I've heard the name "Wakanami" a lot lately, but this is my first time drinking it.
Wakanami Shuzo, located in Okawa City, Fukuoka Prefecture, is a hot brewery led by the sister of a master brewer and the brother of the managing director. The brewery's concept of "Pushing waves of taste, pulling waves of aftertaste" is a good one. This time, we tried a standard junmai sake.
Sweet banana-like aroma.
It is soft on the palate and very easy to drink. It is sweet, delicious and sour like a wave. The aftertaste is like a citrus fruit, the sourness and bitterness come into play. The taste recedes like a wave.
This is a surprisingly good concept for a sake.
It has the fullness of rice that is typical of a pure rice sake, but it also has a nice crisp finish. It was a delicious sake.
