My first Kamikawa Taisetsu ❄️ The other day, I got this Hokkaido brand 🍶 at Haneda Airport✈️ on a weekday... but I opened the bottle 😅. When I opened the bottle, I felt the fruity aroma, but when I took a sip, I got the impression that the spiciness and umami are in harmony. ❗️ It has a refreshing sharpness and is almost like a food sake. ✨There may be some bitterness. It's a taste that can be used with everything from sashimi 🐟 to light meat 🍖. I think the flavor will change more when it is heated up 😁. It's getting colder so tomorrow I'll try the second day's flavor change + heated sake 😍. Day 2ooooooooo! ...and I got home late from working overtime so this is a cold sake only report 😅. The sweet and sourness has been emphasized, but the spiciness and bitterness are also slightly up: ⤴️ This feeling might have been more suitable for heating up yesterday 💧.

Unfortunately... the Kuheiji was not my favorite... not quite enough for me😅. I opened a bottle of Oragami (raw sake) 🍶.... Atago no matsu... as you all know, is a brewery by the name of Shinzawa Brewery whose motto is "the ultimate food sake" ✨. This is an orikarami sake... so the top clear liquid has settled, so we had to try the top clear liquid first: ❗️ I was hoping for the piquancy of the raw sake 🍶 but... no piquancy! But that's just the way it is... when you drink it, mmmmooooooooo sweetness and umami balance... delicious 😋. And after mixing the next ❗️ bottle up and down...the second cup! ...the flavor of the rice increases.... Hii, I've already... enjoyed it from day one 😁. I guess tomorrow will be even more delicious ⁉️ 🤤! Well...since it tastes this good on its own, it's the perfect sake for the upcoming nabe season 🍶. I can't wait to see which brand of heated sake we get 😊. Day 2 is a stable...‼️ lol No need to comment at this point, right? Because... it's delicious 😋. I don't know how to comment on the contrary 😅 Well...! All I can say is... you can't go wrong with buying "Atago no mats" ❗️

Good evening, Jay & Nobby 🎑. When in doubt about what to drink during a meal, this is the sake to choose! I personally think Atago no matsu and Hakurakusei✨ are the best 😁I can't get enough of the flavor and sharpness that doesn't interfere with the food 😊. Hakurakusei looks delicious heated 😌.

I've had a bit of a cold since yesterday... disinfected with beer 🍺 and shochu 😷 and revived ❗️ lol And the usual weekend opening: ‼️🤭 brewer kuheiji's omachi✨. When you open the bottle, the aroma is strong and fruity 🍎 Ginjo aroma 😁. When I took a sip... it was a harmony of sweetness, umami, and a touch of bitterness 🧐. It's a little bit unique taste. ...Most breweries don't have that much bitterness when you drink it, but this one has it from the first sip💦. Before drinking it, I thought it would be like an aperitif...but this bitterness could be good with strong flavored meat dishes 🍖. It's delicious... but personally I don't think it's subtle😅. For a food sake, I would go for Hakurakusei or Hokusetsu by far. And Tasake: ❗️ That said! I'm looking forward to the changes on day 2👍. Day 2 ✨ Well, now for the fun part...day 2. Sweetness, umami... and even the bitterness is up: ⤴️ I still don't think I like it that much 😭 But overall, I think it tastes better on the second day ❓

I found myself at the Kamo Kinshu Weekend ❗️🤭. I also opened the Aizan ❤️. This is Aizan, a limited edition sake brewed in early spring, stored and released from the brewery. It is brewed with Aizan, the diamond of sake rice🌾💎🤤. Compared to the direct-sale-only draft sake mentioned earlier, it has less pizzazz, but that's Kamo Kanehide for you! Even though it's fire-aged...it's still there! For some reason, it has a piquancy ✨. The aroma is more subdued here, but the sweetness and umami in the first sip is stronger 😌. I'm sorry I can't convey it in words alone 😭 but! ...it's delicious 😋 because by the time you realize it, the rest of the sake is gone... lol ps. I'll report on the hot sake soon as the weather is turning chilly 😆. Day 2 report: 🗒️ Oh, no! Is it because it's fire-roasted? I wonder if it's because it's hi-iri...the raw one from the direct sale shop lost its piquancy, but this one still has a little piquancy even though it's the second day 😍. Of course, the sweetness and umami has increased, which is good 😌.

