The sake is made by Takagaki Shuzo, who is known for "Ryujinmaru". Ryujinmaru was featured in the "Moyashimon" manga, and it was a brand that gained a great deal of attention, but because the master brewer of the brewery died when he was young, it was once a "rare brew". Now, the wife of the previous master brewer has taken over the brewery's business, and Ryujinmaru has been revived. This "Satohana" was brewed to commemorate Mrs. Toji's appointment as Toji. There is a strong aroma of rice. The mouthfeel is soft. The sweetness is moderate, but there is a hint of sweetness and acidity. It is 18% alcohol by volume, but the alcohol content is not that strong and it is relatively easy to drink. It was delicious with depth of flavor. It tasted different from the drinks I've been drinking lately, but it's also good. This is why sake is so interesting.

I bought a new product from Aizu-Miyaizumi. It's a junmai ginjo brewed with "Fukunoka," a newly developed rice suitable for sake brewing in Fukushima Prefecture. This is the second time for me to drink a sake with Fukunoka, following "Kaito Otokoyama". The aroma is reserved but fresh. It's light on the palate. It has a sweet and sour taste, but it is subdued, and I got the impression that it was relatively dry. It is light but has a good flavor. The bitterness in the aftertaste is characteristic and crisp. It seemed dry when I opened it, but after the second and third days, it became sweeter and more gorgeous and tasty as time went by. Fukunoka is characterized by the impression that it has a light and tasty taste. The dry aftertaste is also characteristic, and I think I'm starting to understand the characteristics of this second type.

I had a chance to try some of the new Sentry nigorizake. When we think of Senzou nigorizake, we have a strong image of the snowman that comes out in winter, but this is an organic nature nigorizake, made in a super ancient way, with a kamenoo, principle principle principle, wood vat, and no added yeast. The aroma is like a pear. It has a strong sense of sourness and rice flavor, which is typical of Sentry. It also has a white grape flavor and a silky taste. The supernumerary part is dry and not too sweet, but when the cage is mixed with it, the sweetness comes out. It is a sake made in the traditional way, but it has a new taste. It is a sake that embodies the philosophy of "old and new creation" that Senju stands for. I have a lot of expectations for this sake.

During the holidays. We were drinking at my friend's house and I brought this sake with me. When I drank Mimurosugi recently, I was shocked at how easy it was to drink, so I thought I'd give my friend a taste of it too. The one I drank this time was Dio Abita. It's a 13 degree unfiltered sake. I was pretty drunk, but it comes in surprisingly smooth. Ginjo scent like rum. Softness in the mouth. Juicy like a pear. Beautiful acidity in the finish. It was such a great drink that it made me think that there really is a God in it.

During the holidays. Drinking at home again with another friend. A souvenir of my friend who went to Mie Prefecture on a business trip. I didn't know it was made by Moriki Sake Brewery, known for "Rumiko's Sake". It seems that this sake was released to commemorate the inauguration of Toji Toyomoto Rie. Slightly dry, but you can feel the sharp acidity and rice flavor. It's even better when it's warmed up. It was nice to have a drink that you don't see here.

This is my friend's third bottle of home drinking. I brought it in with the cargo tag sake. This is definitely a good drink. Everyone raved about how delicious it was from the first sip. It's a little dry, but you can feel the strong flavor of the rice. I can't get enough of it, even though I've been drinking it for a while now, and the drink goes on and on. Couldn't they drink it forever? I thought. LOL. It's a long-selling product, as expected, perfected. It's delicious no matter how many times you drink it.

This is the second bottle of my friend's house drinking. My friend brought out this "Fukukomachi Daiginjo" which he said was a gift from him. It looks like it was made with Akita Komachi sake rice. My friend doesn't usually drink sake, so I brought in a bottle of Kamoshiki Katsudashi sake for her to enjoy it. This time, I bought a yellow narcissus, the fire-roasted type. It is characterized by a faint gas and sweetness. At 13% alcohol by volume, it is light, yet has the fullness of Omachi rice. This fine balance is as good as it gets. In no time at all, the quart bottle was empty. This choice was a no brainer.

I've heard the name "Wakanami" a lot lately, but this is my first time drinking it. Wakanami Shuzo, located in Okawa City, Fukuoka Prefecture, is a hot brewery led by the sister of a master brewer and the brother of the managing director. The brewery's concept of "Pushing waves of taste, pulling waves of aftertaste" is a good one. This time, we tried a standard junmai sake. Sweet banana-like aroma. It is soft on the palate and very easy to drink. It is sweet, delicious and sour like a wave. The aftertaste is like a citrus fruit, the sourness and bitterness come into play. The taste recedes like a wave. This is a surprisingly good concept for a sake. It has the fullness of rice that is typical of a pure rice sake, but it also has a nice crisp finish. It was a delicious sake.

