to human skin warming.......it's full of concentrated flavor! The fluffy, Omachi-specific umami spreads in the mouth... it's almost faintingly delicious ✨. I drank it by itself this time... but of course it tastes great as a food sake as well. It would also be great to warm it up a bit and enjoy the changes in flavor as it cools down👍. If you want to try heating sake, this is a must-try 🤭.

Only a little more than two weeks to go until the New Year's holiday... 😰. Then, I must make sure to finish my drinking ⁉️ so that I don't have any left over 🤭.... But that's not important... My favorite brand, Hiran 🤩! Happy Newborn✨I opened the bottle 🤤and immediately after opening it...it has a ginjo aroma like a fruit wine 🍎...and I was convinced before drinking it👍this is the aroma of a delicious sake 😋 lol! The first sip of the supernatant ❗️ does not disappoint the unique piquancy of nama-shu... The sweetness and umami are both too exquisite 👏. And the aftertaste is wonderfully sharp, with no bitterness......😌 I wonder how in the world such a drink could be created and I wish I could deliver this deliciousness to someone 🤩. But it makes me sad that the market share of alcoholic beverages is on a steady decline...sake even more so 😢. To all Sake-no-wa readers, if you haven't tried Tobiran, I highly recommend it 👍. I'm looking forward to seeing what kind of changes will happen tomorrow 😊. Oh, I forgot to mention... On the second day, the sweetness and umami were more intense. ⬆️ I'm here.... I'm not sure if it's the first day or the second day, but it's still very good.

This time of the year, many sake breweries release new sake one after another, which puts a lot of pressure on the fridge 😅I'm sure... everyone who uses Sake-no-wa a lot is in the same situation 😰 lol. So! I have to open the space in my fridge to buy the next one 🤭. But that preamble aside... Tonight is the first time! Takashi no Tsukasa😁. When you open the bottle... a hint of ginjo aroma✨. One sip and you'll be in bliss 😆. The apple-like sweetness and umami that you feel the moment you drink it... The flavor spreads softly and has a nice lingering taste 😌 that doesn't disturb you. No bitterness, just a nice finish that doesn't interfere with the taste ✨. This is... delicious 😋. I'm curious about the taste on the second day: ❗️ Speaking of Aichi Prefecture, I don't have to tell you... brewer Kuheiji is popular, but I prefer this one by Ko no Tsukasa 😍. Day 2 😁. A little more alcohol, but also more umami 👍⤴️ I think it has a bit of bitterness in the aftertaste. I think I prefer the first day 😊.

Last time, I somehow found a bottle of Toyo Bijin's raw sake at a certain convenience store 🏪...they have limited editions too 😁. And then I realized it was in my house 🤭 lol I'm sure you're wrong about the apple juice 🍹...it's really ‼️ Families with minors should be careful 😓. Fresh and sweet? I mean, juicy ...... I can't even describe it anymore😅. Less alcohol, sweet and easy to drink. Hmmm...wouldn't this...be a buzz if it was in convenience stores 🏪 all over the country? LOL! I even think 😆. If you see it, buy it ✨. But still... why convenience stores have this 😅

The weekend after a hard day's work is the time to open the bottle! Tonight is the first time! Wakanami Draft 🍶! Sweet fruit aroma when you open the bottle ✨. When you take a sip, the piquancy of the raw sake is not that strong... the sweetness is just right and delicious 😋. And the aftertaste is also very sharp with little bitterness🙆. I can't stop when it's this cosy 🤭. It's more for before or after dinner, but it would be a good pairing for lighter dishes👍. Now...I'm looking forward to tomorrow's taste change: ‼️ Day 2: 🗒️ The aroma is almost the same... but the booziness and alcoholiness has become unnecessarily strong😅. Delicious but... personally I prefer the first day😊. But I guess it's easier to drink than the second day of Wind Forest🌳🤔.

Just when you thought it was finally getting colder... we're already halfway through December💦. Well, I haven't finished drinking yet, so I'm opening more and more ❗️🤭 Tonight 🎑 is Mansaku no Hana🌸. When you open the bottle, the fruity taste is just right and the first sip is refreshing 👍. It has a slightly bitter aftertaste, but it has a nice sharpness ✨It could be a good mid-meal drink 😁. But...I personally don't think I'm going to get into it 😢. However, I think the depth of sake can be found after the second day ❗️, so I have high expectations for tomorrow. I think I like it better on the second day 😍. I think I like it better on the second day😍. However... it's good but not my favorite flavor... 😢. Hmmm... Sake is very deep💦.

Today's second bottle: ❗️ From our favorite "Hiran"...an extra edition in collaboration with Tani Izumi is on tap 🍶! When I opened the bottle, the aroma was more sake-like than "Hiran"-like 😆. The taste also has the acidity and lightness of Hiran... with the addition of a sake-like, food-like flavor. The spiciness is also noticeable and completely different from the Jikin I was drinking earlier 💦. Personally, I don't think I'd be into it 😭. In a way, I feel like each sake brewery could have brought out their own individuality if they didn't collaborate... The light and easy-drinking wine taste produced by Hiran 🍸 and the robust dry taste produced by Taniizumi... 🍶. I like both of them, but they are different in their own way and fight with each other... I feel like they have a subtle position in the market 😢... However, sake is also about enjoying the changes...so I'm looking forward to a different taste tomorrow ✨. Today of yesterday! So...I drank it and for a second I got a lemon 🍋 taste like Senkou...but I still didn't like the taste 💦. So I went with heated sake 😆. I think I still like this one better 😍.

Congratulations on the registration of "Traditional Sake Brewing" as Intangible Cultural Heritage🎊. No way! With such a happy news...I'm sure you know what sake to open when my daughter's birthday 🎉 coincides with our family news 🤭 lol Well, today is Thursday...and we opened a bottle of Jikin 🍶, the perfect sake for such a happy day 😁! When we opened the bottle...a popping sound and a fruity ginjo aroma wafted in immediately, even though it was fired-in 🤤. And then a sip... a hint of piquancy, sweetness, and umami without any cloying taste... and an aftertaste that goes away as if nothing happened ✨. I also feel a slight bitterness, but it never seems to get in the way... I can only say one word: "Delicious 😋" ❗️ I was originally going to compare the luxurious Yoshikawa Yamadanishiki and Tojo Yamadanishiki for the New Year's holiday... but I think it's okay to open it today.... My only concern is that more and more of these delicious sake will be known and consumed overseas and the domestic distribution will decrease, become unavailable, or increase in price 😭.... It's been a while since I've had a Jikin, but I'm sure it will be in the Hall of Fame for me personally 😆. ps. Looking forward to tomorrow's taste change✨! Day 2 of Jikin 🤤. No major taste changes, just consistent goodness✨. This is what I call a recovery magic heel 🥰.