I knew it was the weekend...sake 🍶😍! Well! Today is my favorite sake brewery 🤩! Kamo Kanehide is by far my favorite direct-sale-only sake 🍶...! What a surprise! I went to buy it as soon as I heard on ℹ️ that for the first time this year, they are releasing 120 limited bottles of Nama Sake 🤭 lol! Unlike the hi-iru sake that I always buy on repeat, it has a stronger fruity aroma when you open the bottle ✨. I thought the sweetness was not as strong as the aroma and the piquancy was stronger than the hi-iri 😁...but...I got the impression that it was slightly more ⁉️ But...it tastes like...when should I stop drinking it 😅. It's going to be empty before you know it, so cork it and go to the fridge before you get drunk‼︎ No doubt it will taste even better tomorrow, this pattern: ☺️ I wish it was more well-known, but I also wish I couldn't buy it anymore... I'm conflicted about that too... 💦 lol I highly recommend this brand as a Hiroshima sake to all "Sake-no-wa" users 👌. ps, just my personal opinion, but I like it better than Niimasa 🥰. 2nd day! The pithy feeling has gone...but the sweetness and umami is up⤴️ like 100% apple juice 🍹 with a refreshing taste and a sense of sake 🍶. Soothing and delicious 😋.

Hi Jay & Nobby 😆 If you like your sake with a bit of pizzazz, you'll love this one: ❗️ Although we are in the same city of Higashi-Hiroshima, our sake is brewed with "medium-hard" water, not the soft water used by the breweries around Saijo, one of the three most famous brewing areas in Japan😍.

Faint ginjo aroma✨ A sip will leave you with just the right amount of spiciness and sharpness 🥰. This is a food sake, but it has a delicious flavor that doesn't interfere with the ingredients 😌. I rarely drink outside, but this one was delicious 🥰. The disadvantage of drinking it in a restaurant is that you can't taste the flavor immediately after opening the bottle... and you can't tell how it changes the next day or later 😭. The sake I got this time was a bottle and there were only a few bottles left, so there is a high possibility that the taste has changed since the bottle was opened 💧... 💧. And, well, it's impossible for me to drink it in a restaurant... but I have an inquisitive mind as a sake lover 🤭 lol

Hokkaido Sake! I've been curious about Asahiyama Zoo's 🐱 limited edition sake 🍶 for a while now. I was able to buy it at Haneda ✈️ and opened the bottle 😁. But.......it's the sake 🍶. Aroma, flavor, aftertaste, sharpness.......................................... It is the sake 🍶. To be honest, I don't have high expectations for this kind of souvenir sake... but it's a pity that they are all the same (´; omega; `). It's just my personal opinion, but I thought it would be nice if it had some more characteristics... 😞. The design is cute...but as a person who loves to drink, it's a shame 😅.

Opening on Saturday will be... Mimuro Cedar ❗️ Dioavita ✨, which won the Gold 🥇 at this year's Sake Compe in The aroma is subdued, and when you take a sip... it has a hint of a raw sake-like piquancy 🥰 Mmmm... why does it taste like this when it's fired ⁉️ and... of course it's delicious 😋! I can't find any negative elements in it, after all it's a Gold Award 🥇 winner 😅. It has a fruity taste, but it can be used before, after, or during dinner 😌. The aftertaste is also refreshing with no bitterness... If you pay 2,000 yen for this, you get your money's worth... 😨. With the high cost of living and the weak yen, it's a blessing to be able to enjoy this flavor at such a reasonable price. ❗️😍