I happened to see this at a convenience store, so I bought it and drank it. I was a little curious about "The Shot" because some people have been drinking it here recently. It's a lightly gorified product that was released in March of this year. The aroma is more gorgeous than I imagined. It is light on the palate and enters the mouth with no resistance. It has a characteristic fruity sweetness, but the bitterness that comes afterwards gives it a refreshing, clean finish. The alcohol content is also low (13-14 degrees), and it's not too sticky or sweet, so it's easy to drink. I regretted that I should have bought another bottle. It was refreshing and delicious. As expected of one of Japan's leading breweries, I was impressed with their high level of technology.

I drank the "Kaze no Mori 807 Aiyama 807 Shinnagari". It seems that "807" means that it is made with 80% polished rice and No.7 yeast. It is said that the "midstream gathering" is the part of the sake that drips down without pressure from the squeezer. I knew it was going to be delicious at the point of Kaze no Mori, Aisan, and Manchu-gathering! LOL! The aroma is rich and full of muscat flavor. As expected, there is a burst of gas that is typical of the Kaze no Mori forest. Afterwards, the mouth is filled with fruity sweetness and concentrated flavor reminiscent of pears. The second half of the wine is slightly more complex. I think the description on the label, "a flavor with a three-dimensional feel", fits it perfectly. On the second and third days after opening the bottle, the aftertaste is a little more bitter. It has a richness of aroma, gasiness, juiciness, softness, clarity, complexity, etc. It was delicious, of course, but it was very difficult to describe the flavor. By the way, the Kaze no Mori has no surprises. It's wonderful.

This is the 6th edition of "DATE SEVEN", a collaborative effort by 7 famous breweries in Miyagi Prefecture. This year's edition is titled "EPISODE Ⅵ", and it's the 6th edition, and it will be presented by Kanbae Shuzo, known for its "Miyakanbae" brand. It's a Junmai Daiginjo sake that's been polished to 29% Sasanishiki, led by 3. 7/7. The ban was lifted, but I opened this drink a little late to the party. The red jar-like bottle gives a luxurious feel. Gorgeous, clean ginjo aroma reminiscent of melon. The taste is very clean and clear, partly due to the fact that it's polished to 29%. The sweetness is moderate and sour. There is a bitterness in the aftertaste and a nice crispness. Slightly alcoholic and rewarding to drink; as the second and third days go by, the first day The alcoholic sensation I felt at the beginning of this drink has faded and it's become much easier to drink. As the deep red bottle shows, it was a gorgeous and beautiful sake. I hope they will continue to promote the brewing of sake in Miyagi Prefecture, not to be outdone by Akita's NEXT5 and Yamagata's Mitsuo Yamakawa. I hope you have a go. I bought the new standard "Shin Tschida" from the beloved pervert brewery, Tsuchida Shuzo. This time again, it's made from 90% pure rice, 90% polishing ratio, edible rice, no additives. I'm not sure about the name, but the brewer isn't particularly a fan of Evangelion. They don't have it. LOL. The color is completely yellowish. It has a sweet, melon-like aroma. It has a very strong acidity from the beginning. Maybe it's because we cooled it down, but there's a sharp taste. In addition, there is a lactic acidity peculiar to the sake brewing method. It's a strange taste that makes us strongly aware of the natural fermentation. We can't sense anything artificial at all. I'm amazed that it doesn't have a hint of bitterness even though it's 90% polished. It may not be a favorite, but I like it. It's even better when it's at room temperature. This time I bought a 4.5 liter bottle and a 1.5 liter bottle. The brewer recommends storing it at room temperature for a long time, so I will enjoy the change in flavor over time for the sake of the sake bottle. I'd like to keep it for about a year. We can't wait to see how it tastes.

I found out about this sake at Sake-no-Wa and have been curious about it for a long time. This time, I drank Ohmine3grain Natsu Junkasumi Nama Shochu Yamadanishiki. Ohmine has one grain of Junmai Daiginjo, two grains of Junmai Ginjo, and three grains of Junmaishu. It has a polishing ratio of 58%, so it is generally considered to be a Junmai Ginjo, but Mr. Omine's 2 grains are 48%. % and one grain is like 38%. The first thing that catches your eye is the stylish bottle. The brewery is also very stylish. As you can see from the photo, it's hard to believe that they make sake. It is cloudy and white because it is a raw oriental fruit. It is characterized by its piquant freshness and sweet and sour taste like a peach. I'd like to drink it chilled in the hot summer season. Also, as Kai from Salmon Lab says on YouTube, it has a "calcium feel" to it. I can see that. It looks like you're using mineral-rich brewed water. I had a preconceived notion that this was a stylish sake, but it was delicious. And yet, the brewery gives me hope that they will do something new in the future! It is. I'm looking forward to seeing more of them in the future.