Weekend opening series! LOL 😆 Kijo-zake from our recommended brewery "Hiran" 🍶Reborn❗️ This is a Kijoshu that uses sake instead of brewing water in the last step of the 3-stage brewing process to prepare the sake. The price is a little higher due to the time and effort involved... but the sweetness is much more ⤴️ enhanced, which is the standard for kijoshu❗️ But let's not get ahead of ourselves... when you open the bottle, you can smell the subtle aroma of fruit 😁. Take a sip... and the sweetness and umami of the citrus 🍊 spreads in your mouth at that moment ✨. The sweetness is so pronounced that you forget it's sake (kijoshu) 👌. If you drink it blindfolded, there's a big chance you'll mistake it for a cocktail 😅. No bitterness or dullness in the aftertaste, just a penetrating deliciousness.... This is one of my favorite Jiran, and if you find it, it's a "buy ❗️" 🥰. ps. It's good before, after or just by itself...and most of all for those who love sweetness😍‼️ Day 2 👀👀... ...this is too good😍! The flavor and sweetness is even better⤴️ and... if you start drinking it, it's the last thing you want to do✨ It's so soothing that if I could fly in the air in the flesh, I'd feel like this ⁉️.... Oh no... this is the healing water 😌.

On my way back from a business trip to Tokyo on Saturday and Sunday, I stopped by the Hokkaido Antenna Shop at Haneda ✈️ and found this sake 🍶. When I opened the bottle, the aroma was not strong and not very sake-like... but when I poured it into a glass, it was like a wine! Pour it into a glass and it's like wine 🥂. The sip is low in alcohol content and has a very drinkable acidity 🥰. It is more like a sour than a sake ❓! It will be gone in no time instead of beer 💦... I went out to Tokyo, but I didn't expect to buy Hokkaido sake... ❗️ I was curious about Hokkaido sake because it's hard to find it in my hometown 😅. I'll be reporting more often 🤭🤭 lol

New Akabu sake on tap 🍶. The aroma is subdued, but the flavor is very tasty when you take a sip 😆. The label says "gas remaining", but the piquancy is quite restrained 😌. But the clean taste and sharp aftertaste are as expected from Akabu 👍This is delicious 😋. Less piquancy + beautiful taste = Akabu 🥰. If you drink it with food... not too strong taste might be nonsense❓ I think it would go great with light meals like sushi or seafood 😃. Looking forward to tomorrow's flavor change ✨ Day 2 report: 🗒️ Aroma is a little stronger now 😁. The piquancy is gone, but the sweetness, umami and fruity taste is up⬆️👌I think you can understand more about the taste of the sake if you compare the first day and the second day 😍. If you usually drink it all in one day, I highly recommend you to try the taste change ‼️ However, there are some breweries that are stable and don't have much taste change...so you're on your own 😅 lol

Kaze no Mori🌳 is a signature sake 🍶, and this is Akitsuho657❗️ The first two digits represent the rice polishing ratio 🌾 and the last digit is the Association Yeast No.😃. I prefer the Omachi I had the other day, which has a more robust umami, sweetness and acidity, but still has that freshness that is typical of Kaze no Mori 👌. However, the aroma is not too much, the taste is not too much, and the aftertaste is a bit bitter... it's well-balanced overall, but I personally think it's a bit short 😅. It's possible that I've had too much to drink and my taste buds have become discerning... lol😆. It's more of a food wine, so you might be able to substitute it for beer 🥰.

Of all the sake breweries in Saijo, Kamerei Brewery is the only one that I personally like. This is a sake that is only distributed to local liquor stores. When you open the bottle, you'll find a nice fruity aroma 🍎. It has a nice fruity aroma when you open the bottle 🍎, a bit of the "nama-shu" (freshness), but the sweetness is not that strong, so it's more for a mid-meal drink. Kamerei is a brewery that originally specializes in brewing dry middle-class sake, so the fizzy feeling is great for easy drinking 😀. Considering the price of 890 yen/500ml, I wish it didn't have to be local only 😌....