At a work-related drinking party. This time, I went to a restaurant in Masuge Town that serves food and drinks that mainly use Hokkaido's specialties. We drank "Hokusui", the main brand of "Kunimeki" from Kunimeki Shuzo, Japan's northernmost brewery. It's a full-flavored sake with an alcohol content of more than 19 degrees and less than 20 degrees. It was recommended that I drink it on the rocks, so I decided to try it on the rocks. It's easy to drink with plenty of ice. Personally, I thought it was too light, so I tried drinking it with less ice, but it was too rich and easy to drink. The flavor of the wine came out as a "good" taste, yet it was easy to drink and just the right amount of salt. There was a bit of brewed alcohol flavor, but I didn't mind it too much. As recommended, it was a delicious drink to drink on the rocks. This was my first time drinking this drink and it was delicious. There are many different kinds of drinks, but there are also many ways to drink them.

Recently, I've been enjoying all the delicious drinks from Fukushima Prefecture. This time, I tried the popular Hirotogawa Special Junmai. Matsuzaki Shuzo, the brewer of Hirotogawa, used to be a small brewery, but after a young master brewer took over the business, they started making new sake in Japan. This is a strong brewery that keeps winning gold medals at appreciation events. This special junmai is a standard sake of Hirotogawa. The nose has hints of melon and banana. The mouthfeel is very soft. There's a fruity sweetness to the wine, but the flavor and acidity that supports the sweetness seem to create a framework for the wine. I thought it was a very well-balanced sake. The structure and balance is similar to that of the Collage in the same prefecture. The sweetness is less intense than the Collage. It's delicious on its own, but I think it's also quite good as a food sipper. Also, I think it tastes great in any temperature range. It's a versatile drink that can be adapted to a variety of occasions.

I was looking at an online shop and happened to see that the Katsukoma was in stock, so I ordered it! It was. It is a brand known to be difficult to obtain. I am not a person who feels the special value of being difficult to obtain, but I think it is a good idea to drink this brand once as a sake lover. It was the kind of sake I wanted to have. Daiginjo, Junmai-Ginjo, and Junmaishu were in stock, but there was only one per person, so Junmaishu I chose the first one. The label says it's a Junmaishu, but it has 50% polishing ratio, so it's the equivalent of a Junmai Daiginjo. It has a slightly yellowish appearance. It has a characteristic melon-like aroma. In the mouth, it is not too sweet and the flavor of the rice is softly spread. The flavor in the mouth is long lasting and slowly fades away. It's not flashy, but it's delicate and gentle. It's better to drink it at room temperature than when it's chilled. You can feel it is made with great care. It is not the current trend of mellow and fruity sake, but a gentle and elegant sake. . I hope that the overpriced resale on the internet will disappear and continue to be quietly loved locally.

I drank Nanyo Brewing's "Aan no Sato Junmai Sake". Nanyo Brewing is famous for their "Hanayosu", but I've heard that this "Aino-Sato" is different from the flamboyant and fruity Hanayosu in that it's more suitable for an evening drink. The indigo label is simple and tasteful. It has a distinctly yellow color in appearance. The aroma is faintly reminiscent of green apples. The mouthfeel is very mild, with a hint of rice flavor and a slight apple taste. The rice flavor comes out more clearly as it rolls on the tongue. There is a bitterness in the aftertaste and a clean, spicy taste. It's best to drink it at room temperature to lukewarm. As I heard before I drank it, it was a solid evening drink that was completely different from the glamorous Hanayosu. The more I drank it, the better I felt it was. I thought it was a solid and tasty sake, a different vector from the Hanayōbō and a different drink.

I drank "Yukino Kayasha Yamahai Junmai". It is also available in supermarkets, and it is relatively easy to obtain. I have the impression that it is easy. Fruity aroma. Soft on the palate. On the palate, the wine is acidic, but also sweet and delicious. It is fruity and clean like a melon. It has a very good balance of flavors and a high degree of perfection. Even after a certain period of time after opening the bottle, the balance of flavors does not deteriorate and it can be enjoyed. It was. It has the essence of Yamahai but without the peculiarities that are usually found in Yamahai. I recommend this sake to the first time drinkers of Yamahai. It's easy to buy, and it's a good sake.

The quality of the wine is clean and mild. It is not flashy, but it tastes good. I can drink it all the time without worrying about it. I envy the people of Fukushima Prefecture who can drink it on a regular basis.