I didn't drink enough, so +1! So... open one cup 😁. But I didn't really notice the aroma... But when you take a sip, it's very rich and mellow... Well, it's not for everyone, but if you like the fruity and easy-drinking flavors of today, you may not like it... 😰. It's a perfect food sake and can be served with strong dishes, but... it's more for those who want to get drunk after a few drinks 🥴. It's a bit like the Takezuru Junmai in the prefecture...but it might be better if it's heated up 💧. I prefer the one-cup "Honorary Ikezuki" that I drank in the summer. It still had a distinct umami and was less mellow, so I think it's for everyone 😌.

From my favorite brand, Hiran...this time "Kagura"! When I opened the bottle, the aroma was not so strong, so I wondered how it would taste. And it has a sharpness that doesn't interfere with the aftertaste ✨. It's like a shooting star 😁. I can imagine how different it would be if it were raw and not fire-roasted 😆. Well, well, well......................................‼️ I really like this sake brewery, which I've started to enjoy this year 😍. I hope the young toji, Mr. Mori, will continue to brew delicious sake 🍶🥰. Just my personal opinion, but I like it much better than the Shinmasa Viridian I had yesterday 😏. If you've never had Hiran, I recommend it: 🙆‍♂️ Day 2 report: 🗒️ Aroma: Moderate, no change. Taste is clean and slightly more fruity: ⤴️ The sharpness remains the same...I'm afraid 🙇.

To wipe out last week's regrets... weekend openings 🍶. Well, Niimasa is a brand known by those who love Sake 😁. The sake is brewed in a traditional sake brewery that uses wooden vats for all of their sake ✨. Former journalist Mr. Sato is the head brewer, and he got his start at a lecture given by Mr. Tatsuya Ishikawa, the president of the Japan Sake Brewers Toji Association👍 (from a lecture at this year's Sake University). The brewery's commitment to the idea that every sake brewed is a "work of art" can be felt everywhere, from the bottle to the labels. Leaving the trivia aside, the aroma of this sake is not that strong...with a hint of fruitiness. It is not as acidic as white wine🍾 or as punchy as sake🍶...it tastes like this if you add two together 😄. It tastes like this when added together and divided by two 😄. It is sure to be popular with both wine lovers and sake lovers 👌The sharpness is also very pleasant 😆. If only... it were easy to find 😰.

Weekend garden BBQ🍖with sake🍶. No way...5th bottle😅 I forgot I even opened the bottle and realized it just now 😓. I'm sorry I couldn't report on the first day's deliciousness because my memory is not what it used to be 🙇. So I'll get back on track and report on the second day even though it was a weekday. 🗒️ Yes, even though it's the second day... it's a very bright, shiny, and very smooth drink 😍. It's a BBQ sake that goes great with meat and other dishes....more shwashy than the Takachiyo 👍.

This one has the piquancy that only unfiltered unpasteurized sake can have and it's so good you can drink it in gulps 😆. If you usually prefer beer 🍺, I can assure you that you will be addicted to it👍. Hiragana Takachiyo is a delicious sake that you can't go wrong with 😁. If I didn't know what sake to buy at the liquor store, I would definitely buy one...that's what "Takachiyo" is 😍! ps. I am not a salesman by any means 🤭.

Weekend garden BBQ🍖with sake🍶. Second bottle of ❗️ Senkou's Akatombo🍂. The second bottle we chose a different type of Sake with a different taste, SENKYO 😆. This one has a lemon🍋feeling that reminds me of white wine🍾, which is completely different from Jikin. It's so easy to drink and delicious 😋. It's also delicious when drunk smoothly 😋! You can also enjoy the change in flavor with the passage of time 👍. This one was also moderately popular ✨. If you are looking for a white wine type sake, I recommend Sentori 😆.
